  • This amazing Street Corn Soup is my take Elote, or mexican street corn. It's a flavor packed and easy to make dish that's prfect for the end of summer when corn is fresh and sweet. Charred corn is the star of this dish, and yes you sould definitely load up on ALL your favorite toppings.     I’ve been watching your videos since I was really young and every time I make your recipes, they come out AMAZING!!! You are honestly the only cook I watch consecutively lol so thank you for that!When your book first came out I originally asked for it for Christmas, but then I got impatient and bought it myself😂 literally the best idea ever because every time I have to make something I open your book first and all of the recipes in it are top notch. Definitely recommend your book to everyone!

    I use an upside down Bundt pan to remove the corn from the cob. I put the top of the ear in the center hole of the pan. That keeps it in place and makes slicing off the kernels much easier and safer.

    I was a school nurse in a high school in a community with a large Mexican population. The kids would make Mexican street corn as fund raiser quite often and I loved it! I so wish I could make this, but corn on the cob really isn’t a thing here. Much love from SW France.

    Oh, that looks soooo yummy! The cilantro looks pretty, but I’m a “soap taster.” I’d never heard the appellation before. Makes me seem very special. 🧼 There’s a trick for corn online. You cook the corn cob, husk and all, in the microwave. After cooking, you cut off the stem end then squeeze the cob from the silk end. The cob slides out clean, no silk, but it does taste more earthy. My husband has been making snacks for himself nearly every day. As long as corn is in season here in Wisconsin, he’ll gobble it up. 🌽

    Hi John, I will absolutely try this recipe from your amazing cookbook! All of your recipes turn out so delicious! Another trick when cutting the corn off of the cob, is to use a Bundt pan. It works like a charm. Sending much love from Canada.

    Ahhhhh the benefits of being able to drive 15 minutes & have legit elote fresco across the border in Mexico or 5 minutes to get it from a local street vender. Yum. Yum. Yum.

    I've wanted to try Street Corn ever since I first heard about it! Unfortunately, central Illinois is not a very good place to look for it, even though we have corn fields EVERYWHERE. Your recipe, on the other hand, looks very doable and I'd like to give it a try. Thanks for doing the main work of developing a recipe! By the way, I was very interested to hear that you had people in different parts of the country testing your recipes during development. Fascinating to hear about the process!

    Omg that looks amazing. I am going online to buy your book and I have made my own version of this recipe at home. I live on the border in Yuma, Arizona. Mexican street corn is a staple here. I only have one comment and it’s not a criticism because you don’t live where I do, but Hispanics do not pronounce the letter “J“ like Americans do so if you want to be authentic when you’re talking about Tajin, pronounce the J like an H! “Taheen “. FYI, I love your channel and I have tried many of your recipes. The Greek spanakopita is amazing! Btw for the haters out there, I am married to a Mexican, born in Mexico, and I’m not being critical. I’m just trying to let you know how to pronounce it properly. Lol. Also, I was raised in the south, so I can cook some fried chicken, I came from a family of excellent cooks. But I married a Mexican man and have been lucky enough to learn how to make the most delicious Mexican food from the best cook ever, my mother-in-law. Kudos to you for this recipe. It looks extremely authentic and I can’t wait to try it.

    Mmmmmm.... elote en una sopa!!! Delicioso! Gracias... dude... I could seriously smell that through the video lol. I don't know how they do it but here in AZ we have nearby elote, paletas, chichirones, raspado, and all other Mexican treat street carts! Nothing like my old barrio in Los Angeles though lol. Always need crema and cotija though lol.

    Do you HAVE to serve this soup chilled/cold? I personally don't like cold soups (though I wouldn't necessarily be opposed to trying this of course), so can you serve it warm/hot instead?

    If you really want flavorful soup, char that corn on your BBQ with charcoal as the heat source. The best!

      I recreated a Mexican Street Corn flatbread that I had at a restaurant and simply cut high quality, full fat sour cream with a bit of half and half to make the "crema". With everything else going on, corn, onions, queso fresco, cilantro and salsa, the type of cream didn't really matter all much. Was super delicious and would likely be equally so here. And your sour cream idea would likely also work with the buttermilk.
