I use an upside down Bundt pan to remove the corn from the cob. I put the top of the ear in the center hole of the pan. That keeps it in place and makes slicing off the kernels much easier and safer.
I made this soup last night and had it for lunch today, it was AMAZING! The whole fam loved it! I also recently got a copy of your book and all the recipes have been great! Thanks John for all the best recipes 😀

I was a school nurse in a high school in a community with a large Mexican population. The kids would make Mexican street corn as fund raiser quite often and I loved it! I so wish I could make this, but corn on the cob really isn’t a thing here. Much love from SW France.
Oh, that looks soooo yummy! The cilantro looks pretty, but I’m a “soap taster.” I’d never heard the appellation before. Makes me seem very special. 🧼 There’s a trick for corn online. You cook the corn cob, husk and all, in the microwave. After cooking, you cut off the stem end then squeeze the cob from the silk end. The cob slides out clean, no silk, but it does taste more earthy. My husband has been making snacks for himself nearly every day. As long as corn is in season here in Wisconsin, he’ll gobble it up. 🌽

I only have one comment and it’s not a criticism because you don’t live where I do, but Hispanics do not pronounce the letter “J“ like Americans do so if you want to be authentic when you’re talking about Tajin, pronounce the J like an H! “Taheen “. FYI, I love your channel and I have tried many of your recipes. The Greek spanakopita is amazing! Btw for the haters out there, I am married to a Mexican, born in Mexico, and I’m not being critical. I’m just trying to let you know how to pronounce it properly. Lol. Also, I was raised in the south, so I can cook some fried chicken, I came from a family of excellent cooks. But I married a Mexican man and have been lucky enough to learn how to make the most delicious Mexican food from the best cook ever, my mother-in-law. Kudos to you for this recipe. I've wanted to try Street Corn ever since I first heard about it! Unfortunately, central Illinois is not a very good place to look for it, even though we have corn fields EVERYWHERE. Your recipe, on the other hand, looks very doable and I'd like to give it a try. Thanks for doing the main work of developing a recipe! I don't know how they do it but here in AZ we have nearby elote, paletas, chichirones, raspado, and all other Mexican treat street carts! Nothing like my old barrio in Los Angeles though lol. Always need crema and cotija though lol.

We grill corn with a little oil, it's very amazing 👍🏾👍🏾👍🏾👍🏾And the work of the soup is excellent 👍🏾👍🏾👍🏾
