25-35 hot peppers
20-30 bird pepper
1 tablespoon salt
2-3 cups white vinegar (divided)
1/2 large bitter melon
12-18 cloves garlic
1 large carrot (or 10 tiny ones)
3 limes
11 lemons (divided)

This lime pepper recipe is much closer to what I grew up with. It looks fantastic!...and it goes exceptionally well with any fish dish, saltfish buljol or smoked herring!
Those little 🌶️🌶️🌶️🌶️🌶️ are SOOOO tasty! I eat them straight with tortilla chips and sour cream to tone down the heat enough to eat a couple handfuls they're SO good

On my 2nd batch....1st batch was last summer with the reapers and ghost's from the garden. That lasted from September 2022 through January 2023, added a little salt and a little lime juice. Forgot to mention that not everybody will appreciated this because of the obvious heat, so I ate most of the batch. This is a must have to keep in your fridge, after the beers flow you'll get some takers and it's usually funnier than shit.

If your garlic goes green/blue your ferment is going well. Looks worrisome, but completely safe,

Omg, you're the bomb!!! Bittermelon is soooo good when you pickled it with peppers. Its a required taste but it's soooo healthy /super food

Yes he and that young lady from Guyana is the best when it comes to Caribbean cooking on youtube - straight to the point. Some of them love their own voices too much, which is a turn off for me.
Eh Chris you need ripe juicy limes that smell from a distance from guyana or Trinidad. Those limes are grafted limes from Florida. You know bird peppers grew wild in the bushes in guyana.

Hi Chris, looks yummy. You should invest in a canning funnel for putting stuff in wide mouth bottles, it saves time & less mess
