  • We challenged chefs of three different skill levels - amateur Stephen, home cook Daniel, and professional chef Saul Montiel from Cantina Rooftop - to make a rich cup of hot chocolate. Once each level of chef had presented their magnificent mugs, we asked expert food scientist Rose to explain the choices each cocoa-maker made along the way - both good and bad.     Daniel made a chocolate cocktail, but it was cold, that's disqualifying it from being hot chocolate, Sauls one looked wonderful though, although I did miss the chilli in it

      @@orangeleprachaun4723 thats a traditional Aztec hot chocolate, it's made with water and chile and has no sugar it was considered a delicacy. Saul made champurrado, they're both Mexican drinks and made of chocolate, but they are most definitely not the same drink

    My family usually uses Abuelita instead of Ibarra, and I’ve never used almond milk before. I’ll definitely give that a try, especially since I recently learned that Abuelita is made by Nestle.

    I love Saúl, he represents our culture in a way that you dont expect it, often giving a twist to the recipes theyre supposed to make, for example in this video hes making champurrado, a typical drink which tastes so good instead of a typical hot chocolate

    It was such a pleasant surprise to see the level 3 chef go traditional and accessible (the ingredients, if not the tools) instead of using a bunch of fancy ingredients I’ll never be able to find.
    Also, almond milk is that easy to make???

      For the almond milk, the one thing to look out for is that homemade one's probably don't have the same vitamin and mineral content as some store-bought options. The store bought ones tend to be fortified with more calcium and such

      @@NeilDavis10 Read that store bought almond milk add vitamins, stabilizers and sweeteners that take away a lot of the good stuff tho.
      In homemade nut milk you dont add binders, preservatives or other fillers which ultimately makes it healthier than the store bought ones even tho they have added vitamins.
      And store bought almond milk as very little nuts in it.

      @@penthactussoul2634 yeah but since you're not eating much of the almonds or whatever nut you're using, there is little nutritional value and a lot of recipe blogs and "influencers" don't know this or neglect to share this info (a lot of people instantly think natural = better without a thought). this is why there are added vitamins/minerals from commercial brands in order to better match regular milk for those who consume it as a vegan alternative or could use the extra nutrients. you'd need to drink an inhuman amount of homemade to even match cow's milk in terms of health properties and even then, nuts don't have all the same nutrients so it depends on needs.
      it's a toss up -- you can go au naturel without preservatives and fillers for a better, richer taste and freshness, but you won't get much from it and it can be pricy or wasteful if not used quickly so it's not always feasible for the average person.
      for something like this, though, I think homemade is the way to go since it's less watery and a special treat. plus, depending on the brand's emulsification process and type of nut, they can taste weird after high heat.

      @@washedblue I wouldnt go all natural on my diet personally. But when it comes to making your own chocolate drinks and stuff then I would prefer the taste over the nutrients aka making my own nut milk and stuff

    Love that you guys brought Saul for this one! I’m from France and I genuinely thought Vienna hot chocolate (which is the most common kind of "fancy" hot chocolate you can get in Europe) was the only way to go until I tried real Mexican hot chocolate. I can’t wait to try Saul’s tips, maybe I can get that special flavour once again.

      The best hot chocolate I have tasted was at a café lateral across the street of the cathedral in Morelia Michoacan…the odd thing is that it was dark like if they didn’t put milk in it. I dream of one day returning there just to have that sip again.

      @@Sabrina-sx9fl Really? That’s kind of funny haha. When you ourder a Viennois in France, you get a hot chocolate made of melted dark chocolate, milk and sugar with whipped heavy cream on top. Vienna is actually on my travel bucket list specifically because I want to try a real Vienna hot chocolate from Vienna, I hope it’s not justa French invention 🤯

    Champurado in my country(Philippines) is a breakfast item, its still chocolate, but its sticky rice cooked in dark chocolate usually topped with condensed milk or milk powder. Its a really good breakfast too lol

    What I notice between lvl 2 and lvl 3 chefs is that lvl 2 tends to have dishes that look slightly more fanciful than lvl 3. Both are well-plated, but there are more things going on with lvl 2. Lvl 3 have more complicated processes. The ingredients are more elaborate and take more time to prepare. But you don’t necessarily see that on the surface.

    This was the first time I've ever seen Chef Saul, and he's fantastic! For any vegetarians out there, marshmallow fluff (that stuff in a jar) is vegetarian-friendly, and you can roast it with a torch.

    I truly like items from all three chefs and had never thought of almond milk so I want to try that. Saul's churro was amazing.. overall I would go with Daniels base with some liquor and then top it off with a warm churro.

    My late Mother made the best Hot Chocolate in the World. BAR NONE! My only regret is that she passed away before I had the chance to find out the recipe that she used to make it. She also made the Best Homemade Fudge as well! I miss her very, very, very much!!!!!
