I’m glad he did tbh, ‘cuz now we can base the quality of the rest of the remaining recipes off of the ones he compared in this video. ‘Cuz if you can get the basics right, you’ll probably also do better on the more specialized recipes
I always use cayenne in mine, along with pumpkin spice and vanilla extract! I also follow a recipe for whipped coffee to put it on the top (but I only go like halfway so it's a foam). 10/10 IMO, and the cayenne adds a great warmth that it's otherwise lacking :D

Each channel has their own advantages, and combining is 100% the way to find what works best.

We just made Babish' recipe and it was DISGUSTINGLY sweet. I really recommend using only half of the condensed milk! We had to add a shitton of milk to make it drinkable again...
I did wonder why he added condensed milk and then MORE sugar on top of that. Surely condensed milk is super sweet already? Whenever I use American dessert recipes online, I always have to reduce the sugar, I guess they have a much sweeter palette than my country.

Also, people don’t have time to make their own food cuz of their busy work schedules, so a common breakfast/snack is like donuts, cookies, bagels, along with coffee. There hundred if not thousands of hot cocoa recipes out there with all sorts of unusual additions: Salt, vanilla, cinnamon, chili powder, cornstarch, instant coffee, heavy cream, butter, etc. After years I just realized the simplest and easies and quick hot cocoa recipes involve: store-bought quality chocolate milk. Heat in a sauce pot. Voila

My hot chocolate rocks. Its coco powder with hot water in a pan which you add both dark and white chocolate, pinch of salt, cinnamon, coffee and sometimes either red wine or fruit. Then if I want to I top with milk and spoon into a cup. Then I add a layer of ice cream (which cools down the drink to the perfect temp as you sip) and sometimes a piece of chocolate or a biscuit to decorate. Again the only necessary parts are the chocolate and spices topped with ice cream (not even milk) and is the best way to make cheap stuff, good. One cup is probably at most £2 if you use better stuff but the cheap stuff still works well.
I personally like to add a little bit of the oil from chili oil to the hot chocolate unironically feels nice when it slides down the esophogus but not when you taste it
If I am feeling fancy, I’ll make a hot chocolate using cinnamon, dark chocolate, cocoa powder and the likes but a quick fix for me would be equal amount of heaping spoonful of cocoa powder dissolved in hot water and sugar (I used keto sugar) with good amount of cold milk and ice. Quick and satisfying hot or iced chocolate I tell.

My issues with hot cocoa is that it's always too sweet and not nearly chocolatey enough. I've been rifling through hot chocolate videos to find one that looks just the right amount of bitter and sweet to replace my morning coffee. If this doesn't work, I guess I just don't like hot cocoa/chocolate and I move on to trying different teas to keep the morning routine going without the high caffeine intake. =/

You're supposed to add the chocolate to the mixture in the end, the turn off the heat and keep mixing 30-60 seconds till it's all dissolved.
