- Aviyal is a dish that is a favorite for most people. For this Aviyal, we can add up to 9 different vegetables. here we used 7 different vegetables.
I have made this dish in three stages which are cooking the vegetables, Making the coconut base, and then final mixing. We added the carrot and beans for maintaining the color appearance of the dish. And the special ingredient Cashewnuts will improve the creamy consistency.

Here are the ingredients for the Aviyal
Carrot - 1 cup
Beans - 1 cup
Drumstick - 1 cup
Yellow pumpkin - 1 cup
White pumpkin - 1 cup
Elephant foot yam - 1 cup
Raw banana - 1 cup
Cashew nuts - 5 nos
Coconut - 1 cup
Groundnut oil - 1 1/2 tsp
Cumin seeds - 1 tbsp
Green chilli - 2 nos
Coconut oil - 1 tbsp
Asafoetida - 2 pinches
Curd - 100 ml
Curry leaves - a string
Salt As required

When you strain the water from the vegetables,all the vitamins are gone!
That’s vegetable broth , add it for veg soups, or rasam or finally you add for semisolid gravies

Today i have prepared avial as per your instructions. Superb with good taste. Tq. Usually we dont drain the water from cooked vegs but as per your advise i did. And curd into thick buttermilk.

Your receipes are good. When I make Aviyal when serving I will add thick curds because in summer the curds will become sour. I will do this dish for parties and if it's left over inspite of keeping in fridge it becomes sour. SO adding curds when serving is tastier. From Australia

அய்யா நான் சேலம் உணவகத்தில் 40 வருடங்களுக்கு முன் சாப்பிட்ட அவியல் போல இன்று 25.8.23 உமது vedio - வில்தான் பார்த்தேன். அவியல் செய்முறை தெரியாமல் நீண்டகாலம் அது என்ன வகை உணவு என்றே தெரியாமல் இருந்துவிட்டு.. சிலரை கேட்டு, தெரிந்து செய்தேன். ஆனால் உங்கள் செய்முறை ரெம்ப பிடித்திருந்தது. ரெம்ப நன்றி. மேலும் அடிக்கடி உங்கள் செய்முறையை நான் விரும்பி பார்ப்பேன்.
