Quick And Easy Creamy Pink Sauce With Two Of My Favorite Ingredients

  • This spicy creamy tomato pasta with peas and mushrooms is so good! The easy parmesan pink sauce is made with onions, mushrooms, peas, red pepper flakes, a touch of dry white wine, a bit of cream, and a healthy amount of grated parmesan cheese. This comforting creamy tomato pasta can be made in about 25 minutes making it a great recipe for during the week!

    SPICY CREAMY TOMATO PASTA
    INGREDIENTS:
    ½ pound pasta - such as penne or rigatoni
    1 small onion - diced
    1 cup frozen peas
    ½ pound baby Bella mushrooms - sliced - can substitute white button mushrooms
    ½ cup plus parmesan cheese
    ½ cup heavy cream
    ½ cup dry white wine
    3 tablespoons olive oil
    3 ounces tomato paste
    ¼ plus teaspoons crushed red pepper - use more to make it really spicy
    1 cup reserved pasta water
    ¼ cup fresh basil - optional to finish
    INSTRUCTIONS:
    1. Saute onion over medium-low heat in olive oil until translucent (about 3-5 minutes).
    2. Add mushrooms to the pan, turn heat to medium, and cook until they release their water and start to brown.
    3. Add in the crushed red pepper and cook for 30 seconds. Add in the white wine and turn heat to medium-high. Cook out wine until it evaporates (about 2-3 minutes).
    4. Turn heat to medium-low and add in the tomato paste. Cook for 3 minutes mixing frequently.
    5. Add in a ladle of pasta water and stir. Next, add in the cream and cheese and cook until the cheese is melted.
    6. Add in the al dente pasta to the sauce and cook for 1 more minute to coat the pasta well. If the sauce is too wet add a bit more cheese and stir once more. If too dry add a touch more pasta water.
    7. Taste test and make final adjustments to salt and pepper. Finish with torn fresh basil leaves (optional) and serve with more grated cheese and hot red pepper flakes. Enjoy!
    NOTES
    - I love a lot of hot red pepper flakes in this dish but add to your liking.
    - If the cream sauce is too dry add a couple tablespoons of pasta water to loosen it right up. If too wet just add a bit more grated parmesan.

    Made this last night for my wife and she loved it, I didn’t have fresh mushroom but rehydrated a dry mix, it came out great. Love the peas in this!

    I've been making something similar to this (minus tomato paste but add pancetta) for years. My daughter's best friend raves about this dish to this day. Will try the tomato paste for a pink sauce but I'm still adding the pancetta because everything is better with pancetta.

    Eating this right now and yum! I substituted bunashimeji mushrooms instead of Bella as Bella shrooms are much too expensive where I live. Still works! By the way, the written recipe doesn't say when the peas should go in. I almost missed putting them in 😳 this is going on the "frequent" menu all right.

    This really looks awesome-I love anything with peas! I wanted to ask about the little burners you use. How long does a can usually last-like how many meals can you cook using one can? Is your regular stove electric or gas?

      The cans last about 60-90 minutes depending on heat levels. I have a 20 year old GE electric stove. At some point we will upgrade to an induction or possibly put a large propane tank in the yard and run a line.

    Didn't look back into your past vids, but are those portable propane or butane stoves? Do you like them, or just use them for filming convenience? I was thinking of getting one for hurricane/SHF type situations. If you'd be so kind, please share your experience with them! Oh, yeah forgot to say I love your channel, my new fave cooking channel!

      Thanks for liking the channel! They are portable butane stoves by Iwatani. I bought them on Amazon and also buy fuel there. It's definitely about convenience because it's hard to get light over my stove. But I find myself actually cooking on them even when not filming because I much prefer gas over electric.

    Hey Jim, In Canada we have table cream, Half and Half and then Whipping cream (you can make whipped cream with it) - when you say heavy cream, so you mean whipping cream?

    I'm allergic to dairy and do not like the substitutes (almond milk, etc.). I would do this simply without the cream element as the flavours are already there. If it needed more liquid, I assume chicken or veg stock would do.
    I think this basic sauce would also work with rice cooked in a stock.

    Why can you keep tomatoe paste in the tube longer than the can. Lol. It's odd to me. Tried the can put into air tight container and was Baad within the week but the tube three weeks now
