In this video I'm sharing what I eat in a day as a healthy vegan! I really enjoy eating a plant based diet, so if you like making healthy whole food plant based breakfasts, or need some vegan sandwich recipes for lunch...this is the video for you! @@NikkiVegan I actually bought mine 😂 I purchased a freeze dried starter from Ballerina Farm and reactivated it (it came with instructions). My starter has been revived for over a year now! I recommend doing it this way when starting out because there’s no way to mess it up!

Good, thank you! I just got done with a workout actually so perfect timing lol I've been using machines for the last few weeks and lifting heavier weights. It's really fun! What about you? And I'm glad you like the focaccia 😊 Let me know if you make it at home 🤗❤️

And I use the organic tortillas from Mi Rancho or Whole Foods brand on most days. Hope you enjoy this recipe!

Hi Nikki, wondering what plant based "butter" you use for baking. I'm trying to stay away from all those bad seed oils. I'm thinking coconut oil is my best bet??
Yep I love using refined coconut oil (virgin imparts a coconut flavor) and a lot of the recipes on my website call for coconut oil. But I also like using vegan butter sometimes and I find that it adds great flavor. I don’t use it too often but when I make cookies or frosting or pancakes, I love using Earth Balance Sticks (not the tub kind) I actually have some videos about vegan butter and baking on this channel that you might like! In general, I don’t worry too much about the seed oils in treats so I just go for the butter, but I usually use olive oil for everyday cooking. Hope that helps!
Why do you think seed oils are bad?
@@tamcon72 Apparently they can cause inflammation in the body. There are lots of articles about it. The healthiest oils, I've read, are coconut, olive, and avocado.
@@giselle2222 Are these medical research articles? Because the science really doesn't support the idea that they're inflammatory. Plant Chompers did a long form video on this. Coconut is actually bad for us, being full of saturated fat, akin to tallow.

Aw thank you! I think eating well is a big part of it for sure! Sleeping, eating well. All so important ✨ I've also been using a lot of natural skincare products and light, tinted makeup lately instead of the heavier stuff I used to wear so I think that helps too. My last several videos have had some of the products I like, mostly using OSEA and Typology products at the moment. Hope that's helpful ❤️
