- Simple oven cooked Brisket is my favorite way to make a Brisket low and slow! It turns out perfect every time and you do not have to babysit it. Everyone likes this because it makes melt in your mouth results. This Keto and Carnivore Brisket recipe is a great way to go because it's easy and so many things you can do with the leftovers!
There is a full printable recipe on my website here: ketogenicwoman.com/keto-slow-...
Brisket is a very muscular piece of meat with lots of connective tissues. This is the reason for slow cooking it. You can also cook brisket in a slow cooker and then set under the broiler.
What I did today in this video
-------------------------------------------------
4 lb brisket
1 tbsp kosher salt (or more!)
1 teaspoon pepper
Remove brisket from fridge and allow to sit out for couple hours.
Preheat oven to 250
Remove from package and pat dry with paper towels
Score the fat cap with a sharp knife
Rub the brisket all over with salt and pepper (or whatever spices you are using)
You can sear the brisket if you prefer to sear ahead of baking.
Place brisket in pan and seal the pan with foil
Bake at 250 for 1 hour per pound
Remove brisket and drain off most of the fat into a large container (I drained about 2 cups from this 4lb brisket today). Keep the fat, it is tallow!
Place brisket under the broiler for 2-5 minutes (if you didn't sear it)
Remove, cover with foil and allow to rest while you prepare rest of meal.
Melt in your mouth brisket is the result!

Thankyou for watching!
Hello from New Hampshire, USA. I just bought a 5 lb Brisket for $4.99/lb at Market Basket... I also got 5 lbs of Beef Fat Trimmings for .99/lb... I'm going to follow your recipes...
Thank you & God bless you sister 😇
Thanks for this! Carnivore for7 months now, and have never made brisket. I always figured it was some kind of high end expensive cut. Boy was I wrong! It was almost the same per pound as 80/20 chuck!! Can't wait to try this!
Never would have guessed it's your first video. I found your new ones yesterday and really enjoy them! You speak like a real person and aren't yelling at the camera; your organized way of presenting the material really helps and of course, things happen when anyone is cooking :-) So Glad you Kept Doing these!!! THANK YOU for the inspiration :-)
Welcome aboard!
I just stopped watching another video because they were yelling at the camera.. irksome. I like this lady too. She is calm and easy going. Very pleasant to listen to.
LOVE THIS! So easy and I especially like that you don't trim it. I'm doing high fat carnivore/keto and one thing that really bugs me with cooking vids is they always trim the fat. So I LOVE this approach and I'm looking forward to trying to cook a brisket. Thanks for the confidence!
AND the advantage to untrimmed is that you can make brisket bacon with the leftovers! Slice your brisket very thin and fry in a pan until crispy. My favorite thing!
Me too! Im making this today!
Carnivore woman for 9 months from the Kinda Deep South USA! I must admit, you're a little too slow talking even for me so I did speed up the video. You did a fantastic job for your first video tho, so I'm definitely subscribing! And I'm using your carnivore brisket recipe for supper tonight!
Thanks so much for starting this channel❤
I encourage people to speed up my talking, I do speak slowly. I think it was either from having 4 kids or my years in customer support explaining things over and over 😂
Been a fan and watching your videos for less than a year. After researching, looking for brisket videos, UA-cam suggested this oldie but goodie! Thanks for your videos!
This was my first ever youtube video! Thanks for watching it!
Thank you from a non-cook who has to learn this stuff from UA-cam. Great instructions. Easy to follow and know what to expect. 🐄🙂🙃👍🏼
Thank you so much for watching that video which was actually my first real YT video! 💗
So grateful for your recipe. I wanted something keto friendly without a lot of unnecessary ingredients/sugars. Thank you!
I just finished eating after following your perfect instructions. WOW. I love it. I feel very accomplished. Thank you so much for your great videos. You are very easy to watch and listen to you. I’m so happy I found you on UA-cam and Facebook. I’m carnivore and doing BBBE and you are making choices so easy for me 💜💜💜

Wonderful, that is what I like to hear! I miss driving over the border to Bellingham Costco and Trader Joes!
Great job, Anita. I've been eyeing a lovely brisket at Costco and wanted to learn how to cook it first. Thank you so much. It looks delicious!
Hope you enjoy!
I just found your very first video and man on man you are a natural UA-camr Anita. I just love your channel and thank you for all the wonderful ideas and recipes ❤
Thank you so much!
This was great for a very first video. Well done.
I love it when people find my first video! 😂💗
Thanks for your relaxed way of instructing. You made it easier understand. I did the brisket the same way as you and it turned out perfect.😊
You’re so lovely! Excellent job on your first video. You’re a natural
Thank you so much!!
I am def going to try this. I think it will be so much better than using the crockpot. Thank you
Hope you enjoy!
I usually braise brisket in a big covered enameled cast iron pot on the stovetop. I usually use broth for braising. You just want to bring it to a very low simmer. I also cook it for 1 hour/pound. I also use the broiler or toaster oven to put a crust on at the end.
I have videos on that way of doing it as well! 🙂
I’m on my way out to buy a brisket! Loved this easy way of cooking.
Brisket is such a good staple and a lot cheaper than many cuts of beef these days. Enjoy!
@@KetogenicWoman this was the first video I watched of yours and I still subscribe- you are aging backwards! Also your line “It’s called foil pan confidence” made me know I would be a long term fan. Thanks Anita!
I just bought my first brisket from Costco and had to come look for a way to cook it in the oven. I’m excited to try it! Thank you 😊
Those Costco briskets are BIG! I once bought one that I had to cut into 3 pieces just to fit one piece of it into my pan! Exciting!
Simply delicious!
I’m so glad you got a blog! I put your wonderful recipes in my Copy Me That recipe file!
A nice, simple technique for someone just starting out, like me! Thank you, I love your videos :)
Can't wait to try this !
I watched it again and it's still good. Hehehe. 👍😉
😁 haha, thanks!
Making that into a rolled roast with seasoning spread all over, and tied with string to hold the roll, then using a slow cooker is an option.

Great video !!!!
Made this one today, again thank you for your helpful videos…..❤
Thanks☮️♥️
I've always cooked my brisket in a pressure cooker ( only an hour), but lately I've been cooking ribs, chicken and pork bellies like this, and the slow cooking in their own juices is really good. Now I have to try brisket. Thanks Anita. Nice to finally see your face and hear your voice!
That is probably the only way I have not yet tried it! My Mom had no gadgets so everything was baked for hours in the oven and so I tend to go there first!
Very clean and pure carnivore. Im going to prepare my first brisket and this was an amazing help! Thx so much!♥️🥩
Yay, once you make it your first brisket you will be addicted! So many things you can do with the leftovers too!
Great video, Anita. We usually smoke our brisket but have to babysit the smoker. This is a whole lot easier. Thanks for sharing.
I have been a Facebook member of your group for months but just found your channel on UA-cam! I love your help and am so glad to find you here teaching me even more! Thanks so much for doing this.
Nice to meet you here too and thanks for your support!
Great job Anita. I love your blog! I will be making this recipe very soon. Thank you for sharing.
Thank you so much!
Thank you for this recipe!!
You are welcome!
Making this tonight! Thank you for the recipe!
I'll be making one when the heat wave is over around here!
Simple and lovely, thank you so much Anita. Definitely a great help for newbie like me! :)
Glad it was helpful!
😃 hi Anita! Following you for quite a while now. I love your videos, I must say, wow, how well you are doing and how much you have achieved since this first video. I thought of your recipes when I wanted to make a carnivore brisket today, and so here I am, I found this one! 🙏thank you for all you do and share with us! from this video to your last Tuesday talk, shout out for your amazing growth & transformation in both yourself & the channel. A+ 🫶
wow, thank you so much! I appreciate your confidence and support!
Thank you very much! Love your recipe.
My pleasure 😊
I’ll have to make this! Thank you for the great recipe, Anita!
(I had no idea how to make a brisket…)
I had this today!! It was very easy and very delicious! Thanks for the cooking tips. This is great for many meals!
Glad you liked it!!
Hey Amira….I’m Canadian also and I buy a whole brisket from Costco. It’s so much cheaper and all the good fat we need is there without it being trimmed. I slow cook it like a stew because it’s more convenient for me so I cut it up like stew pieces. I’m a slow cooker it comes out so tender after 6 hrs on high. About 6 months ago a whole brisket would cost me less than $90 but now the price went up and it is about $110. It was about $12-13/kg and now about $15-16/kg. Just an FYI!
I buy the brisket from Costco as well and it for sure has gone up. I guess along with almost everything else! I have made it into stew before as well, another great way to go! Thanks for your comments! 🍁
Y'all, I get my meat from a local ranch (deep south USA -- so MAYBE cost is lower than Canada), but I buy half a cow at a time & split with my son. Last time price was $5/ pound; this time its $6/ pound. That's for everything whether ground beef, chuck steak or roast, ribeye steak, or brisket. You might check to see if there is something available in your area. You do have to have a big freezer tho.
@@JScoxwhen I move I will do this. How long does a quarter of a cow last for you. Are you strictly carnivores or keto also?
Yum, can’t wait to try this one, I have brisket in the freezer and I’ve never cooked one, thank you so much 😊
Once you make a brisket you will always want to make a brisket!
aww love that I've stumbled on your very first video! well done you! Metro (Ontario) has brisket for 3.99 a pount this week so off I go! thanks for the inspiration - almost 50 years of cooking under my belt and have never done a brisket! 💖
Oh wow! I have a couple newer brisket recipes on youtube as well! And this week here in BC I also paid $3.99lb so lots of brisket in my immediate future!
@@KetogenicWoman I know but now you're the queen of briskets I was checking all of them out!
@@jennywagner2448 lol, thanks!
Wow I’ve never cooked a brisket before but that looked delicious!! Definitely going to try it!!
I'm making one this week as I have family coming and it's a set it and forget it meat to make!
Your first official video where we see your lovely face! So awesome to see a fellow Canadian starting a channel and will be supporting you. 🥰❤️
Thank you so much!! I appreciate your support so much! It's hard for me to watch some of these earlier videos, I was soooo nervous!
Great job! My husband generally smokes brisket, however, I think this looks much easier. I’m looking forward to trying it.
I wish I had a smoker, I would probably smoke everything! This is definitely the minimalist brisket!
Looks great!
Thank you!
I’m so glad you clarified about Carnivore. However, black pepper has a ton of oxalates.
At the time I did this video I had no clue about that! (This was actually my very first video!) At any rate, since doing some food elimination work and self testing, I no longer use black pepper. Aside from the oxolate issue it gives me severe severe acid reflux! White pepper I have no reaction to!
New subscriber, thanks for the tips! Going to try this weekend!
Thanks for the sub! This is the very first cooking video I ever made on youtube so I'm always thrilled when I get a comment on it, lol! . Brisket is a real favorite of mine and so I've done a couple more brisket videos showing different cooking methods! I think I'll do one this weekend! Thanks and welcome to my little corner of the youtube world!
This was very helpful
Thank you!
I made a brisket today Anita using your recipe. I made Steve's rub. The brisket turned out really well. So happy with it. First brisket I've ever made. Looking forward to more.
Great job! So many things you can do with the leftovers as well! This video was actually my very first cooking video! Thanks for warthing!
This was your first video? Wow! Fantastic! You were a pro from the start!
Nice of you to say that!
@@KetogenicWoman well it’s so true! I made my brisket last night and it turned out terrific! Thank you🙏🏽
OMG I found your very first UA-cam video? 😍
Yes 😁 You sure did!
@@KetogenicWoman wanted to cook a brisket the carnivore way, so I knew I could count on you for the recipe! Now I'll have to go back and look at your brisket bacon vid again. 🤗
I was thinking if you set that on a bowl, the scores would open up for you. Just a thought.
I'm using your cooking method tomorrow/tonight for mother's day after hours of watching different brisket cooking videos in the oven yours was the best one I liked I'm just going to add a pink ring around it at the beginning of the process but the rest of the process will be your cooking techniques I appreciate your video
Brisket is the unsung beef hero as far as I'm concerned! Budget friendly and endless leftover possibilities! Enjoy!
@@KetogenicWoman I agree thank you again
Just now found you by searching for a keto recipe for cooking brisket. My store has it on sale now for 1.99 per pound. Great deal! I subscribed and requested to be a member of your facebook page. Good job on this video.
whoa that is an amazing price! The cheapest I've ever been able to get it was about $3 per pound!
@@KetogenicWoman It is a St. Patrick's Day special price this week. Can't pass it up!
I got corned beef for $1.59 a pound.
Stop and shop is having an awesome sale.
I really want to try brisket .....I've never had it uncured.
No one in my family has ever made it .
@@ketokarbs3671 Oh my goodness you have to try it! Cook it low and slow, that is the secret. It's the ultimate comfort food!
@@KetogenicWoman I will! Thx
Canada and the rest of the world, except for about 4 or 5 other countries use the metric system and the Celsius scale all the time. You need never apologize for using metric or Celsius scales.
Thanks! I actually learned the Imperial system in school and switched to metric just as I was going into college for Science. So I had to relearn fasTt!
@@KetogenicWoman
The switch to metric happened when I was in late elementary.
Nice video, I wouldn't guessed it's your first video.
Btw did you add water ? Because it seems that you added some when I look when it's cooked.
Thank you! No water added. You will get a couple jars of liquid and fat from cooking a large brisket!
Like half of what I buy has the 30% off or 50% off stickers 😂 incentive to cook it up quickly
I just ordered a 2kg piece of grass fed brisket on sale for delivery in a few days (no butchers open in level 4).
Thanks for this, doing beef, salt and water only 30 day challenge so brisket is new to me. Will cook it like this, thanks. Also I am 58 next month, can I join your FB group ? :) Ohh and hi from New Zealand (we do kg too).
Of course you can! Thanks for watching my videos! I have a brisket in my freezer, now I feel like cooking it!
😊😊😊
Anita, can you use the brisket grease for cooking?
Yes absolutely! I usually get 2-3 small jars of nice white tallow from cooking a brisket like this!
Thanks for recipie. The brisket I buy is always trimmed, so quite lean/missing the fat cap. Would the cook time still be the same (1hr per pound) or less?
Yes, I would still shoot for that because the meat itself is very tough if not cooked low and slow. The fat is just a bonus, too bad they cut it off! But still the meat itself has a lot of muscle tissue (think collagen!) and that will melt into the cooking liquid and still very beneficial!
@@KetogenicWoman thanks so much. Greatly appreciated!
At some point as you continued your Keto journey you found that you can’t use black pepper. When and how did you realize you don’t do well with black pepper?
I weaned off my acid reflux meds a couple years ago and kept having bad flareups so finally decided to do Beef and salt only as a cleanse. One night I was making oxtails and I love them with salt & pepper. Well that evening I suffered immensely and was up all night with acid reflux after having no issues on the beef and salt. I then found out after that not only is black pepper a night shade (I had already given those up) but it is also very high in oxolates.
@@KetogenicWoman Thx so much for your reply. I may suggest that my sister try white pepper to see if that helps her. She has a lot of digestive distress. Maybe it would help her. It’s certainly worth a try. I’m glad you found that it has helped you.
I wonder how long to rest it when prepares this way 🤔 the only container I had was a Dutch oven… I put my brisket in that and followed your recipe exactly except I added a little water to the Dutch oven.
Some say 20 minutes but I have no patience for that!
@@KetogenicWoman me neither! It had been a long day and I didn’t get it in the oven until late so when that brisket was done, I ate it!!😹 The broiling was an excellent addition, though!!🙏🏽
I would check into the unhealthy factors of cooking with foil for those of you who are conscious of not ingesting toxins. Receipts looks great beyond the foil.
I agree with you, I no longer use foil in my cooking. Since this video almost 2 years ago, I've learned many things and keep learning all the time! Thanks for your comment!
What did you use In replacement of foil?
What should we use instead?
@@KetogenicWomanwhat do you use instead?
@@kristineb697did you find out?
Is it at 250 degrees Celsius or Fahrenheit?
Fahrenheit!
What temperature was the broiler?
My broiler only has a high or low setting and I chose high.
I love brisket and used to add liquid smoke but I think I quit using it because of an ingredient that is in it. Can't remember what.
Have you tried smoked sea salt? I just got some and am going to try it on my next brisket.
@@KetogenicWomanno I haven't. Where do you get it?
I cooked an 18 lb brisket in my table top roaster and omg it was amazing but I wish I would have thought to broil it at the end (though I didn’t have a pan to fit it in my oven at the time) and I didn’t score the fat so now I’ve got a few more things I want to try on my next one! Yummm. I did, however render out so much fat from it that it filled a couple of pint jars!😱 What’s even better was it was only $2.96/lb! Totally worth it.
WOW! 18lb! That is a feat and it would feed a crowd for sure! It's amazing how much tallow you can save from these!
So true and I had to slice up and vacuum seal the leftovers for the deep freeze. It was nice to pull out for quick meals later! 👍🏻
Broil on high ?
I do broil it on high, which is why the smoke alarm got triggered! :-) I made one the day before yesterday and turned on the overhead vent first and got a nice crispy top without the smoke alarm!
Who doesn't rinse meat coming from the store ?
I never rinse meat. Any bacteria that might be on it will be killed during the cooking process. Rinsing raw meat can actually do more harm than good because bacteria can be splashed on other items in your kitchen and spread to other foods, utensils and surfaces. This advice comes from a butcher friend.
I don’t? I’m strict Carnivore. Nothing wrong with that.
Looks really good! I bet It would be perfect with some hearts of palm rice from Natural Heaven!
Sounds great! Also cauli mash!
