I made this today and it was excellent. I didn’t have Pappardelle so I cooked some lasagna noodles cooked them and sliced them into long noodles! This dish is so rich and flavorful! I plan on freezing the rest ( not sure how that will work because of the wine ). Have been following you for awhile, and this recipe has encouraged me to buy your cookbook. Thanks!!

tip I learned from a Italian cook she uses a tube of tomato paste it less waste if using 1 or 2 tbs if using the amount you did can is great. I don't use tomato paste to often sow tube is perfect.

The products used n this video shows glass bowls and I looked at those. Was surprised how inexpensive they were, will need to get some. Then I looked at the signature oval dutch oven. But the one it showed was round, not oval. And other items shown anywhere from 4.5 qt to 15.5 quarts. I saw 7.25, and 8 quart. Round and oval. Some with grill pan lids and double handles on those lids. So many...
John -- Could you substitute pancetta for the bacon? I just tried the recipe for the first time and it's delicious! Curious, however, about the pancetta idea. Thanks.
What you should do instead is use the sofrito: celery, carrot, and onion. Celery plays an important part. No garlic, because garlic is not in the bolognese.
