I love your channel and I am learning so much. I have been making jelly in my new steam canner and since I live at sea level, I process for 10 min and leave the jars 5 min. With the heat off before taking them out of the canner. I just saw where RoseRed Homestead says if you have to steam bath for 10 min. Or less you have to sterilize your jars. Now I wonder if my jams are safe. I’m totally confused. I followed Oregon State Extension Dept. 2021 revised steam canning instructions.

Love the idea of low sugar recipes. A few questions: 1. Can you not use any sugar with the no sugar/low sugar pectin as a diabetic? 2. Where are you finding those lovely jars?

What I’m wondering if you know the answer to my question ,is it possible to can and safe with monk fruit or stevia or erythritol. I’ve been trying to can jams and sweet zucchini relish. Thank you ...I had never heard of the steam canner with a gage so I read the newest review on Amazon and the woman stated that she believed the gage is not accurate ....Not sure if I would totally trust it based off her reply..I wouldn’t want to make my family sick.
Brenda Neer I wouldn’t trust most of what is on Amazon or anyone else for that matter unless you know their credentials and experience . I always do my research for myself. You can easily confirm it is working properly by noting a steady stream of steam coming from the vent holes and looking into the glass lid to confirm the water at the bottom is boiling. I’ve used my steam canner a lot and I have no reservations about doing so. I have used the same canner for 4 years now and no problems. It’s so much easier than water bath canning and using all that water. As long as you use the gauge as it is supposed to be used it is perfectly fine.
@@sandysmith1286 ~Thanks..I was actually kind of making a joke..obviously if it’s boiling you can see it without having the gage..I have the Ball electric water bath canner and a steam canner both brand new still in their boxes..I know shouldn’t have bought them if they aren’t going to be used..I just use the big old blue speckled plain Jane water bath pot that’s been around forever..
At beginning of each year U should put 4 jars of water in this & time how long it takes to get in green go zone so u know how long it takes the steamer to get to correct steamtemp
Carol, where did you find the amounts for fruit to pectin? I bought the low sugar like yours, but, I couldn't find any chart! So glad I had your recipe or I wouldn't have been able to make it yesterday..so good. I would like to make blueberry, need to fine ratios😳 BTW..I used my steam canner I just got from Amazon, (they only carry the Harvest brand), I had to wait to make jam until it came, so I froze 8qts of strawberries and made my 1st batch yesterday, used the fluted jars❤️
I made this jam using this exact recipe. It turned out perfect except I would have liked it a little sweeter after using only the 2 cups of sugar per the recipe. The only change I made was I used frozen strawberries that I had in my freezer. Being a new canner and after seeing other videos of people using lemon juice I am a bit worried that maybe I will poison my family since I used the frozen instead of fresh. I did notice however that the others who used lemon juice did not use pectin but used grated apple. I just need reassurance that my jam is alright since I used frozen. I'm kind of a worry wart. I followed your measurements and instructions to a tee except for that. It looks fine and smells good and taste very good except I would have preferred a little sweeter. My granddaughters loved making this with me. Their first time.
Wilene Moss I used the information that came with the pectin. It does not call for using lemon juice for strawberry jam. And it makes no difference if fresh or frozen. You should not worry about the safety of your jam if you used the Ball Low or No Sugar Pectin 😊. And the label says jams or jellies made with this pectin are good for up to one year 💕
im confused on how your canning is different than water bath canning? the pot you currently have it is isn't under pressure so isn't it just water bathing? im trying to learn canning and water bathing currently thanks!
I'm a tad worried because your jars were literally beginning to seal as you took them out. My water bath jars I did didn't seal for close to 40 minutes. Should I be worried why they took so long?
There seems to be some controversy about screwing on the ring while doing a waterbath. One video I watched the demonstrator said not to use the rings until the waterbath is complete and the jars have cooled. As you noted, you are steam bathing and is there a difference? Any thoughts?
Margaret Cooper hi! There is no difference in procedure for water bath and steam canning. The rings are there to hold the lid in place until it seals. I don’t know how the lid would stay on during the canning process if you didn’t have the ring in place. And the rings should be removed after your jars have cooled and sat for 12-24 hours. I can’t speak for others. There’s a lot of wrong information out there. I follow all the guidelines set forth by the USDA. You can confirm anything I post on the National Center for Home Food Preservation website nchfp.uga.edu/ 😊

My steam canner uses steam the same temperature as boiling water. Steam canning uses less water than water bath but the process is the same
if you can't get strawberry extract could a person use vanilla extract
