  • In this video I'll be sharing what I eat on days when my motivation hits rock bottom. It's not about fancy recipes or picture-perfect plates; it's about showing up for yourself when you'd rather hide under the covers.
    The recipe I loosely follow for the orange tofu.
    I never use oil, and I simplify it massively and use my air fryer... so it's really just inspiration!!

    Love the advice in the beginning! In once heard “everything worth doing is worth doing poorly”, so when I’m in a depression phase I sometimes just brush my teeth for 30 seconds instead of 2 minutes and it’s still better than doing nothing

    You are a star. Explaining in honest words is great too see. I am on a journey trying a vegan life style at 75 so I find great inspiration as there are days like today that it seems to feel that just getting some reduction on calories is a big step. Keep doing your videos as they are inspiring

    “Not served myself much.” lol my normal serving of food at 230lbs. That stir fry looked so good.

    Great Chelsea , you did quite a lot despite not feeling great 👍 as you mentioned most probably the shock of your injury has effected you mind set and just being aware of it and still taking little steps in a right direction is what makes a difference and you and family did amazingly today 😍 I have been listening to Dr. Stacy Sims, she has a world of information on women’s health, and she suggest to eat before exercise and negative impacts of prolonged fasting on women’s health and performance. Listen to her if you get a chance and she is based in New Zealand as well 👍

    Thank you for blessing us with this video even though you were not feeling at your highest. You help many when you show that you are real as we all feel sometimes exhausted at always trying to achieve perfection which is not possible.     Chelsea - I don’t mince garlic anymore since I discovered you get basically the same outcome with mortar and pestle. Just throw your garlic bulbs and chunks of ginger in there and pound it for 30 seconds. So easy and quick!

    🥰🥰🥰🇨🇦🇨🇦🇨🇦 I freeze my ginger and use a micro-planer while frozen to grate the ginger. Awesome!

    Very inspiring...
    Tip..cut your ginger into 1/2 or 1 inch pieces, then use a grater. Much faster than chopping it..

    Love that you share the tougher days, I can so much relate. I have been having a cold for 3 weeks now and today when I also had my period and my son of 1,5 is sick I just wanted to eat chocolate all day... We had a small treat after the midday rest my son and me (he found out I had a small piece of chocolate and just ate it all 😂) so I did treat myself and after that I started with dinner with a lot of veggies . So true what you said, listen to your self and give yourself what you carve in a constructive way and then continue one towards your goals!
    Hope your knee is better!

    You don't need protein power, it's exercise that builds up muscles, just eat a variety of plant food and you'll get enough protein. Did your doctor say you need more protein?

      Very true. In saying that, for significant muscle growth (aka bulking) like I want to achieve, extra protein makes that process MUCH easier.

      I use corn starch as a thickener because I’m gluten free.

    As a mom of 2 younger kids, maybe slightly younger than your own… how do you get yours to eat the same thing you are preparing for the adults? Every time I make healthy food they always say “where’s the mac and cheese?” as soon as I set it down in front of them 🤦‍♀️ haha both of mine do like vegetables and don’t generally like meat products but if I made the same stir fry that you made they would most likely say “no thanks” almost instantly haha Im going semi crazy trying to meal plan, grocery shop and feed multiple people in our household with so many different food preferences while trying to eat cleaner for myself… any suggestions to help get the whole family on the same food plan?

      It’s hard.
      Most nights my kids think the food I make is yuck.
      They have to eat their veggies, and they don’t have to eat the rest.
      I tell them constantly this is what we eat for our little animals (feeding good gut microbiome)
      They don’t have to like it, but the more that’s the only option the more they’re ok with it.
