- avial is a very popular vegetable side dish made with coconut gravy and curd. It is healthy and nutritious too.It goes well with all rice dishes.
Ingredients
Mixed Vegetables (ash gourd, pumpkin, carrot,drumstick,beans,yam,banana,potato) 3 cups
grated coconut 1/2 cup
Green chillies 2
Sour curd 1/2 cup
salt
Jeera 1 tsp
turmeric powder a pinch
Coconut oil 2 Tbsp
Mustard seeds 1/2 Tsp

Amma kerala style avial is dry..no gravy. We put coconut oil but no seasoning. Don't know about other parts of kerala. Avial is a main item of traditional kerala sadya. Festivals or marriages avial will be there with variety of vegetables. Other than curd, Raw mango or tomato can also be used. Thank you amma

Normally no seasoning required some add hing also during seasoning.For thick gravy no water is added while grinding in mixture.U can adjust the consistency of gravy by adding thick curd

Instead of curd you can add imli water. It is .ade like that in my home. People from Trivandrum nagercoil belt use tamarind

again one of my favourites & so healthy & colourful...you are right avial has many variations. .In kerala & tamilnadu..will list a few from my mom's (Trichur) recipe..raw banana skin is retained only scraped off slightly..The Long String Beans (with little maroon tinged ends that cook firmly without hecoming too mushy) is used ,not French Beans..., they have special flavour & I remember picking them out to eat first from the avial..also these are added like you said after the other hardy vegetables are almost cooked to avoid over cooking & to retain green colour .The coconut mix is ground with curd..no water is added..cumin, curry leaves, green chilli is added while grinding .. one or two madras or small onion is added crushed to the veg mix...more curd can be added to get appropriate sourness as you showed after cooking is done...no potato is used & the consistency is semi solid gravy ..The beans & banana varieties differ from what is got in kerala...This is my mom's traditional family Avial recipe.. loved .your recipe too..excellent Kerala Avial (mix veg) recipe as the ingredients can easily be got everywhere ..you have made me very hungry just watching this video. .:)..unfortunately where I live yam, pumpkins, raw banana even small onions very essential for Avial is not available :)..so Thank you for the video ..will have to do with that for now. .Happy & Safe Journey !

That was perfect Thrissur Style avial .. @ Gita : And to add .. we do not temper the avial with mustard seeds rather we just add a tablespoon of coconut oil and few curry leaves and close it with a lid immediately so that the flavour of oil and curry leaves gets infused with the avial .. We generally add the hard vegetables like yam, drum stick, banana, potato etc first followed by the softer vegetables like white pumpkin, beans etc. So that harder vegetables cook well
