- We challenged chefs of three different skill levels - amateur Desi, home cook Daniel, and professional chef Jurgen David, director of pastry research and development at the Institute of Culinary Education - to make us their take on a classic tiramisu. Once each level of chef had presented their creations, we asked expert food scientist Rose to explain the choices each made along the way. Which tiramisu will you be your next sweet treat?

I think they are sometimes better dipped. A lot of older adults have fragile teeth and would appreciate something just short of hard for a more pleasant experience when eating.

the level 2 chefs tiramisu collapsed bc he dipped them fully. you just need to barely touch each side of the biscuit to get it soft like sponge cake. it also needs to rest for a day in the fridge to moisten.

While all of them look and sound amazing, this is by far one of the best lvl3 performances: no super hyper special ingredients, no "plottwist", nothing extraordinary. Just straight up well done Tiramisu with highly educational tips and well executed techniques. Great episode overall! We will gladly expect Jürgen in future videos for sure!

Except for the gelatin. Properly made tiramisu shouldn’t require it to stand up straight, sous vide the egg and it holds its shape. Gelatin is cheating.

They all look amazing, but I’m Italian and I use my grandmother recipe…there is no custard in tiramisu. Is only eggs, sugar, mascarpone, ladyfingers and espresso+amaretto shot if you like but not mandatory.
You mix two tablespoons of sugar with two egg yolks, you then beat the whites until firm, mix everything together with mascarpone slowly and this is your cream. Then you layer your ladyfingers and dip them in espresso as you go. Top with cocoa.
Again all of the recipes look amazing and I mean no disrespect.
because of factory farming in america, most of us are too afraid of salmonella in raw eggs so heating those eggs into a custard / zabaglione is probably an american adaptation of the recipe
@@lmsalimyou can still pasteurise your eggs adding a hot simple syrup to the egg mixture and skipping the sugar into the coffee

I was so disapointed with the professional chef... i thought at least one of the three would make a real tiramisu and not low quality american adaptations.
Thank you! I was looking for this comment! There's also no whipping cream on the original tiramisu recipe. I'm in Portugal and I make it like you said. Only eggs, sugar, mascarpone, ladyfingers and espresso coffees (but instead of amaretto liqueur, I use my mom's homemade coffee liqueur). It's even tastier if made the night before 😊
I think Desi's looks better than Daniel's, but Daniel's will definitely be a much more interesting taste. Jurgen's a pro, there's no way I could add anything to that discussion.

I would eat all of these if they were offered to me. Jurgen's ganache reminds me of Ben&Jerry's Topped Tiramisu, which is easily one of my favorite of their flavors.

He just made a mascarpone cream spread. It might be suited for people who are allergic to eggs or don’t like eggs. I personally think that it’s not rich enough for a tiramisu.

Why? So he can insult the other chefs "Everyone else is dipping?" YES BC everyone else likes lots of coffee flavor. His ego is obnoxious and, while his Tiramisu was the prettiest, both of the others would taste better.

Like, Daniel's Tiramisu was definitely gonna taste ABSOLUTELY interesting, and Desi was just a sensitive, hearty human being full of Love.
Desi seems like a very fun person to cook with and Daniel is like a handsome Lin Manuel Miranda haha. Actually all three of these guys are very funny and fun to watch. They all did great.

The chef complaining about the store-bought ladyfingers confuses me. Wouldn’t you want them to be dry so they soak up more of the coffee, and it’s going to be covered in mascarpone anyway.

my tiramisu recipe consists of savoiardi, 4 eggs, sugar, mascarpone and made coffee (where to dip the savoiardi ligthly). it turns out fabulous. at least that's the recipe I've always done back at Italy (born and raised there). you should def try it.

Interesting, none of them made a "classical tiramisu", the one Italian grandmas make on UA-cam. All of them had their own twist, even Level 1 is an americanized version.

not even Italian, but the look of horror on my face when they brought out cream?? why. You can easily pasteurize eggs by making a syrup, turning them into a custard is unnecessary.

The level 3 guy is actually a level 4 or 5 guy, based on his qualifications. An actual level three chef would be someone who has worked as a pastry chef for a couple of years in a restaurant, not someone who teaches it professionally.

I have to admit, I didn't have much faith in me, but I can see Desi improving and that's great! I found his energy in first 2-3 episodes quite offputting in the beginning (mostly because he was taking every shortcut humanly possible as if he should be lvl 0 not lvl 1 and was giving an impression of overly inflated ego) but it's nice to see him come around more and more with each episode.
