Detailed brisket Trim
• The Ultimate Brisket T...
Brisket Cook
Trim and season with seasonings of your choice.
225 degree for first hour
250 for 2nd hour
275 for rest of the cook
Spritz at the 4-5 hour mark
{Timings should be adjusted based on your ovens and size of your brisket}
Wrap brisket in paper/foil when satisfied with color/bark/crust. Temp should be around 180.
Start probing for temp/tenderness after 1-1.5 hours. Finished temp should be 205-210 degrees.
Rest brisket for at least 2 hours before slicing.

I live in Idaho and it’s always so cold that my smoker can’t work for 8 months out of the year, so I’m so glad you made this video, it lets me cook all the bbq during the 8 months of winter inside away from the razor cold wind, ice, sleet, hail, snow, just miserable weather. Wish I had the money to move states to bbq more often but this was a great recipie, thank you.

I live in a condo and can't have a smoker and have used the oven method for years. Try using curing salt to create a fake smoke ring.
I use liquid smoke as a binder. Last time I did a brisket this way, our friends thought it was done on a smoker.

I watched today's (3/12/2024) video of the brisket done on a drum smoker and the link at the bottom took me here to the over version. The oven version looks as good (amazing!) as the smoked one. Since I don't have a smoker of any kind, I might give this a try. I noticed you have an old school electric stove with the coils on the cook top. DO NOT get rid of that! Glass cook tops suck! If a pan is a little warped it will be useless on a piece of glass. My last house had a gas range, I miss it. There is nothing like fire!

@@mamaandpapajoe Weiman Cook Top Cleaner works really great. Use an abrasive scuff pad (like a Scotch-Brite) and it cleans right up. Weiman is a blessing for those of us that are cursed with an electric stove!

Great point points Turbo. I mentioned using liquid smoke in an earlier response. I'd use it as a binder, It's too concentrated to use as an injection. I think it would work.

Great question Coral! Your brisket will be just a good excep that foil will give you a softer wetter bark as opposed to a dry crusty one. Your brisket will do a little more steaming in foil. Thanks for watching.

I don’t know why anyone would trim any fat from anything, it’s where the best flavor comes from and it keeps the meat moist. Plus it’s plain delicious to eat.
Fat only accents flavor Frank. It provides moisture and the mouthfeel that amplifies the flavor of the muscle tissues. Have you ever tasted beef tallow (brisket fat)? It's favorless. Now take that same tallow in APPROPRIATE amounts and add it to anything and see how it levels up the flavor. Thanks for watching.
