Yay! A Teddie and Pippie cam! I imagine that brisket bacon cooking in the air fryer smelled as good as it looked and tasted. I use the fat from my steak to cook up like that, nice and crispy. So good!

The fatty part of the brisket is the flap and most bbq houses will sell it as "moist". It is absolutely the best part of the brisket. All that fat is tender, juicy and divinely delicious.

The Brisket Bacon looked heavenly Anita! Unfortunately here in France, it's really hard to get hold of Brisket and when I have tried, they really don't come with a fat cap which is SO disappointing so the search for brisket continues! I hope to try this recipe out at some point. I think my little dog Bella would love this too!

You can do this with beef ribs too. I try to buy it with a good fat layer in between. Makes excellent bacon especially with a dash of smoked salt. Bake it low and slow like 300 for 2- 3 hours. Then do just like Anita did with the leftovers of her brisket.

What you can't see on the video is that just a couple of feet away are beds and carpets for both dogs. When Teddi anticipates that it is getting closer to snack time, he comes closer to me and his little feet go up and down in excitement! He does this even on the carpet, it is almost like the kneading that a cat does! He does it on the carpet as well!

That, "I fondled that way too long" cracked me up. I say you handle your meat until it's spicy and ready. Be not ashamed about fondling large thick pieces of tasty meat. (I can't help having a wrong sense of humor. I was a cook for many years, and I've never been in a kitchen crew that wasn't somewhat offensive. Funny, but not fit for polite company.)
Having simply thrown my 15 pound brisket into my roasting pan and having sprinkled it with salt and garlic powder but without any initial browning, then covered and cooked it in the oven for 15 hours…. Can I do anything now, after the fact, with what I will pull out of the oven in a few minutes, to turn some of it into a bacon type product?
Absolutely! I often use leftover brisket to make chips and/or brisket bacon! It doesn't have to be cooked a certain way, I just showed that one possible way as an example!

As I said in the video I did mine for about 8-9 minutes but YOURS might be different depending how thick your slices are. And how crispy you want it. You will have to experiment!

I didn't have brisket but very fatty thin sliced ribeye I'd cooked & cut it in strips & microwaved them 2-2 1/2 min & it was sooo crispy & good!!!

The most obvious one would be a big slab of pork belly, but if you could find a super fatty piece of shoulder or butt that could work as well!

I usually use it in a sauce, soup or stew (and yes after scraping off the fat). It is pretty tasty though, I could just scoop it up and eat it, lol!
