SPICY CREAMY TOMATO PASTA
INGREDIENTS:
½ pound pasta - such as penne or rigatoni
1 small onion - diced
1 cup frozen peas
½ pound baby Bella mushrooms - sliced - can substitute white button mushrooms
½ cup plus parmesan cheese
½ cup heavy cream
½ cup dry white wine
3 tablespoons olive oil
3 ounces tomato paste
¼ plus teaspoons crushed red pepper - use more to make it really spicy
1 cup reserved pasta water
¼ cup fresh basil - optional to finish
INSTRUCTIONS:
1. Saute onion over medium-low heat in olive oil until translucent (about 3-5 minutes).
2. Add mushrooms to the pan, turn heat to medium, and cook until they release their water and start to brown.
3. Add in the crushed red pepper and cook for 30 seconds. Add in the white wine and turn heat to medium-high. Cook out wine until it evaporates (about 2-3 minutes).
4. Turn heat to medium-low and add in the tomato paste. Cook for 3 minutes mixing frequently.
5. Add in a ladle of pasta water and stir. Next, add in the cream and cheese and cook until the cheese is melted.
6. Add in the al dente pasta to the sauce and cook for 1 more minute to coat the pasta well. If the sauce is too wet add a bit more cheese and stir once more. If too dry add a touch more pasta water.
7. Taste test and make final adjustments to salt and pepper. Finish with torn fresh basil leaves (optional) and serve with more grated cheese and hot red pepper flakes. Enjoy!
NOTES
- I love a lot of hot red pepper flakes in this dish but add to your liking.
- If the cream sauce is too dry add a couple tablespoons of pasta water to loosen it right up. If too wet just add a bit more grated parmesan.

Your voice, energy, way of being in this video is so relaxing and at the same time engaging. Brilliant. Keep up the good work.
Great recipe. Added a bit of garlic, as there is no pasta dish that can't be improved by adding garlic! Thanks for this, and for all the incredible videos. You have helped me fall in love with Italian cuisine.
Wine, mushrooms, parmigiano - three of my favorite things. This looks 👌🏼.
Thank you! It's hard to go wrong with these ingredients😂
Love dishes like this. Fast, easy and delicious 🤌
Made this last night for my wife and she loved it, I didn’t have fresh mushroom but rehydrated a dry mix, it came out great. Love the peas in this!
Great to hear!
One of the best recipes I've made
There is an intangible quality about your videos that make me feel like I’m with a friend in the kitchen, from the Costco recommendations to the make it your own advice. Also everything looks amazing.
Thank so much!
I've been making something similar to this (minus tomato paste but add pancetta) for years. My daughter's best friend raves about this dish to this day. Will try the tomato paste for a pink sauce but I'm still adding the pancetta because everything is better with pancetta.
Absolutely adore your recipes, keep them coming! Found your channel a few weeks ago, and have binge watched just about every single one. 😂
Thanks very much! Glad you are enjoying the recipes and I appreciate the support😀🙏
Eating this right now and yum! I substituted bunashimeji mushrooms instead of Bella as Bella shrooms are much too expensive where I live. Still works! By the way, the written recipe doesn't say when the peas should go in. I almost missed putting them in 😳 this is going on the "frequent" menu all right.
Made this tonight! So delish and easy! I love how easy it is to follow your recipes!
This has become my favorite. I like to make it with cubes of steak. Thank you for this recipe
Delicious & Fast! I love it! Thank you. ♥️👍🏼👏🏼👏🏼👏🏼

Hey John! Hope you enjoy it and would love to hear how it turned out.
I can't possibly say if this is good or not without a sample, I think all of us who watched the video should get one. LOL! Kidding. I can't wait to make this!
Haha thank you! Would love to hear how it turned out!
Hah!! This is ridiculously SIMPLE!!!
No butter, no milk, no puréed tomatoes and no chicken boullion! My goodness, I thought I was going to shop a long grocery list! 😂 👏🏻👏🏻👏🏻 God I not only Love your videos I APPRECIATE them too! Healthy, simple and flavorful! Couldn’t ask for more!! Thank You! 🍃💐
Thanks so much!
That looks delicious....and quick. Why go out to eat?
This really looks awesome-I love anything with peas! I wanted to ask about the little burners you use. How long does a can usually last-like how many meals can you cook using one can? Is your regular stove electric or gas?
The cans last about 60-90 minutes depending on heat levels. I have a 20 year old GE electric stove. At some point we will upgrade to an induction or possibly put a large propane tank in the yard and run a line.
@@SipandFeast The house we’re buying has electric, and I’m basically sick of cooking on electric. I think we’ll go the propane route as it’s rural. Thanks for answering!
Another good one, man. I bet this would be so good with some grilled lamb chops and a bottle of of red wine.
That sounds great!
What can I use in place of wine? I don’t keep it in the house.
Didn't look back into your past vids, but are those portable propane or butane stoves? Do you like them, or just use them for filming convenience? I was thinking of getting one for hurricane/SHF type situations. If you'd be so kind, please share your experience with them! Oh, yeah forgot to say I love your channel, my new fave cooking channel!
Thanks for liking the channel! They are portable butane stoves by Iwatani. I bought them on Amazon and also buy fuel there. It's definitely about convenience because it's hard to get light over my stove. But I find myself actually cooking on them even when not filming because I much prefer gas over electric.
@@SipandFeast Thanks, brother! I've been toying with getting one, they're not expensive here in Hawaii, but we can't get the fuel via shipping, only from our stores. I'm going to try based on your fabulous results! I need some of that mushroom and peas creamy pasta in my life.
Thanks! Enjoy the pasta and the stove!
Hey Jim, In Canada we have table cream, Half and Half and then Whipping cream (you can make whipped cream with it) - when you say heavy cream, so you mean whipping cream?
Yes that is it.
Good to know. Thanks!
I'm allergic to dairy and do not like the substitutes (almond milk, etc.). I would do this simply without the cream element as the flavours are already there. If it needed more liquid, I assume chicken or veg stock would do.
I think this basic sauce would also work with rice cooked in a stock.
Another awesome entry to the cookbook. Have you thought up a name for this yet?
I have not yet. It will be a while before the cookbook comes out haha. Thanks for the support!
How much peas? It is not on the ingredients list in the description.
1 cup. I just updated the info.
Why can you keep tomatoe paste in the tube longer than the can. Lol. It's odd to me. Tried the can put into air tight container and was Baad within the week but the tube three weeks now
Looking at your face and demeanor.. you could totally be my brother. lol
