    25-35 hot peppers
    20-30 bird pepper
    1 tablespoon salt
    2-3 cups white vinegar (divided)
    1/2 large bitter melon
    12-18 cloves garlic
    1 large carrot (or 10 tiny ones)
    3 limes

    Chris I truly enjoy your recipes & the little nuggets/tips you give # reminds me when Mummy used to do this pickled veggie# I've never tried doing this.. Mummy used to do some jars w/ bell peppers & carrots added..then as you say , put them in the sun. Thanks 🇹🇹🇺🇸

    I have made this Recipe three weeks ago. Very tasty and very very HOT😃😃😃! We're spicy eaters! But man! This chilli is very HOT today I eat boiled sweetpotato with this chilli soas was Exalant. Thanks🌻🌻👍🎀🎉🎈

    This lime pepper recipe is much closer to what I grew up with. It looks fantastic!...and it goes exceptionally well with any fish dish, saltfish buljol or smoked herring!

    Those little 🌶️🌶️🌶️🌶️🌶️ are SOOOO tasty! I eat them straight with tortilla chips and sour cream to tone down the heat enough to eat a couple handfuls they're SO good

    On my 2nd batch....1st batch was last summer with the reapers and ghost's from the garden. That lasted from September 2022 through January 2023, added a little salt and a little lime juice. Forgot to mention that not everybody will appreciated this because of the obvious heat, so I ate most of the batch. This is a must have to keep in your fridge, after the beers flow you'll get some takers and it's usually funnier than shit.

      If your garlic goes green/blue your ferment is going well. Looks worrisome, but completely safe,

    Chris boy that is a boss recipe! Best I've seen for lime pepper 'sauce'. Big up to all the trinis and guyanese in Canada.

    Omg, you're the bomb!!! Bittermelon is soooo good when you pickled it with peppers. Its a required taste but it's soooo healthy /super food

    Love your recipes; long time subscriber. You're so fortunate to get good garlic, here in Costa Rica they import the garlic from China!! Can you believe it? It's disgusting garlic 😢.

      Yes he and that young lady from Guyana is the best when it comes to Caribbean cooking on youtube - straight to the point. Some of them love their own voices too much, which is a turn off for me.

    Eh Chris you need ripe juicy limes that smell from a distance from guyana or Trinidad. Those limes are grafted limes from Florida. You know bird peppers grew wild in the bushes in guyana.

    Eh Chris always enjoy your show from brampton of guyanese background. In Guyana the lime is so juicy .we put achar and sour stuff in the sun.i like how you use the long carilla in it.i can buy India chili pepper instead of bird pepper.

      as a hot sauce or how you would use pickle peppers.. burgers, hot dogs. great on soups, stews etc too

    I am a very good cook myself for many many years. I am wondering why you put brown sugar in most of your recipes. These days tons of people are diabetics and don't want more sweet, I would cook 80% of your food without brown sugar, is this OK. Your friend, Ranie Sookram.
