The fatty part of the brisket is the flap and most bbq houses will sell it as "moist". It is absolutely the best part of the brisket. All that fat is tender, juicy and divinely delicious.

Unfortunately here in France, it's really hard to get hold of Brisket and when I have tried, they really don't come with a fat cap which is SO disappointing so the search for brisket continues! You can do this with beef ribs too. I try to buy it with a good fat layer in between. Makes excellent bacon especially with a dash of smoked salt. Bake it low and slow like 300 for 2- 3 hours. Then do just like Anita did with the leftovers of her brisket.

When Teddi anticipates that it is getting closer to snack time, he comes closer to me and his little feet go up and down in excitement! He does this even on the carpet, it is almost like the kneading that a cat does! He does it on the carpet as well!
