This can depend on the cut of beef you are using. Generally I marinate the sliced beef overnight with my spices and something acidic like fresh lemon juice. The acid in lemon juice helps to break down connective tissue in the beef, tenderizing it. I used Skirt steak in this cook. Very important to clean/trim any silver skin off the meat as this is very chewy. Also, on cuts like Skirt and Flank steak (my personal favorites for beef fajitas) you must cut/slice the beef across the grain or it will be chewy. Hope this helps!
@@rubengonzalez750 , all Costco beef that is not "bulk cryovac" sealed is blade tenderized already. I won't buy it because of this. Personal choice. But yes, pounding skirt steak helps tenderize it.
@@yumagrillmasters I buy the skirt steak at Costco skirt steak that is vacuum sealed and that is super tender I cut it in cubes and fry it up on my disco... when it is about done I add diced green onion and soy sauce to taste comes out super good like Mongolian beef....we make tacos out if this kinda like Mexican/Asian fusion my friends always request I make this when they come over for football or other sports event always a hit.....sometimes when I ain't got time to go to Costco I go to my local Carniceria ( butcher shop ) and get my skirt steak there just pound it a little and just as tender.....greetings from San Diego.
@@rubengonzalez750 , sounds good! I shopped at Costco for many years when it was local in central Arizona, now the closest one is a 70 mile drive so not so practical when I have a local Sam's Club. Costco's meat selection traditionally is superior to Sam's, I agree there! Also, many people don;t know that there are actually two cuts of Flank steak, the "Inside", which is usually what is offered, and the "Outside" cut which is a much thicker cut and more uniform in shape, also much harder to find at markets. We have Food City markets here which offer a wide variety of the Carniceria cuts of proteins in Mexican fashion. On occasion I can score a bulk box of the Outside skirt which is amazing for grilling as is, but a lot of work to break down for a simple disco fajita dish. Thanks for sharing!
