The unexpected change was probably due to dynamic range auto in the recipe. If at any point it decides to be "off" or low, the contrast would increase. By the way in the shots where you underexposed for dynamic range, you can also try to ensure you're at DR400 or even better, do Dynamic range priority high or low (instead of off) depending on your needs. Just make sure you're at least at the necessary iso for both of them to be available. I have a custom button for Dynamic Range priority so it's a reflex at this point.

I do use Aperture Priority and I normally just have it on single point autofocus, AF-S for landscape or AF-C with face tracking for portraits!
What camera are you using to shoot this video?
