Dijon Mustard
Canned Anchovies
Fresh Lemons
Tabasco Sauce
Worcestershire
Fresh Garlic

Little Gem Lettuce

Cherry Tomatoes (Optional)

Your comment re: straight olive oil is well advised a combination of vegetable , olive and possibly avocado is a great tip.
Always felt the pure olive could provide an aftertaste or be overbearing .

Yeah...with Tabasco sauce. Just like they did back in the day in Italy, with French Dijon mustard. Don't forget the English Worcester sauce.

You have all these beautiful ingredients, and the most expensive this and that but i thought the most important ingredient is the bowl, its supposed to be wooden so it smears along the sides, all you will have using a copper bowl is olive oil soup.....idk thats what ive seen/heard....

I would not use a peanut oil blend. I used about 1/3rd cup evoo and 2/3rd cup peanut oil and the peanut is a dominant flavor, making this dressing taste rather like peanut butter. Next time I will use a blend with Canola. I think I will also use more anchovie cause I cannot really taste it.
The egg yolk will have pretty much 0 difference in bacteria after 45 seconds. It actually does more harm than good, you should keep them as cold as possible so the shelf life is longer. As long as the yolk is still runny it's below 185F, and it won't be anywhere near that but at most close to room temp (if stored in the fridge) or close to body temp if left out. Neither are good, second worse. Blanching it only has effect on the shell, so won't be doing much unless the eggs are unwashed from the producer (which those in the video was).

Pretty good salad. Most people would miss the croutons. Also, I would never want to work beside Chef Marc . . . he never once said thank you to his assistant or politely acknowledged his existence. He seems like one of these I-know-it-all-just-shut-up-and-listen-to-me type of characters.

Nope. This is not the "real" ceasar salad. The REAL recipe is from Ceasars Hotel in Tijuana Mexico. It's not too hard to find it. First, get rid of the copper bowl. Always a wooden bowl. And he claims that his "secret ingredients" are original..... Nope, he stole the idea.
Yep we all gotta thank Cesar Cardini for this one, I think his brother spiffed it up with the anchovies later on. Chef Marc's particular blend of seasoning is probably unique and therefore "secret" but I'd def opt for that wooden bowl like you said.
Your recipe is wrong. It takes no effort to find the original recipe from Tijuana. I've been making a Ceasar dressing for years that has stayed true to the original TJ recipe.

@@dianerodriguez6546 Tbsp of good dijon mustard. Tbsp of Worstesire sauce. 2 Cloves of garlic pressed. Fresh ground pepper. Juice of one lemon. 1 egg yolk - no whites. 3-4 filets of finely dinced anchovies. Stir and mix in extra virgin olive oil until you get a thick consistency. Probably 2-3 Tbsp of oil. Add Tbsp or 2 of parmesan chz. Stir together. Then add Romaine lettuce. They do whole cuts of romaine hearts in the orginal, but I cut the romaine inot small pieces that are easier to eat. The large romaine leaves are more for family style. And that's it. Toss it all very good . A neat trick is to throw the lettuce in the fridge for about 20-30 min covered with a paper towel so it's cold and dry when the salead is mixed. Best salad ever. Some places south of the border add tequilla to the dressing. I've never done that. But it's an option.

Good but overdone ! Small green limes are better than yellow lemon for it. NO SALT ! NO PECORRINO ! Anchovies and parmesano reggiano are already salty enough to do the job.. Tequila blanco is a key ingredient. No cherry tomatoes or gin... Good thinking for the fresh pepper (black to give that bite of flavour).
How dare you do that to the egg….if I’m wanting real Caesar dressing … I’m not worried about the risk… just like if I order steak tartare…. I accept everything coming my way… if I didn’t I would used bottled dressing and eat everything well done
