- Today we're making a spicy creamy mushroom pasta with Calabrian chili paste and Pecorino Romano cheese. This easy pasta recipe can be on your table in about 30 minutes! I hope you enjoy this spicy mushroom pasta recipe!

SPICY CREAMY MUSHROOM PASTA
INGREDIENTS
1 pound linguine
1/4 cup olive oil - divided
1 pound mushrooms - sliced
5 cloves garlic - sliced
2 teaspoons Calabrian chili paste - or more/less to taste
3 ounces tomato paste
¾ cup dry white wine
1 cup heavy cream
¼ cup packed basil leaves - hand torn
Reserve pasta water - at least 1 cup, but most likely will not need all of it
1 cup Pecorino Romano cheese
INSTRUCTIONS
1. Bring a large pot of salted water to a boil.
2. In a very large pan saute mushrooms in 2 tablespoons of olive oil over medium heat until brown, then remove and set aside. Work in batches to not crowd the pan.
3. Turn heat to medium-low, add remaining olive oil and the garlic to pan. Saute until golden (about 2 minutes). Next, add in the chili paste and tomato paste. Cook for 5 minutes in the oil.
4. Begin cooking the pasta in the boiling water to al dente.
5. Add the wine and turn heat to medium-high to cook off the alcohol and reduce for 3 minutes.
6. Turn heat down to medium-low and add in 1 ladle of pasta water and the cream. Stir it all together and taste test. Season with salt to taste.
7. Add in the Pecorino Romano cheese, mushrooms, and the al dente pasta. Cook for 30-60 seconds or until the pasta is just cooked. If the sauce is too dry add a bit of pasta water (a couple ounces at a time) to loosen it up.
8. Turn off the heat and add in half of the basil leaves. Serve on plates with the remaining basil on top and grated cheese on the side.

Try swapping out the cream to a light sour cream. I do it with a Chicken a tarragon with white pepper and pecorino cheese

I love your videos dude, the camera positioning and quality, the reasoning behind what you do in the kitchen, the outcome, getting the kids involved etc. It's criminal how fewer viewers you have compared to some other channels especially when most of your stuff is so appropriate for daily/family kitchen cooking and eating. Caramelizing the tomato paste makes a big difference! I find the canned pastes are often too dry & like to burn. So I'll usually dig the paste out of the can & mix it w/ a little olive oil, then get it in the pan.

We visited Calabria about 10 years ago. A local gave us as a gift a few fresh peppers which we brought back to Vermont and started some plants from seed.
Every fall we take a few plants inside and they overwinter, producing more fruit in the Spring. Some of these are 3 years old and still producing in a South facing window!
They are very prolific and hardy. Also deliciously hot and fruity.

I love mushrooms! Anything with mushrooms makes me happy! I agree on testing the pasta! To the tooth and unless you bite it you don't know if it's done, overdone, or raw. That is the best way to use tomato paste. It looks like a way to make a sauce, out of season, and when the pantry was thin. I love peasant dishes they are the best! And yes, many poor people had a cow so milk / cream was plentiful on a farm!
A good chest I learned is creaming in a little butter off the heat at the end if you accidentally to break it a little. Worked for me once, but cream pastas are so good. Especially the tomato based ones. Grestbon a cold day.

I had to go to Amazon UK here in England to find the chili in oil. Amazing recipe! I used linguine instead. Before adding the cream I stirred in a 2 cups of fresh deveined shrimp 🍤. Amazing flavor. Served with a fresh piece of baguette. Instant top 10 go to recipes. Thanks man. 👍🏼

Made this today and it came out fantastic. Didn’t have pecorino so used parmesan instead. Entire family loved it, including 4 year old.

Tried making this tonight. Fucked a couple things up but it was still really really good. That special hot pepper stuff gave it a wonderful heat and the Romano was essential. Just me to cook for unfortunately but leftovers help make the time and effort worthwhile. Thanks for taking the time to do these vids.

I enjoy your videos, like you I’m half Italian and I’ve been wonder about the butter and tomato sauce that you do and would like to know how do you keep the butter from burning. I’ve used olive oil and mushrooms with that sauce to keep the butter from burning. Hope to get answer.
So I recently moved to an area where I don’t have a Trader Joe’s close by but I found that Target has a similar Calabrian chili paste. It’s not exactly like TJ’s but it’s a good one in it’s stead.

You have amazing finesse. Your videos and your recipes and your presentation are phenomenal. Can you please make a video of how you might pack lunches for work for yourself or your family? I am looking for some sensible but elevated ideas. I'm looking at your videos and trying to just sneak some lean proteins like chicken breasts or perhaps just chicken thighs, rather than sausage, for a more sensible lunch. I've already been using your oven baked meatballs a ton. Could be a good video idea because everyone on youtube who is posting work-lunch ideas is certainly no where near as elevated or as mindful as you are in the kitchen. Hi @SipandFeast or anyone else. I have started to cook this recipe right now for the first time. It is my first time making it and any of your recipes. I have a good substitution question to ask you. Can I use Extra Dry Vermouth but no dry White Wine like the Sauvignon Blanc you use in your recipe. Will the Extra Dry Vermouth work as a substitution or not in this particular recipe? Please let me know as soon as possible. Thank you so very much for answering my question in advance. 😊
Yes you can sub it but it would reduce the amount by 25-50%. Dry vermouth will have an abv of about 18% versus a dry white wine at 13%. Dry vermouth tastes sweeter than dry white wines too.

May I ask you @SipandFeast another question? Will there be a significant difference in the flavor of the dish if I use a dry Chardonnay white wine 🍷 as opposed to the Sauvignon Blanc? I bought the same white wine that I think that you used (the New Zealand 🇳🇿 Sauvignon Blanc). However, I also have a bottle of Chardonnay available on hand too. Glad you enjoyed it! Amazon sells a few different brands of Calabrian paste. The one I used in this video was Bomba sauce from Trader Joe's.

Thanks! Baby Bellas would be great for sure. I normally just buy whichever mushrooms look the freshest for dishes like this. Sambal is a pretty good sub for Calabrian chili paste. I wouldn't use some of the sweeter chili pastes though.

I always wanted to make a creamy tomato sauce but I got intimidated by fancy Chef's. I am more comfortable watching you. More down to earth.
Wanted to make this, but I was out of a bunch of ingredients, so I substituted chili flakes for the chili paste, tomato sauce for the tomato paste, and cream cheese for the heavy cream. Loved it! One of the better pasta dishes I've had in a while.

can you do a creamy pesto sauce? I have been trying to figure out how to make it properly where it's nice and creamy...
So, I use Dolin Dry White Vermouth (mainly because it doesn’t go off quickly) instead of white wine (like the Sauvignon you use).
Any thoughts on whether you think that makes a difference in taste? I know vermouth is more “vegetal” tasting, but I tend to like it.
I’ve found it to work in lovely fashion, but welcome comments and thoughts.
Vermouth is great for anything that calls for dry white wine. I keep my wine in the fridge and go through it pretty quickly, but yes wine doesn't last as long as vermouth.

Not yet. Ricotta is really easy to make. I will probably make a video on it and maybe add a couple of things to do with it.

Is the Calabrean chili paste in your Amazon store? Which one is it if so? Looks like a couple of hot pepper products there.
And, any chance you can put good quality imported Parpadella there too? I cannot find it anywhere in Florida and it’s my fav pasta.
It is. I have two brands. The Cento is much spicier than the Tutto Calabria brand. I'll try to find a pappardelle to include.
