The bread looks good but I would probably increase the hydration by adding more water. It's also a good idea to knead a whole wheat dough to the point where it just comes together (still takes 5-8 minutes by hand) as when the dough is too tight it does not proof well during the final proofing. It depends on the amount of the yeast used as well as how much gluten is developed in the dough while kneading and proofing.

Yes I can believe it as I have to make it almost each and everyday because my family do not eat store-bought as someone stupid convinced them they mix harmful chemicals in bread. 😢😢😢
It may be good according to your liking but I would recommend to leave it for more time to rise and place in more warmer place and use bigger bowl also it didn’t rose much in loaf pan.
