- My rich and comforting Mushroom Bolognese recipe has silky handmade pappardelle pasta, tons of flavor and just hits the spot on a cold frosty day! It simmers away for a while and fills your house with the most amazing smell. You can make it as a vegetarian dish or with crumbled bacon but either way everyone will love it! I love making homamade pasta for this but it's really just as delicious with whataver pasta you love. This recipe just so happens to be from the Winter chapter of my book so if you have a copy, crack it open and bake along with me!

I made this today and it was excellent. I didn’t have Pappardelle so I cooked some lasagna noodles cooked them and sliced them into long noodles! This dish is so rich and flavorful! I plan on freezing the rest ( not sure how that will work because of the wine ). Have been following you for awhile, and this recipe has encouraged me to buy your cookbook. Thanks!!

Hey John! WOW, I LOVE a Bolognese sauce, and I LOVE mushrooms, so this one is extra appealing to me!!! Another good reason to scrape out the gills from a Portobelloois that they turn every thing quite brown, which it=s not always appealing. Thank you!.

Hello John! If you have a grapefruit spoon, try that for removing the gills. Works so much better than a regular spoon. 😊

I prefer pasta cooked in unsalted water; I've done it that way for 30-40 years, ever since my then-husband had high blood pressure.
It's such happy moment to watch you cook, bake, chop, and being annoyed(clandestinely) . I tried your fab peanut butter cookies, this Bolognese could be my next one. BTW, never know what to do with Portobello mushrooms, I do now. And I adore your layer cakes, you make them so "pas grand chose" ! Guess, Martha is no longer my go-to for a good recipe. Cheers.

tip I learned from a Italian cook she uses a tube of tomato paste it less waste if using 1 or 2 tbs if using the amount you did can is great. I don't use tomato paste to often sow tube is perfect.

Is there a way to make pasta without a food processor, stand mixer. Or pasta machine? It's ok if it's thicker noodles. I can't get to the store right now but I have flour and a few eggs left
You can knead the same ingredients by hand and roll it out with a rolling pin. It will just take a bit of work as you need to knead it till the dough is smooth

To the lady who observed how easy it is to waste tomato paste -- put the leftover in a tiny freezer container if you can't find a tube.
