As a Mexican I'm so proud to see a good recipe of our cuisine. Chilaquiles is a humble but delicious dish. Thank you for sharing
It’s a classic comfort food!
This recipe is it the same than yours in your country ?
@@marieline23 like John said chilaquiles vary greatly mainly because of the sauce. Red, green, black, etc etc etc but I can assure you this recipe is right on point. Looks really good! (Im mexican btw)
@@marieline23 is not But here in mexico chilaquiles most all the time are green(green tomate whit serrano chilli or red tomate whit serrano) know we have a lot of variety of sauces with different chili peppers and this recipe could be an option for a sauce here know they sell tortilla chips for chilaquiles here in mexico chips for chilaquiles are important too like him we eat whit egg o meat or cesina to bee honest it is not usual to put avocado a lot of fresh cream, chease (queso fresco) and onion
Thissss💗
1:19 Ancho Chiles are spicy . Guajillos are best. You don’t have to chop the onion it will be blended you can cut it into quarter size pieces.
3:49 don’t add salt instead add chicken bouillon for more flavor
8:44 Crema oaxaqueña is THE best with chilaquiles but if you can’t find it just use daisy but whip it with some salt to thin it out
John did an amazing job I just thought I would share some of the tips that I tell all my non Hispanic friends when they ask me how to make them.
I think the chiles are based on region because my friends from Central Mexico always use ancho chiles. They also never add chicken bouillon but that might just be because we don’t eat meat
My family mixes both guajillo and ancho. They each have a different flavor so the mix tastes amazeballs.
I’d say ancho is more smoky than it is spicy 🤔🤔🤔 but also I’m crazy and it takes a lot of heat to make me think something is actually spicy 🤭
I use a mix of new Mexico, japones, arbol, and piquin...... also never used chicken bullion in the sauce either. Make extra to later use in a guisado or salsa for tacos. Yumm
Agree. Also don't have to boil them just fry them for a couple of seconds and then soak them in hot water to hydrate after blending everything you can fry the sauce again.
Chilaquiles is one of a few dishes I could eat every day and not get tired of it. Thanks for the recipe. Would love to see the green ones also.
It's not one of John's recipes of course, but one of The Moosewood cookbooks has a delicious green chilaquiles recipe in it. You might be able to find it online. (I lost most of my cookbooks in one of my many moves, or I would give you the recipe myself.) It's very good with your favorite salsa! P.s. it's a casserole, unlike the one John made.
Hello 👋🏼 funny fact!
When I was pregnant 🤰🏼 of my 2nd child.
I could NOT eat enough Chilaquiles 🤭
My husband and my daughter would say…
“Chilaquiles again for dinner?” 😂
I loved that authentic ingredients were used !!! And the fact that tortilla chips were made fresh This awesome! Thank you for this!!
Chilaquiles are the best thing to eat on a Saturday morning with some coffee and beans ❤❤ I love seeing such a special dish on your channel!
Heck yeah😎
Im from asia and I'd love me some great Mexican food but there aren't many Mexican restaurants where I live so thanks for these simple yet delicious recipes i can try making at home! Also ur very lovely and fun to watch ❤️
Two of my favorites, Brian Lagerstrom and John Kanell, release their Chilaquiles recipies on the same day! Both look similar and delicious.
Not uber traditional, but I love a good carne asada on top of Chilaquiles.
Seems more than a bit suspicious that they both got published on the same day.
I was thinking the same thing, weird that they both released on the same day
@@MichaelAlthauser why are you all so paranoid?
@@MichaelAlthauser … or simply coincidental.
@@homerfan2323 Chilaquiles are popular enough that this might be a coincidence (it more than likely is).
I have to say thank you for not messing up one of the top Mexican recipes. That was authentic and right on point. I won’t mention any names but someone that’s famous and has talk show and cooks in her show and also makes dog food (Rachel Ray) claim to do the best “pozole” recipe. Yeaaah… noooo that look like chili or some nacho topping with Fritos on top. Lord have mercy on her for ruining and making people believe that was real Pozole. Anyways, thank you for keeping it real. 😂❤
She also destroys Asian food. 🤦♀
I had never heard of this dish before. Since we love Mexican food I gave it a try. OMG so simple but so different and tasty! I topped ours with black beans cooked in cumin and smoked paprika, queso fresco, super thin red onion slices, and crema (sour cream with zest and juice of one lime and one garlic clove.)
Definitely adding this in as a regular meal!! Thank you for sharing your childhood memories and your mom's method.
I am Mexican i love Chilaquiles its just the best breakfast ! Super cool that you made it. With guajillo !!!!
Hii, I’m mexican and if you want to give it a twist to the salsa you can add some peanuts and it gives a really creamy and tasty flavor. It’s a classic the chile de árbol y cacahuate (peanut) salsa
Thank you for your lovely recipe... delicious, simple and actually Mexican.
This is by far the most beautiful and festive way to prepare and present chilaquiles, a dish that brings back fond memories of my parents’ kid version: 1/2-inch cut squares, cut from strips of corn tortillas, tossed in a scrambled egg, chihuahua cheese and tomatillo-chile verde sauce. Needless to say, I very much look forward to your next inspiration with organic touches from your garden. Happy Easter!
Very respectful to the culture :)
Love the Mexican recipes,It’s so special to me to learn them from my favorite chef! I’m also mixed with Mexican and I love the food and culture :)
I love this recipe! A man after my own Mexican heart for this cuisine! Thank you! 😊
Oh boy I love chilaquiles! When the kids were young, pre-divorce, we often went on vacation in Mexico and my favorite was always chilaquiles for breakfast❤
My half sister just immigrated from mexico and I was able to make this recipe for our first ever meeting in person thank you for helping me connect with my family your amazing
The extra guajillo cooking liquid that didn't make it into the sauce is still probably really flavorful. I bet if you tossed it into the next pot of rice you made it would add a nice background smoky, spicy flavor.
100 percent!!!
Yum! 😋
I love that idea!
That’s a sunny side up egg over easy means it’s been flipped. I prefer sunny side up or poached lots of runny yolk is a must. I enjoy Preppy’s videos they’re authentic and accessible.
I love this recipe! I normally make a hack version of this dish that may not be authentic, but I find to be really tasty. I buy Mexican corn tortillas from Food 4 Less that have a similar texture to home fried ones and I buy some Mexican chorizo that I cook down with scrambled eggs, shredded Mexican cheese and tossed together with the tortilla chips.
I’m not saying your recipe is not authentic but maybe it’s called something else? Adding scrambled eggs and chorizo would make it a very hearty breakfast. I’ve had burritos with scrambled eggs, chorizo, potatoes, refried beans… add some sliced avocado and some fresh salsa…. Delicious!
I know how to make chilaquiles, but I watch it anyway because it’s Preppy Kitchen ◡̈
¡Wow! This is amazing. I'm mexican and I love John's chilaquiles. Thank you so much for your wonderful recipe.
Thnk you!!!! 🇲🇽❤️

I wish there was a "I love it" button because John you make my meals. ❤
In Mexico City I had breakfast at this place called Chilakillers and got the chilaquiles verde con cecina, the large size: best breakfast ever!
Yummy! My Ama makes chilaquiles (Mostly verde) every Sunday with all the trimmings. We never tire of having them 😊
I love chilaquiles! Every region has their own version. John, this is how chilaquiles are made in Guanajuato y Michoacán! All versions are delicious! Im from Mexico City and you can find green chilaquiles in every restaurant or “fondita” Thank you so much for sharing this recipe. ❤ saludos from Raleigh, NC.
Love seeing this on your channel. This is a fave brunch dish in my house. ❤
Thank you for sharing! I've come to love chilaquiles since I first stayed in Mexico years ago.
Que rico se me ase agua la saliva! 🤤 Omg I can have them for bkfst lunch dinner . Oh how I wish I can go through my phone screen . This is very authentic recipe. Saludos cordiales John from Zacatecas Mexico 🇲🇽

Thank you so much!!
Yes, oh my gosh these look delicious! 🤤😋 Definitely will be making this once it becomes warmer outside. I have been giving myself a break from cooking during the winter months(plus I was lazy). Seeing your videos gets me wanting to cook again. Thank you! 🤗😉💗🍽️
I have never had chiliques. They look yummy. I will have to try the recipe sometime.
You're ging to love them! Happy baking!
Can I buy your cookbook at Barnes and Noble!
Adoro suas receitas e também a sua risada. O senhor é tão divertido. Saudações do Brasil 🇧🇷!!!🎉
This is a wonderful recipe. I’m going to make it for my family as soon as possible.
I have never had this dish before, but now I'm very excited to try it 😋
Much ❤️ Annie
Add a little cumin and Mexican oregano to the sauce take it to another level 😊 your chilaquiles look really good
Oh yeah, cumin and Mexican oregano would amp that flavor profile up. My Tia use to put cumin in her Mexican rice and Chicken Mole. It was chef kiss delicious. Wish I knew just how much she used but at least I have the memories 😋...
We always just used canned enchilada sauce lol. But in our house we used salsa verde for enchiladas, chilaquiles, everything.
Love your content! Making some chilaquiles this weekend!!
I’m Mexican, I approve this recipe
I'm a giraffe, I also approve of this recipe.
Working on these chilaquiles for the second time!!! They're delicious and my Mexican husband loves them!
I love chilaquiles as well! I always do them the lazy way with pre-made tortilla chips and either Pato sauce or leftover little cups of salsa from getting Mexican takeout. However, this looks so danged delicious, I may need to go out and get some guajillos and do it from scratch.
THat's so funny because I LOVE Pato sauce! It's really a great hack.
I used el Pato sauce for chilaquiles too, is good but homemade sauce is always better 😊
Making some this weekend! Chilaquiles are my favorite breakfast of all time, though I might mix in some ancho chiles for a bit of heat and swap the salt for consomé de pollo (chicken bouillon) 😉 Thank you! 🇲🇽
I'm making this for my spanish class, we have a restaurant unit for our spanish II class so this helped especially since i have to make it for 40 people 😭😭
Whoa look at you making chilaquiles !! Looks so good , my favorite Mexican sour cream is Crema Oaxaca , one of the best 🙌🏻 and yes for the tortillas it’s better to fry them up yourself 🤗😋
Looks Delicious I love Chilaquiles
My husband loves Mexican food, Im going to make him these today 👍
Perfect after a hangover 😅
Love everything you do!
As a Mexican I would just add more sauce to the chilaquiles so It doesn’t taste dry other than that it looks amazing!!
Ugh.... This looks sooooo goooood. Make my mouth water!!🤤😋I love chilaquiles. These look so authentic and ARE and good!!!👍
Zabardut recipe 👍👍👍👍
thanks!
John, I love this recipe! Thank you! 😋🤗
Awesome
I was curious about this recipe. Let me tell you that you did great. 🇲🇽❤️
Great recipe as always !!!! as a Mexican I love chilaquiles since I was a little girl, I’m going to try this one’s with guajillo salsa looks delicious
Thank you for the recipe. I had chilaquiles just once, many years ago, but I think it was served with scrambled eggs? Loved them!
Here I am, a Mexican, trying to find out if crema is the same thing as sour cream because I want to try other recipes from this channel but I have 0 idea of what sour cream is xD (apparently they're not) anyways amazing chilaquiles they look sooo delicious I might try out this way
Ooo very nice recipie John! I love mexican recipies! I love the Spanich language! Have a nice day and good weekend! 👍👏🍴
Thank you! You too!
@@PreppyKitchen Thanks John! 🤩🤩🤩
😮 looks delicious 😋 ❤ I'm going to have to make this! Thank you for sharing this!
I have actually never tried chilaquiles, they look so good here though.
abuela used to make this but verde, she would make my tio Salvador roast them when we had a fire going, so good. descansa en paz abuela
This look like how my step mom used to make. I never learned the recipe, I’m definitely making these.
great job John, love your channel. Next try GREEN chilaquiles with pulled chicken on them...
too much grease ... just pop the cut tortillas into the a hot 200oC oven sprinkled with salt for 20 min ...
That looks delicious!
Hi John, I decided to use wet tea towel and foil round my cake tin today. I should have tried it months ago it made my cake so flat. I may invest in cake strips soon ❤
OMG I LOVE Chilaquiles❣️
Thank you 😊 for sharing this DELICIOUS 😋 Mexican recipe and you are correct! Chilaquiles are all about the topics 😍 You did an EXCELLENT job 🤩
I’m hungry. ❤😮
I grew up with tomatillo and dry chillis sauce.
Now I’m more into the green sauce chilaquiles.
I had never seen these but definitely trying them out
Tostadas with eggs and red chili sauce. Fork hole chips before putting in oil to reduce bubbles.
Chilaquiles are my absolute breakfast fav! Amazing job!😻
Yum…chilaquiles, eggs and beans for breakfast…meal of champions
Wonderful
This looks amazing ! Chilaquiles secret ingredient is epazote . Try it next time :)
Amazing 🤩
❤❤❤
I need to make that .
Good chilaquiles over all, aren’t crispy. They’re soggy but firm. Thus, thick cut tortilla chips are a must. And definitely not as dry as these. They’re saucy. This sauce is way too rich. Needs to be thinned out a little.
Here in Mexico people don’t make tortilla chips at home, since store bought are inexpensive and at least just as good, if not better.
Other than that, this was a pretty good gringo adaptation.
The wire rack, baking sheet and paper towel contraption is pretty funny, though.
Yes, John Kanell. I’m still a big fan of yours. So well done, ol’ chap! 🥰
Approved by all the abuelitas and mamás of Mexico.
Learn that Rachael Ray!!
Thank you 👍👍👍👍👍👍👍
You are the Best of the Best .
Wow !! que Rico se ve .
You and Brian Lagerstrom had the same idea today 😁
I love my chilaquiles crunchy.
Great recipe 😊
Whoever’s been doing the editing is amazing. I love the cheesy video effects like the snow, the crowd cheering, I think there was smoke in another one lol.
I like to heat off the salsa in a separate saucepan to pour it over the chips although I like how he mixed it off the heat as some people thick you need to simmer the chips in the salsa which just makes a soggy mess.
Never heard of that cheese I want to try some
Good job! Going international 😊
Great dish. You're awesome
Fans of avocado!!! lol Love it!!! Thank-you!
WOW !!!!!!!! YUMMY
Hay no. Ya quiero unos chilaquiles. Se ven deliciosos. El huevo es esencial.
Good Job!
Love chilaquiles with guajillo!
