    You'll need...
    3 pods cardamom
    1 tablespoon whole black pepper
    1 star anise
    teaspoon allspice
    teaspoon mustard seeds
    tablespoon coriander seeds
    2 - 2 1/2 cups veg oil
    1 1/2 lbs HOT peppers
    14 cloves garlic
    3 scallions
    3-4 thick slices ginger
    3/4 teaspoon salt

    This is truly the most insane pepoer oil I have ever made and tasted(with cinnamon off course).

    I will be making this pepper oil this Saturday I cannot wait I love Caribbean anything my son's father is from Guyana so I'm excited to have something new for him something from home. His mom makes the peppersauce but I think I want to follow your recipe and see how he likes that one

    Thanks, Chris De La Rosa...I grow my own peppers and it's harvest time. I used mostly malaguetas peppers red and green, in the Caribbean, they're called birds eye peppers.
    The malaguetas give it a rich deep almost smoked flavor with an after-thought type of heat.
    **Save the seasoning herbs, put them in food processor to make a smooth paste to marinate various meats and fowl for the grill.

    You should do some of your recipes in the crockpot. I live alone and sometimes dont have time to cook. I do have a crockpot. I love the island foods

    I enjoyed your videos so many months ago, but unfortunately, I didn't subscribe, and I lost your channel, so happy to find you again! I'm not going near that Chocolate 7 Pot, I have some Carolina Reaper seeds that have germinated recently. I also have, Pepper XXX, that are recently germinated seeds and growing very slowly. BTW, The scent you described, is otherwise known as Pepperspray! Listen to him, WEAR THE GLOVES! I never knew my hands and fingers would go numb. THEY WILL! FOR Hours! That Peppasauce looks absolutely AWESOME! New SUB, definitely not losing your channel again!

    Every time you don't peal your ginger, I feel some affirmation. I scrub it really good with a stiff brush but I am never peeling again!

    Great pepper oil. I usually make sauce but this is easier.
    Question I usually keep it in the fridge. Can I leave it on the counter?
    One mistake I made a few years back is I filled my bottle with more pepper than oil.

    Chris...I did a similar recipe but instead of spiced oil, I used Mount Gay Eclipse...turned out very nice to add to stews, etc...

      Hi, can you explain what you did with the rum please, did you infuse the rum with the sweet spices before adding to the pepper?

      Hi Rae-Ann...all I did was slice the Scotch Bonnet peppers (including seeds) into small pieces and put them un a wide mouth sealer-type jar. I packed the jar with as many as I could get in...pushing them down with a potato masher...then poured Mount Gay Eclipse into the jar until it was full. Seal the lid and leave...
      If I made something that I wanted to heat up a little...I just spooned off the liquid and added as much as I needed.
      You can always top it up once the liquid is down a bit and also use the peppers themselves too. Lasts forever...

    I usually put a coffee filter on the chute of the chopper and LIGHT SOME CANDLES!!! It burns up some of the escaping oils from the pepper. The heat from candles will draw the oils floating around.

    The white pepper you showed which I think you called pimento.... Do you have seeds of? I looked online and the pimento peppers I saw were all red and more circle in shape

    Why didn't you let the oil cool before adding it to the peppers? Is the goal to cook the peppers using the residual heat from the oil?

    Great video I would like to know after all The oil in the jars are used up can I just warm up some more plan vegetable oil and pour it in the jars or do I have to throw away the peppers that’s in the jars and start over again thanks

      need a neutral tasting oil

      Coconut oil will get hard when it cools so you will have a paste instead of oil. I say it is your choice. If you choose coconut oil you will have to stir it occasionally as it cools to keep the pepper from sinking and the coconut oil floating on top.

      I use mine on foods that are cooking, sandwiches, soups, just where ever you need pepper!

      Go to Etsy.com and search for each pepper by name e.g., "trinidad pimento peppers fresh" or "seeds". You can get all the peppers he uses in his recipes. You can also buy shadow beni/culantro/ recao/ngo gai (vietnamese name); fresh or seeds.

    Mustard oil may pose a serious risk because it contains high levels of erucic acid.
    In 2016, the FDA issued a warning that mustard oil is not safe to use in cooking because of its high erucic acid content. This means that the FDA do not permit its use as a cooking oil in the United States.
    Just goggled.🤔

    As gorgeous as it is my mouth will be in flames. I can handle some heat but not that lol. In all honesty I love your videos keep it coming. I envy you my dad and older sister they can handle it but.....not poor little ole me mild and medium please 😭.
