Pressure Canning Sweet Potato Pie Filling From Scratch

  • Hello and welcome to Old Ways Gardening and Prepping. ❤️🍀 Would like to welcome you out to the shed of many names for a video that takes me a couple of days to make. It's the perfect time to can up your own sweet potato pie filling. It's time to do some Rebel canning.
    Yes I know many websites and our wonderful government reminds us about don't can sweet potato pie filling. Have been canning sweet potato pie filling for many years and I am still alive and well.
    Yes I know there will be plenty of people who are still leary of canning sweet potato pie filling that is fine and understandable. This recipe can either be pressure canned or frozen it is Your Choice and you are a adult to make these choices.
    Below you will find my recipe for a single batch. Personally I am a extreme canner and rarely do I get to make small batches. As you can tell this recipe is easily multiplied to fit your needs. The spices are also interchangeable as well if you want to add cloves please do so just do a taste test to make sure that it tastes the way you want it to spice-wise. The amount of sugar you use needs to stay the same. If you don't want to add the brown sugar use cane sugar instead.
    Single batch recipe:
    6 cups of fresh sweet potato puree
    1 cup of cane sugar
    2 cups of light brown sugar
    1 TBsp of cinnamon
    1 TBsp of dried ginger
    1 tsp Jamaican allspice
    1 TBsp of real vanilla extract
    1 pint jar or 2 cups of the mix above equals enough to make 2 regular 9" pies or one deep dish pie. If you are freezing your sweet potato pie filling measure two cups of the filling per freezer bag.
    To turn into two regular 9" pies or one deep dish pie you will need to use:
    Preheat oven to 450º
    2 eggs
    1 12oz. can of evaporated milk
    1/2 tsp. of salt
    1 TBsp of vanilla
    Mix all of your ingredients together well. Pour into a unbaked pie shell. Bake at 450º for 10 minutes. Turn oven down to 350º, and continue baking for an additional 35 minutes. Depending on your oven it might need to bake a little longer. Bake till done. Remove from oven and let them cool before serving.

    First, THANK YOU for sharing this recipe and approach! I've been looking for a recipe/video/tutorial on canning sweet potato puree for awhile and finally found yours and it looks wonderful! I also agree that the Govt has no place in my kitchen. Second, I was wondering if you had suggestions on canning straight puree without all the spices? I'd like to can up a mess of sweet potatoes for use in other recipes, but haven't found any. Thoughts? And thank you again - God Bless!

      Good morning and happy that you enjoyed the video. Yes ma'am I am trying to get caught up on things around here. Almost halfway there. Had to slow down some to clean up and fix a few things after those storms rolled through here. Unfortunately when the top of the canopy blew off a lid to one of my storage containers came partially off and a lot of my seed stock got soaked. So have been working on trying to save as many seeds as I can before they ruin. Have lost a lot of seeds, but hopefully will be able to rebuild them back up this coming growing season. Yes was blessed to get those sweet potatoes and would have loved to have gotten more of them. 😉 Take care and have a blessed day. ❤️🍀

      @@OldWaysGardeningandPrepping lessons learned hard stay with you. Save you some peanut butter or mayonnaise jars and store your seed packets in them with a screw on lid. You can fit a lot of envelopes in a jar. My mother once lost a whole season of collected seed when a water pipe sprung a leak. She started putting her seeds in a jar after that. 😉

    I'm glad I found you, I was looking for some info about canning sweet potato pie. I was wondering how many eggs and how much butter to add when you get ready to make the pie from the canned filling. Looking forward to making and canning sweet potato pie filling.       Good afternoon Sue and sorry for the lateness of this response. Hello and welcome to my channel. Can't say how many pints a single batch will make due to always making huge batches. However I do know that 1 pint jar mixed up will make 2 regular sized pies. Just make sure that the sweet potato pie filling is not too thick when you can them up.     Do you add Butter to your sweet potato pie filling? Just wondering cause your recipe sounds AWESOME but others I have read all use butter or most of them. I’m trying your recipe regardless but I was just wondering. PLEASE LET ME KNOW AND THANK YOU SO MUCH FOR THE CANNING RECIPE!!!

      Good evening Christine and happy that you enjoyed the video. Personally I don't add the butter in the mix to can up or the freezer recipe. It's already extremely creamy and if you use butter in your pie crust that would be plenty enough. In the canning process you take a bigger risk of it going bad due to the milk fat in the butter.     This was great, question can you add the salt and vanilla at the same time as the other spices or do you have to wait until you are preparing your actually pie

    I'm going to become a rebel canner again, could I use artificial sweetener or should I wait till baking time
