    OMG❣️Delicious 🥰 I finally purchased a brisket. I cut it up into smaller chunks and ended up with 2 x 3lb and 2 x 4lb briskets. Left one 4lb brisket out to cook and froze the others. Followed your guide and baked it for 4 hours. Took it out and drained the fat. Set to broil and put it back in for approx 4 minutes. Let it rest for 10 minutes and cut it into slices. So easy…so tasty…so tender…absolutely amazing ❤❤❤ thank you

    Thanks for this! Carnivore for7 months now, and have never made brisket. I always figured it was some kind of high end expensive cut. Boy was I wrong! It was almost the same per pound as 80/20 chuck!! Can't wait to try this!

    Anita, I have been subscribed for awhile and have seen many of your videos. This morning I watched your interview, with 7 other gals, on Kelly Hogan's video. :) But i have a brisket to cook and just googled keto brisket recipe and there you were, among other choices, but it was a no-brainer... Anita! Click! And then to find it was your first yt video was kinda cool. I started with you in this kitchen and it just made me smile. (Have also watched you long enough to know that if you were to do this with pepper at all, it would be white pepper!) You were a natural from the get go, but what further progress, on multiple fronts, you have made! Blessings, friend!

    LOVE THIS! So easy and I especially like that you don't trim it. I'm doing high fat carnivore/keto and one thing that really bugs me with cooking vids is they always trim the fat. So I LOVE this approach and I'm looking forward to trying to cook a brisket. Thanks for the confidence!

      AND the advantage to untrimmed is that you can make brisket bacon with the leftovers! Slice your brisket very thin and fry in a pan until crispy. My favorite thing!

    I've always cooked my brisket in a pressure cooker ( only an hour), but lately I've been cooking ribs, chicken and pork bellies like this, and the slow cooking in their own juices is really good. Now I have to try brisket. Thanks Anita. Nice to finally see your face and hear your voice!

      That is probably the only way I have not yet tried it! My Mom had no gadgets so everything was baked for hours in the oven and so I tend to go there first!

    I usually braise brisket in a big covered enameled cast iron pot on the stovetop. I usually use broth for braising. You just want to bring it to a very low simmer. I also cook it for 1 hour/pound. I also use the broiler or toaster oven to put a crust on at the end.

    I’m so glad you clarified about Carnivore. However, black pepper has a ton of oxalates.

      At the time I did this video I had no clue about that! (This was actually my very first video!) At any rate, since doing some food elimination work and self testing, I no longer use black pepper. Aside from the oxolate issue it gives me severe severe acid reflux! White pepper I have no reaction to!

      Those Costco briskets are BIG! I once bought one that I had to cut into 3 pieces just to fit one piece of it into my pan! Exciting!

    Hey Amira….I’m Canadian also and I buy a whole brisket from Costco. It’s so much cheaper and all the good fat we need is there without it being trimmed. I slow cook it like a stew because it’s more convenient for me so I cut it up like stew pieces. I’m a slow cooker it comes out so tender after 6 hrs on high. About 6 months ago a whole brisket would cost me less than $90 but now the price went up and it is about $110. It was about $12-13/kg and now about $15-16/kg. Just an FYI!

      Y'all, I get my meat from a local ranch (deep south USA -- so MAYBE cost is lower than Canada), but I buy half a cow at a time & split with my son. Last time price was $5/ pound; this time its $6/ pound. That's for everything whether ground beef, chuck steak or roast, ribeye steak, or brisket. You might check to see if there is something available in your area. You do have to have a big freezer tho.

    Making that into a rolled roast with seasoning spread all over, and tied with string to hold the roll, then using a slow cooker is an option.

    Canada and the rest of the world, except for about 4 or 5 other countries use the metric system and the Celsius scale all the time. You need never apologize for using metric or Celsius scales.

    Trying for the first time right now. Should be done by midnight lol😂 got a late start and it’s a big one.
    I scored the fat, but I also think I goofed by scoring the meat and then rubbed salt and garlic powder in it. Also, I don’t think the tallow from this roast with garlic powder in it is going to be very good to use the skin softener which is something I hear people are now doing. lol.

      @@KetogenicWoman So my brisket turned out great! FreshCo had these briskets on sale for 3.99 a pound and they were over 15 lb each. I bought two.
      I did pretty much what you showed. Great video, simple, and it worked. Yum!

      I got corned beef for $1.59 a pound.
      Stop and shop is having an awesome sale.
      I really want to try brisket .....I've never had it uncured.
      No one in my family has ever made it .

      Yes absolutely! I usually get 2-3 small jars of nice white tallow from cooking a brisket like this!

    At some point as you continued your Keto journey you found that you can’t use black pepper. When and how did you realize you don’t do well with black pepper?

      I weaned off my acid reflux meds a couple years ago and kept having bad flareups so finally decided to do Beef and salt only as a cleanse. One night I was making oxtails and I love them with salt & pepper. Well that evening I suffered immensely and was up all night with acid reflux after having no issues on the beef and salt. I then found out after that not only is black pepper a night shade (I had already given those up) but it is also very high in oxolates.

      @@KetogenicWoman Thx so much for your reply. I may suggest that my sister try white pepper to see if that helps her. She has a lot of digestive distress. Maybe it would help her. It’s certainly worth a try. I’m glad you found that it has helped you.

    Thanks for recipie. The brisket I buy is always trimmed, so quite lean/missing the fat cap. Would the cook time still be the same (1hr per pound) or less?

      Yes, I would still shoot for that because the meat itself is very tough if not cooked low and slow. The fat is just a bonus, too bad they cut it off! But still the meat itself has a lot of muscle tissue (think collagen!) and that will melt into the cooking liquid and still very beneficial!

    Hello, I just found your video today while looking for good recipes for brisket. I have only did brisket for boiled cabbage dinner in the past and this will be my first time doing it in the oven, im nervous but also excited. I really want it to turn out and there are so many conflicting recipes. Im carnivore and wanted a minimal recipe so if you have any suggestions today that you didn’t have prior I would really appreciate all the help I can get 😊. I am planning to cook it tomorrow and hope you can reply before hand, if not I understand for sure 😊. Thank you for the minimal recipe.

      This is really the simplest way to do it! Low and slow, 1 hour per pound is the key.

    I would check into the unhealthy factors of cooking with foil for those of you who are conscious of not ingesting toxins. Receipts looks great beyond the foil.

    Oh…a thought…the tallow is fantastic for cooking….especially searing….not carcinogenic so keep for sure.

    I got a 4.8 pound brisket to cook after seeing your video. I have taken it out of the package and it was folded up to look like it was thick like yours in the video. Instead it is super long and thin (around 1 inch thickness) with barely any fat anywhere. Should I keep it folded up and cook it like you do here or do I need to use a different method? This is my first time doing a brisket. Please help!

      Too bad about the lack of fat but there is still a lot of collagen within that meat itself. You will still have to cook it low and slow either in a pan the way I did in this video or in a slow cooker since it is only 5 lbs it could fit in there.

    I wonder how long to rest it when prepares this way 🤔 the only container I had was a Dutch oven… I put my brisket in that and followed your recipe exactly except I added a little water to the Dutch oven.

    I love brisket and used to add liquid smoke but I think I quit using it because of an ingredient that is in it. Can't remember what.

      I do broil it on high, which is why the smoke alarm got triggered! :-) I made one the day before yesterday and turned on the overhead vent first and got a nice crispy top without the smoke alarm!

    I cooked an 18 lb brisket in my table top roaster and omg it was amazing but I wish I would have thought to broil it at the end (though I didn’t have a pan to fit it in my oven at the time) and I didn’t score the fat so now I’ve got a few more things I want to try on my next one! Yummm. I did, however render out so much fat from it that it filled a couple of pint jars!😱 What’s even better was it was only $2.96/lb! Totally worth it.

    Who doesn't rinse meat coming from the store ?

      I never rinse meat. Any bacteria that might be on it will be killed during the cooking process. Rinsing raw meat can actually do more harm than good because bacteria can be splashed on other items in your kitchen and spread to other foods, utensils and surfaces. This advice comes from a butcher friend.
