🌱 HIGH PROTEIN VEGAN BREAKFAST RECIPES
    Hearty Protein Oats:
    Serves 1
    1/2 cup old fashioned oats
    1/2 cup water
    3/4 cup soy milk
    good pinch of kosher salt
1 tbsp each: chia, hemp seeds, and sunflower seeds (without shells)
    1/4 tsp almond extract
1 tbsp of natural peanut butter
Combine water and soy milk in a sauce pan. Once boiling, stir in the oats. ooo for 8 minutes or until mostly thickened. Then stir in the seeds and almond extract (vanilla is good too but the almond is worth trying. So good!) Mix well and cook until thickened to your liking.
Top with peanut butter and whatever else you like. Enjoy!
    Vegan Scrambled 'Eggs' with Veggies:
    Serves 1
    8 mushrooms, sliced
    3 tsp chopped onion
    2 tsp olive oil
    salt and pepper to taste
    8 cherry tomatoes, halved
    3 tbsp hummus
2 servings of Just Egg, scrambled
Top with fresh herbs, hot sauce, vegan cheese, or whatever you like. Serve with whole grain toast and some avocado for added nutrients if desired! Note: you can add whatever seasonings you like to the mushrooms and onions. Sometimes I add spinach or cauliflower rice too. The possibilities are endless!
    Chocolate Quinoa Porridge:
    Serves 2
    1.5 cups cooked quinoa
    1 cup almond milk, unsweetened
    1/2 cup water
    1/4 tsp vanilla
    1 tbsp chia seeds
    2.5 tbsp raw cacao powder
    1-2 tbsp maple syrup
    good pinch of kosher salt
Combine cooked quinoa, water, and almond milk in a sauce pan. Boil, then reduce to a simmer and cook for 20 minutes or until the liquid is mostly absorbed. Stir occasionally.
Then add in the remaining ingredients and top with whatever you like 😊 Note: I don't like it too sweet so I do 1 tbsp of maple and add sweet fruits like bananas and berries on top, but add more into the porridge or on top to taste!

Glad that you mentioned you're not a nutritionist or an expert,,,, because animal protein is high biological value protein meaning the body receives and uses it better compared to plant protein which are low biological value protein,,,and I wish you mentioned it in your video as well some people don't go to the comment section,,, and that it wasn't attached to a sponsorship,,,,
But you do you,,,, it's your channel

Yes, I think that's what I find hard to understand about my hubby's way of eating, he just tends to eat things he would have for lunch or dinner in the morning (like soup), and I just think that's so confusing. Like, if you have that in the morning, what are you gonna have for lunch and dinner? :)) I just don't like breakfast to be that much work, I struggle enough with finding ideas for lunch and dinner already :D

Try oat pancakes! I have been on this same journey over the last two years with my now toddlers. We started by having oatmeal with a heaping spoon of nut butter mixed in (and a smashed banana for sweetness) for over two years, and now I’ve finally learned a neater option which has been really helpful for clean-up with my younger one. We use a cup of oat flour, a cup of plant milk of your choice, a mashed banana, and a sprinkle of baking powder. That’s the base of the pancakes but you can change it up by adding in frozen blueberries, cinnamon, and walnuts or pecans (when they’re older,) etc. You can either buy oats and just blend them up in your food processor or buy oat flour. Both will work great but it’s important that your batter sets for five minutes to thicken before putting it in the pan. Oh, and you can switch out the mashed banana for half a cup of pumpkin purée or half a cup of applesauce. We also love the birch benders plant protein pancake mix!

Nikki, These are GREAT; thank you. Are they still your favorite protein-rich breakfasts or do you have others you can point me to? Looking especially for high protein and super low sugar for my husband especially. Thank you for your help!

I just made the protein oats but added a scoop KOS blueberry muffin protein powder, now it’s over 30g protein combined. Used vanilla extract instead of almond and used almond butter with bananas and walnuts on top

How much of the just egg did you use? I just bought some and it states 3 tablespoons for a serving of 70 calories but I had to use almost half a bottle for what was the equivalent of one regular egg.

Please note.. it's okay to be sick.. it's okay to catch cold..and there's nothing to stress about.
All you need is alil bit of rest and light yoga..
I'm an Indian and I've been eating a vegetarian diet my whole life (I'm 16).. until I turned vegan ofcourse..
And I do fall ill twice or thrice a year.. and it's totally normal

I really wanted to add on these vitamins but they're just too big. I have a lot of trouble swallowing pills. Great breakfast ideas! 🙂

I’m sorry if I just missed it, but do you have the calorie breakdown of each recipe or just the protein amount?

    • @NikkiVegan

I didn't out the calories because I don't count calories on a regular basis but I got these figures using cronometer.com so you can try that and it will give you the full breakdown 😊

I love plant proteins but the problem is they're very high in calories for how little bit of protein you get, nuts and seeds are delicious but they're the worst when it comes to protein because of the highest in calories nuts and seeds are mostly fat , this is good for people who are not worried about weight gain or don't care about calories but most of us are trying to lose weight or stay in shape but we still need high protein but it's just difficult when the calories are so much higher than the protein grams on some plant protein foods

3 years later since I'm on Mounjaro and NO videos exist for vegans and protein recipes. Am I the only one that hate the texture of quinoa? Every other recipe I loved.

Nice looking dishes! However, chia and flax seeds should be ground to be absorbed by the body.

Can we lose weight eating just vegans? It has a lot of carbohydrates? I am confused because in keto they say carbs can make you fat😢 I love oates, fruits and all vegetables but I also want to put meat with the vegies to get protein

    • @veganforthem76

All of the breakfast she showcased clock in between 300 and 400 calories. That’s pretty low, of course whether you are in a caloric deficit or not at the end of the day will depend on what else you eat.

    • @NikkiVegan
      @NikkiVegan  2 роки тому

I used to think so too but that’s based on super old, incorrect info. Soy is a great source of plant protein and fiber and it has a lot of health benefits, contrary to what I’d heard in the past 🙌 I’m not an dietitian but my friend Grace Pascale (babybychickpeas on Instagram) is a great resource for evidence-based nutrition info! Check her out! ❤️❤️

Those are some great breakfast inspos, thank you so much! Although I have to add that 20g of protein per meal still isn't very much. Of course it really depends on your activity level, your goals and so on, but speaking for me (as a very active, weightlifting student) it wouldn't be enough to fuel myself properly. Might be a great idea to add some soyyoghurt, even more legumes, seitan or even some protein powder here and there, if you're an very active individual!
