If you love Jalapeño Poppers then you are going to love my absolute favorite Tailgate Snack - Texas Twinkies. Texas Twinkies were invented by my friend's Hutchins BBQ in McKinney, TX and they are amazing! I mean how can stuffing cream cheese and brisket into a jalapeño and wrapping it in bacon and smoking it be bad?

Warning - Making these for dinner guests is like giving milk to a stray cat - they'll never leave. I know from experience and that was before Pastor Pittman took it up a notch by smoking the cream cheese.

Hey Matt…I made some Texas Twinkies tonight for our family and everyone loved them! The only thing I did different was we had left over smoked pulled pork, so we used that instead of brisket. Thanks for sharing this with us!
A few weeks ago I had my entire family here in TX visiting from Tampa, FL. Between them and my kids, we had 21 people over, so I fired up the smoker and made brisket, burnt ends, pulled pork, and smoked mac n cheese, all following the videos from the Meat Church. They all loved it and raved about it. Now I wish I had made some of these as well.
I didn't have any brisket on hand, but I used this recipe as a guide to make some jalapeño poppers for the first tailgate of the season. They turned out delicious, but I had to use vegan cream cheese (seasoned with Honey Bacon rub) because one of my guests is allergic to dairy and I didn't want to leave her out with anything on the menu. If you're someone who is in the mood for heat, use vegan cream cheese. It doesn't really taste any different in a popper, but it doesn't contain any casein, so it doesn't do anything to temper the heat of the pepper. I found that out the hard way today (which is generally fine, but I wasn't in the mood for that much heat today).
For cleaning out the insides use a metal 1/8 tsp measuring spoon. Sounds like an insignificant thing but I've found it to be the best thing for cleaning my jalapenos. Fits perfectly inside the pepper.
Also, use a piping bag or zip top bag with a corner cut to put your filling in the pepper. These are so labor intensive I do everything I can to cut the time down

I find that using a butter knife gets them stuffed better and less messy. 😜

When I read "Texas Twinkies" I immediately thought of Hutchins BBQ in Frisco. My wife and I drive to that location from Plano even though another location is closer. Two Texas Twinkies are a meal for me, with broccoli slaw, the best I've ever tasted. 😎👍🏻💯

Gotta love a Texas Twinkie!! Many days I've picked up a 2 meat plate at Hutchins BBQ and added 1 Texas Twinkie....the 2 meat plate ended up as lunch or dinner the next day. For sure it's enough to be a meal...especially if you add a cool side or two!!

I’ve made these twice now. The first was Aggie vs Arkansas tailgate at Jerry World. I got feedback from folks they were a bit on the spicy side. Someone told me to blanch them in ice water after the smoke pepper step. That did the trick. Also congrats Goldee’s for that Texas Monthly #1 rank!
The reason they call them jalapeno poppers in most jargon is because they are spicy The spicy the better.
You don't blanch in Ice Water, blanching is a short time in boiling water. You Shock in Ice Water. 😂
RTR! I grew up in Prattville, AL and moved to Texas in my 20s. I wasn't born in Texas but got here as fast as I could.

I have found that a paring knife inserted in the top and then twisted several times will effectively core the pepper...no need to open the pepper up at all!!! Cant wait to try this with your recipe for Tri Tip!!!

I hope Matt Pittman sees this comment . I live in New Mexico. And our Texas Twinkies are smothered in BBQ sauce. And we call them BBQ Rats. My in-laws have had a. Annular Halloween party for almost 40 plus years . And I learned how to make BBQ Rats. We added them to the food served at the party . They come out looking like a Rats Most of people the first year wouldn't try them the next year they ate about 5 pounds of them. Since then, they are one dish we are out of within the first hour.

Loved these so much I froze a bunch of left over Twinkies. Today I sliced them frozen and dredged in flour egg and panko. Pan fried. Currently enjoying some Texas Nickels.

If presmoking the jalapeno doesn't take heat out of it, boiling sure will. When I'm without a grill, I always boil my jalapenos first, they get nice and flexible and they lose alot of their spice/heat so my family avoids the strong heartburn.
I make extra filling cause you dont wanna come up short. What I dont use for stuffing the peppers I put on the table for dip.

I used to live in Mesquite in the mid 90's, a block down from the Mesqute Rodeo. We used to go to the Mesquite BBQ Grille on Military Parkway for all you can eat ribs quite often. I haven't been down there since 1998, I miss those days. It's probably closed or something now.

I plan to make these on the 4th weekend here in northern Michigan!! Wish me luck, i use a charcoal grill so i will be regulating the amount of charcoal i use and maybe some soaked wood chips !! Im gonna give it my best try, and it will be delicious either way!

I make these for cookouts in the summer, but we call them Atomic Buffalo Turds. Sometimes I'll use sausage, sometimes Hillshire Farm Lil' Smokies. I personally like the Smokies better. I always whip up a batch of spicy Dr. Pepper bbq sauce for dipping. Always a big hit.

I was in Frisco last week. Had the Hutchins BBQ brisket, sausage, and Texas Twinkies, of course, had no idea what they were before I got there. Everything was great, but wish I had just ordered a plateful of these. Awesome. Go Cowboys and Roll Tide!

We made these over the weekend. They are absolutely amazing, and they will become a staple of our tailgating menu. Our jalapenos were a little smaller, so they weren't overwhelming.
Next time try mixing the smoked cream cheese with smoked sharp cheddar. Game changer
