What I appreciate about your cooking and channel the most, is how you mostly cook with a Steel pan. None of that non-stick toxic bullshit like so many other “chefs”. That’s what makes you the pasta QUEEN. Thank you for the amazing recipes.
There's nothing toxic about non-stick pans. If you lived like a couple centuries earlier you would have probably bitched about steel pans as opposed to good ol' copper.
I wish i could use a steel pan. If i make rice with one half the rice ends up moulded into the pan and I can’t scrape it off. God forbid I try to fry an egg on one I can just about manage that on a non-stick

I made this beautiful mushroom sauce and added sauteed zucchini and halved grape tomatoes. Lemon slices on the side for brightness, and it turned out absolutely fabulous... I mean gorgeous!
WOW!! This recipe is next level good. I made it for my family two weeks ago and ate all of the leftover myself. 😅 And have been dreaming about it ever since. I’m currently making it again for my own Saturday breakfast. ❤😂🎉

Not that it's going to help you, but you can eyeball. This kind of dish is very forgiving if you put more or less, since it all comes to consistency (meaning, you have to reduce the liquids) and doneness (pasta al dente). Just make sure to get rid of most of the alcohol from the wine, the water from the mushrooms and you are very good to go. In the end it's just a traditional mushroom sauce with pasta.

Actually non stick have had many court cases for causing cancer. Stay away from non stick. Even in air fryers ….
