  • Today, I made a recipe for how to enjoy dry Jyuwari Soba noodles with an explanation of how to enjoy them!
    The key is to boil and steam the noodles without touching them.
    Touching the noodles makes them break easily, so you should try to loosen them with flowing water to minimize damage to the noodles.
    By boiling the noodles while soaking them in water, I tried to make the dried noodles similar to fresh soba noodles, and by steaming, I stabilized the moisture gradient between the inside and outside of the noodles and solidified (gelatinized) them so that the original flavor of soba can be tasted.

          Ingredients (for 1 person)
    1 serving (80g) jyuwari soba (buckwheat noodles)
    Water as needed (about 2 liters in the video)
    How to make
    1. Put buckwheat noodles in a deep, wide-mouthed pot and pile them on top of each other as if you were making a firewood.
    Fill the pot with water until the buckwheat noodles are submerged in the water, and turn on the fire. 
    When the water comes to a boil, boil the soba noodles for half the time.
     *Minimize the damage to the noodles by letting them swim in the flow of the water, so please do not touch them.
    4. When the time is up, remove the scum, cover with a lid and steam for 1 minute.
    5. Scoop out the noodles and wash them under running water without touching. (about 3-4 times)
    6. Cool in ice water and serve.

    一般に蒸らしは素麺一分、蕎麦二分と言われています。勿論蕎麦の太さや形状とメーカー仕様によって若干異なりますが、一分は何故でしょうか。
