Easy Spicy Vodka Rigatoni Recipe

- Today we're making spicy Rigatoni Alla Vodka with Calabrian chili paste and spinach. If you want penne vodka just sub the pasta or use any type you like! For this Carbone inspired spicy vodka sauce recipe, I used 1 teaspoon of the Calabrian chili paste for a 1/2 pound of pasta. Use more if you like it really spicy. Truth be told if I was making it for just myself I'd probably add a lot more. I hope you enjoy this spicy vodka sauce spinach pasta!

SPICY VODKA PASTA WITH SPINACH
INGREDIENTS
1/2 pound rigatoni
1/2 pound baby spinach - blanched for 30 seconds in pasta water
1/2 cup Pecorino Romano
1/2 small onion - minced
2 cloves garlic - minced
2 Tbsp olive oil
3 ounces tomato paste
3/4 cups heavy cream
2 oz. vodka
2 oz. dry white wine - like pinot grigio, sauvignon blanc, etc...
1-2 tsp Calabrian chili paste - use more or less to taste
reserved pasta water for thinning
INSTRUCTIONS
1.Cook pasta to al dente in salted (2 Tbsp kosher salt per gallon) water and reserve 1 cup of pasta water before draining. Mince 2 cloves of garlic and 1 small onion.
2. Saute onion in 2 Tbsp olive oil in a large pan over medium heat until translucent (about 3-5 minutes). Add garlic and continue to saute for 1 minute more.
3. Add tomato paste to the pan and cook for 5 minutes. Add the Calabrian chili paste to the pan and cook for 1 minute more.
4. Add the wine and vodka to the pan and cook on high heat until boiling. Let boil for 1-2 minutes then reduce heat to medium-low. Add the cream and mix thoroughly. Let the sauce simmer for 5-10 minutes until thickened slightly.
5. Add the al dente pasta to the sauce pan and stir. Add the Pecorino Romano and thoroughly mix together. Turn off the heat.
6. Add the spinach to the hot pasta water to wilt (about 30 seconds) and drain then add to the pasta. Mix well with the pasta.
7. Taste test and adjust salt, pepper, and Calabrian chili paste if necessary. Enjoy.
NOTES
- Makes 2 large servings or 4 regular ones.
- If the pasta dries out while waiting for guests to sit down, thin with a couple more ounces of the reserved pasta water.
- Serve with extra Pecorino Romano cheese and Calabrian chili paste on the side.
- Pecorino Romano is quite salty, so no additional salt was added to the recipe. Adjust according to personal taste.

Maybe other people can help me with how to make nice things on glass electric cooktop, the ceramic kind that the heat kicks on and off and stays crazy hot. Now I try and put both front burners on, one medium low, one higher and move pan from one to the other.

Thanks for the tip with topping off the Calabrian Chili paste jar with olive oil! I always have a jar in my fridge (I use it to make a spicy mayo for sandwiches along with other meals) and don’t use it that often, although it’s too expensive to have it go bad and throw it out! 👍

I’ve made this recipe with penne pasta and I put the red pepper flakes in two shots of vodka and let it steep for several hours till I’m ready to add it to my sauce which is San marzanno tomatoes which I hand crush into bite size pieces,then as this is simmering I add my heavy cream about 3/4 to 1 cup give it a good stir and then I add my vodka to the pan and I always start with finely diced onions and garlic to start this recipe.it’s one of my family’s favorites I’ve made this recipe for probably 40; years give or take.always delicious

Never thought of using tomato paste. Makes it easier than making my weekday sauce. Also got get a jar of those chilies, I used to use red pepper flakes. No more I’m trying your way. Thanks
Thanks man! I use tomato paste in a lot of my recipes. I just love the convenience factor. The Calabrian chili paste brings a unique flavor that I love. But I also like the crushed red pepper flakes.

Thanks! I recommend throwing the spinach in the pasta water for maybe 30 seconds, right at the end, if you want it more on the wilted side. If you like it uncooked, maybe use a 1/4 pound instead of the half pound I used. It's all good though and should be made how you like it! Enjoy!
I am usually not a fan of vodka sauce because to me it has a harsher flavor but I'm going to try to make this and fingers crossed that the sauce is perfect.

I love it [vodka sauce] just the way you had it right before you added the pasta water - I love when it is really thick and pink! I was curious as to why you use the canned tomato paste vs the tubed kind? Is it because of how much you use it, preference, or do you think the canned is better for a particular reason? I have used both both I would like your opinion on it (since all of your food is so yummy!).
It's because of how much I use. I buy the 12 pack of cans at Costco. Much better value than the more expensive tubes.

Hey there are only two Costco liquor stores in Long Island and they are far from my house. They have amazing deals. When I lived in Minnesota we would always check out the attached liquor store after a Costco run.

Hey Amazon has many brands for sale. They cost more there, but the paste goes a long way. Trader Joe's also sells 'Bomba Sauce' which is their version of Calabrian paste. No matter which brand you buy, make sure to top off the paste with olive oil after each use. This will prevent mold from forming, and let the paste last a long time.

I am so confused about Vodka sauce in general because let’s face it- Vodka doesn’t really have flavor. I wonder what taste it really brings
Many foods have alcohol soluble flavor compounds, especially tomatoes. So you’re getting those compounds pulled out and into solution so that you taste them. Tomatoes treated with Vodka have a much more pronounced tomato flavor.
