For those who do not have the equipment for pressure canning (like me!) or are leary of canning dry beans, another time saver is to soak them overnight, par boil them the next day and pack them in freezer bags for freezer storage. When you take them out you are way ahead time wise and can go straight to cooking. You can do a few meals worth without sacrificing too much freezer space. I do this with dry beans and dry chic peas..a real time saver.

Three years ago, I grew the dragon tongue bean you spoke of. It grew up an arch in the pathway of my garden. Only had two plants germinated. I had started 4. I later found out that 50% germination is normal.
I canned about 150 pints, I gave some away as gifts. I live in Texas, so we LOVE Tex-Mex. I still have enough I won’t need to can till next year. The garden plan I have for 2024 is for only one plant.
I kept the soil moist and added compost once a month. The vine is quite sturdy in strong winds and the bees really loved the flowers.

What efficiency! Such a rewarding hard working endeavour! I always look at my preserves thinking " There's gold in them there jars"!
    A couple hints.
    1. Perhaps use your spray feature on your tap when rinsing products? It goes much faster.
    2. When using onions/veggies/ or whole spice ingredients as enhancer: Use a gauze bag or tie the ingredients in a section of gauze and toss in pot. Easy to fish out the gauze bag, than deal with atray bits of onion etc.
We can buy the pre sewn bags called
" poultry stuffing bags".I use them in many ways, as well as cooking stuffing outside a bird.

One reason you are told to soak and par-cook is so that the beans absorb some of the liquid and plump up before canning. If you didn't soak and par-cook, the beans would absorb all the liquid in the jars and crack. It's always best to put more liquid in the jars because you will notice that even after weeks on the shelf, the beans will absorb more and more of the liquid from the jars.

In a pot (or slow cooker) you add the raw beans, a meat with bone (beef or pork are great), onion/garlic (you can leave whole), salt, and a bay leaf. The meat will fall off the bone, the beans are beautifully infused and the broth is incredivly delicious! We serve with white rice side. 'Crema', lime, and cilantro are good topping options too

Just wanted to add an FYI piece of information, Becky.
Whether you have a septic system or whether you have an in town system, never poor, boiling, hot water, straight into the sink into your pipes, always run the cold water with it because if you pour just the boiling water down, you can not only shock damage the pipes, but you also can cook any food debris, or oil and fats that are in your pipes and sewer system, and it will start to congeal and you’ll have a terrible mess in a number of years, also, it can really mess with your septic system; If you have one, so always rum, the cold water along with whatever boiling liquid you’re pouring down your kitchen sink.
From the voice of a mature female experienced cook of many decades 😉

Hey Becky. Dragon tongue beans are supposed to be amazing. But don’t overlook Rattlesnake Pole Beans which are an heirloom bean. They can be eaten very young and you can eat them like green beans, or beans and snaps, or just shelled beans when they start seeding out. They’re my favorite beans EVER. I grew up eating them from my grandmothers garden. They’re a beautiful bean. I even love to eat them young and tender as a snack-just cleaned and raw. Anyway, like I said do some research on the heirloom rattlesnake pole beans.

Hi Becky!! Whenever I cook beans I like to use my family’s recipe that’s been in the family for 4 generations now. For 2 pounds of beans I normally use red beans, we add 3-4 garlic cloves 1 small onion cut into 4 and 2 tablespoons of a good quality salt. Im from Central America, we eat beans with everything lol
When I refry them I sauté half an onion in 2 tablespoons of olive oil and add that browned onion to the blender with some of the oil blend all of that together then cook them in that some pan for 5-10 minutes, I promise you will never have better tasting refried beans then those!! I like to add a little bit of Goya seasoning too but I’m sure you have better tasting home made bouillons. Delicious my favorite beans ever! I do the same for black beans too. Let me know if you try them.

Here in Brazil we cook beans so diferently! So interesting to see the same ingredients used in such different preparations!
If you would like to try it the brazilian way, here's what we do
soak beans overnight, put them in a pressure cooker with bay leafs and smoked sausage for about 20 minutes or until soft.
in a different pan: put some kind of oil or tallow, even crisco will do, an onion, cutted in any way you want. fry that onion until almost blackened. pour the bean mixture with everything on it, add salt to taste, boil it until there is no more foam on the top.
Would love to see you taste it!
