  • In this episode of Tasty Tuesday's we'll go through the steps in preparing the ultimate pepper choka, which is basically the Caribbean version of an extremely fiery pepper salsa. Chris of Caribbeanpot.com will use a traditional recipe and add some of his signature touches to give you an amazing pepper choka, with smoky flavors and deep heat. With roasted scotch bonnet, seven pot and ghost peppers, this will be extremely spicy, but with the inclusion of the cherry tomatoes, thinly sliced onions and roasted garlic, you'll get sweet undertones.
    Note: Use mature green peppers!
    For this pepper choka (pepper salsa) you'll need...
    4 scotch bonnet peppers
    2 chocolate seven pot peppers ( 7 pod)
    2 ghost peppers (bhut jolokia)
    5 cloves garlic
    1/4 teaspoon sea salt
    3 tablespoon olive oil
    1/2 small red onion
    1 tablespoon parsley (chopped)
    8-10 cherry tomatoes (optional)

    Chris, I attended a BBQ fete last weekend and I ate grilled pork chops. It was chopped up and a sauce poured over, this was finger licking good. can you recommend a sauce that would have the same effect. Thanks

    Chris, thanks for introducing us to the Scotch Bonnet Pepper. I have to grow them in my area since they are not available in stores. Unfortunately, I must have bought some weak hybrid plants because they didn't turn out to be very hot this year. Oh well... Thanks for this great recipe.

      +Thaneii thats the one issue I see with peppers.. even the ones we get the markets/grocery. They look big and beautiful, but depending on the time of the year.. very tame. Fortunately I've been very lucky when I grown them. Next yr, try to pant a mix of varieties in the same area.. maybe (I could be wrong), but I usually have about 3-5 different varieties and when they pollinate (flowers) I strongly believe they cross.. so I end up with guaranteed HOT peppers.

      That's a great tip, but I don't know how well it will work. I grew the Scotch Bonnets, along the Bhut Jalokias, as well as Lemon Peppers, which are somewhat hot, Jalapenos, and Cajun Bell Peppers. If anything, the Bhut Jalokias are killer HOT!. I'm going to have to go back to one of your earlier videos on making a hot sauce. I remember that it was really great.

      +Hunter McDaniel just about any I share without being 'pepper specific". Basically all you have to do with them is adjust the heat level to your own liking and tolerance. You'll find that I add scotch bonnets, but that's not necessarily the norm with all Caribbean households. Email me from the website (contact) and we can discuss what flavors, vegetables, meats etc you like and come up with some ideas specific to your taste.

      +Nicky Styles I think that's a great idea. He should make a video of himself eating stupid hot peppers to show us how much he enjoys eating them. I really can't imagine any reason at all for eating something that is so stupid hot that you use it for prank videos on UA-cam.

    why you like to say Caribbean when certain foods in trini. I remember people in other Caribbean islands didn't even know tomatoes choker was even something much less a menu. ect.
