Yes, Chelsea Mae! I have had a hysterectomy surgery and menopause. 😢 I thought that I would never get rid of this weight. I have about 72 pounds to lose. I lost 5 pounds this week. I ate so much food that I thought I couldn't finish it all. So, I saved it for later. I tried Keto, but my doctor was upset because my cholesterol was super high. He told me that if I don't get it down, he will put me on medications. Your recipes and tips are so helpful. I am not vegan, but I think I could do this.

I use capers in my chickpea "tuna" sandwich filling. I usually have it on bread but it's also yummy on a romaine or kale leaf!
Thanks for the tour and encouragement!

Capers...put them in my no tuna salad..chickpea. also a great tomato sauce for pasta with olives and capers...traditionally it would have anchovies too.

I used to feel the same way about fruit. The cutting and prep was a difficult and messy. So I stopped cutting the melons and instead I use an ice cream scooper and scoop large pieces and put in another bowl. ORRR, even easier is scooping with the scooper and eating it right out of the melon! When we've scooper out everything, we can just toss the half "bowl" of rind!

Capers: I add them to spaghetti-squash with lemon, garlic and nutritional yeast. P.S. avocado freezes really well, which has been such a useful tip for me, because it’s ripe for like 15 minutes before going bad.

I use capers when marinating carrot lox as well as in serving with cashew cream cheese bagels. Can’t thank you enough for reaching out to me on instagram two years ago - your advice of not being scared of eating rice and beans together at the time went against everything I’d been brought up to believe. I know now that eating whole food plant based no oil keeps me healthy, slim and energetic and eating without restriction. Thank you.

Love the Playdoh and sunflower seeds 😸 I just throw it in the fridge until I get to tossing too. Love me some baked goods. I was gifted an avocado keeper, I love now. It resembles avocado with clear plastic top, flat bottom. Store it w/ avocados on the counter or in the fridge, of course, with half avocado. I share with my dog🐶

I haven't followed plant based diet in years but I try to eat dairy free as often as possible and I try to avoid refined sugars. My trick is if my husband or kids want something I typically like, like ice cream, I'll buy ones I either can't have because they contain wheat/gluten or a flavor I don't like, like peanut butter.

I’m just trying to start cleaning up my food and drink behaviours again. You are motivating me, so much thank you (it’s only been a week). I lost 3 1/2 stone much many years ago and I think I’ve finally crept back up to the original weight, I’m horrified at myself for allowing it to happen.
The last two years have been the worst, half a stone during covid lockdown, then this year, bang a stone! It doesn’t help I’ve been diagnosed with an under active thyroid, and had a few traumas related to ageing relatives the last six months.
I’ve tried regularly exercising, though need to get back to swimming, but have fond it hard to shift it, though have felt reasonably fit. I have been vegan for the last 5 years.I think as I enjoy cooking, it’s meant me being more adventurous cooking vegan cuisine, but it’s not always necessarily the most healthy!
But I can’t make excuses, and for my health I need to reel it in, and shed the pounds.
I’m really glad I found this channel, these are the foods I truly love, and I think the more you eat stuff like this the more you crave it, as I’ve found before, it truly is your behaviour and environment.
    Thanks again Chelsea.

After several tries - expensive tries, I should add - I gave up on wearing contacts because I feel so uncomfortable without my glasses. My glasses hide/cover things I’m self-conscious about (sparse eyebrows, the bags under my eyes, crow’s feet, etc.), and I just honestly look better (and much younger!) with glasses on. Plus, glasses are just way more convenient. Putting contacts in, taking them out, cleaning them, all that jazz, was just so annoying for me. And I was constantly falling asleep with them in when I’d be watching movies and stuff, and I’d wake up to go to bed and realize I had them in and knew I should take them out, but I also knew if I went through the process of taking them out I’d be wide awake and wouldn’t be able to get to sleep, so I’d tell myself I’d just sleep with them in this one time,” but that happened every night. It was all just too inconvenient.

Sub avocado oil for rice bran oil. Rice bran oil even though it sounds healthy is not. It's a seed oil and the way they are processed makes it very hard on the body. You can also get avocado oil in sprays. It should have a green tone to ensure it's authentic. Primal brand avocado oil is very good.
