Here's a helpful tip to make the jalapeños milder. I always do this because I can't do too spicy. Jalapeños contain a compound called capsaicin, which is responsible for their spicy taste. Capsaicin is soluble in water, so soaking the peppers in water can help leach out some of the capsaicin, making them milder. And I've also seen them on the menu as "Jalapeno poppers", and "Armadillo eggs", I just call them bacon wrapped jalapeños. They are so delicious, thank you for your recipe.

I always like to pre-cook bacon about half way on any of this style of recipes as I like a crispy bacon. Pre cooking also lessens the grease on the final product.
I made another jalapeno poppers recipe you have and it's awesome. You cut an incision and remove the seeds and ribs. I couldn't get the batter to stick so I peeled the jalapenos they fried up perfectly. Great recipe momma. I won't try this one I don't eat bacon

I make these on repeat with sausage instead of brisket and they are amazing! Did your jalapenos actually cook until they were soft!?! I bake mine for 10 minutes after cleaning and deseeding them now. Then, let them cool for ~5 minutes before stuffing and wrapping. The first time I baked them without pre baked pepper step, so the peppers were still a bit crunchy 😂

This question has nothing to do with this video but how do you keep cilantro fresh days after you buy it. Every time i use it and have left overs it dries and loses it's smell and texture
I found out 2 days ago that farmers have been TRYING to grow milder jalapenos (because it seems that us Americans can't take the heat grrr). Embarrassed and sad.
Everyone misses this step!!! Finely chopped fresh garlic in the cheese mix. No fattening bacon just grill the popper till the pepper is cooked! This I’ve been eating for 60 yrs! A popper is a finger food not a meal!
