Murtani (Upar Gaar/Pepper Choka) | Taste of Trini

  • Upar Gaar is most commonly referred to as Murtani or Pepper Choka. It is a blend of fire-roasted vegetables This can be eaten as a dish or a condiment. As a child growing up, my grandfather made this regularly. Murtani is meant to be extremely FIERY, but you can adjust the pepper to your preference. I usually buy this in Debe at the food sheds, but it's always better to make it at home.

    INGREDIENTS:
    2 Tomatoes
    2 small Baigan/Eggplant/Melongene/Aubergines
    6-8 small Ochroes/Okra
    5 Shadon Beni/Bandhania/Recao/Culantro leaves
    Scotch Bonnet Peppers (your preference)
    2 heads of Garlic (20 cloves)
    1 teaspoon of Lemon Juice
    2 teaspoons of cooking Oil.
    Salt (your preference)
    Remember you can do this in the oven (broiler setting) or outside on the grill!

    I was watching your video from California USA.
    My brother in law made it .I lived in Trinidad till age 24, and I never had Murtani,will make it,thank you for the video

    I appreciate you clarifying the degree of the pepper because people like myself who are intolerant to local pepper, can use an alternative.. Thanks.. The chilli and cayenne is perfect for me..

    My mom has her small plot in her back yard were she grows egg plants and make Choka with fried bread, but she has to hold the peppers because I wont eat it with peppers.

      Taste of Trini I’ll have my mom make it that way I can have a lil itty bitty taste.. I rarely do veggies, mostly high fat and protein and sometimes I’ll throw in the occasional broccoli or Brussels sprouts.. but dang that sure does look good 😋😋

    Wow this dish really lights me up, all the ingredients float my boat! I like those slim Asian brinjals/baigans too, and cooked this way they have such a delicious smoky taste. XXX hot pepper for me too!
