Nothing says "summer" quite like the taste of strawberries. This simple perfectly sweet syrup is easy to make and versatile to use. Drizzle over pancakes or waffles, use it to make cocktails or mocktails, add to club soda for a refreshing summertime beverage or add to shaved ice for a yummy granita.
2 pints strawberries, hulled and roughly chopped
3 cups water
2 cups sugar
Ladle hot syrup into hot half pint jelly jars, leaving 1/2" headspace. Wipe jar rim. Center lid and apply band to fingertip tight.
Process 10 minutes in boiling water or steam canner, adjusting for altitude as follows:
1,001-3,000 ft ~ increase processing time by 5 minutes
3,001-6,000 ft ~ increase processing time by 10 minutes
6,001-8,000 ft ~ increase processing time by 15 minutes
8,001-10,000 ft ~ increase processing time by 20 minutes
Allow jars to rest undisturbed for 12-24 hours. Remove bands, check seals, wash and label jars. Store in a cool dark dry place.

Carol, I absolutely love all of your strawberry recipes!!! I wasn't aware of this book. Thanks for letting us know that a master canner friend recommends this book. Hugs!
I made this syrup with some strawberries I picked. Wish I could have made more but strawberries were so expensive this year. 🙁. It’s so pretty in the jars and I’m anxious to put some in lemonade and a margarita!
Strawberry milk shake for sure!!!
Yummy
Can this be canned with low sugar or no sugar (artificial sweetener like stevia or monk fruit)?
Splenda can be used instead extension.oregonstate.edu/ask-extension/featured/how-can-i-avoid-creating-added-sugar-fruit-preserves-jams-jellies
Thank you for a great video 🙏🏻❤️Can the strawberrie left pulp be dehydrated ?
You could but I don’t think it would have much flavor left
Hi Carol, I am certainly going to be trying this one, absolutely!! Quick question though.... should I put s splash of vinegar in my steam canner like I do with my pressure canner??
No bc the water doesn’t cover your jars so they won’t collect any mineral residue 😊
It's certainly is strawberry season here.
I use only organic strawberries, since strawberries are # one on the dirty dozen list for pesticides. Lot's of strawberries available here in San Diego. I have a farm stand a quarter mile down the street from my home with a field of fresh picked organic strawberries. There is a strawberry festival going on today Sunday too.
Is it ok to use only 2 half pint jars when canning in my steam canner or do I need to add extra filled with water?
Thank you for this lovely recipe.
There are no minimums for steam or water bath canning 😊
Many popular brands of strawberries even organic now are treated with Apeel which says they are a “plant based” products (currently this term has no legal set standards in place) yet they are mostly very heavily petroleum and the foods are not labeled. Driscolls does not and says they will not use this on any of their berries. Just FYI. So farm stands or home grown are a great option.😉
What did you do with the strawberries after, throw them out?
Yes, all of their flavor was extracted
Can you use Splenda to make it sugar free?
Yes
Hey nice recipe…. Did you get divorce? You said you’re by yourself now
