Good idea welding ID on the bottom of the disk. I have had a few walk out of my camp while out fishing or hunting. I have made many of these over the years. Working on one now will weld ID numbers on mine tomorrow.

When you say you're turning down (or up) the heat, the camera needs to show the FLAME instead of what you're doing; everyone knows how to turn the knob. We need to SEE the flame height.
Get a clue, bud. Everyone is not using the same burner, with the same BTU/pressure, the same amount of air intake, with a discada of the same thickness, and the same distance between the burner and discada. You need to learn your own equipment and figure it out. You probably shouldnt even be messing around with propane if this is a difficult concept for you. You need him to show you exactly how tall the flame needs to be to sear a steak? Or how low it needs to be to cook asparagus without burnung it? Have you never cooked before?

The wok was invented in China over 2000 years ago. More than a 100 years ago The majority of rail workers in the Southwest were Chinese and were cooking their food with woks the workers around here did not have woks and started using plow disc. Learn something today.
