Catherine Shanahan author of the book “Deep Nutrition” once wrote that we used to think about food like farmers and chefs - focusing on flavour, soil composition & freshness, now we talk about food like scientists (talking about carbohydrates, protein…). One thing I love about you and your take on food, Sarah, is that you are the chef/farmer and focus on nutrition and taste! ✨👏🏼👏🏼👏🏼 and yes, I love that you avoid toxic seed oils! Thank-you!

My mom used to make that “farmers cheese” all the time because where we lived didn’t have access to cheese! She would keep the whey that you drain out of the curds and put them in her bread (healthy and tasted SO good). Not sure if that would work with sour dough ?

I regularly make the Ricotta you made using goats milk. To curdle the milk I use citric acid, a bit of cheese salt then a tablespoon of lemon juice at the end. The salt can go in whilst the milk is heating and when you strain the cheese keep the Whey and bottle it for drinking. The Whey is extremely good for your liver and gallbladder and can assist to remove sludge that builds up. ❤ It will keep for about 2-3 weeks in the fridge and can also be used as a substitute for butter milk.

Thanks for sharing! Awhile ago I discovered that many cheeses are actually very low in lactose. As a nutritionist who has IBS and am lactose intolerant I was so excited to find that many lactose intolerant people can tolerate cheese (especially hard cheeses) myself included! I thought I'd share encase it helps anyone else!

I've been wanting to make cheese for a while but haven't yet actually done it. Maybe now I'll have to try it.
When you say whole milk from the store do you mean the 3% stuff?
Where I am in Langley BC it's about $24 for a jug of raw milk, which has been holding me back, but if I can just use milk from the store this'll make it much more affordable for us.

Hi, your videos help me to be confident in the kitchen. Could you please make a video about cooking utensils you use and which ones aren't worth purchasing. I get overwhelmed by the cooking spoons - I'm sure you don't need that many. Life hack: use the leftover whey liquid from making the cheese and use it in place of water when you make bread. It does't change the flavour of the bread much but it does increase the protein content of the bread and better than throwing it out!

No mater what is claimed raw milk is not the safest. Buuuut if youre looking for dairy that is easier on the stomach look for pasteurized NON homogenized. You get the benefits of the cream top without the sickness part.
