We eat a rice grown in Louisiana, called Parish Rice, that is more than 50% higher in protein, low glycemic index, and non-GMO.

That sounds like a great choice! It's impressive that Parish Rice is not only high in protein but also has a low glycemic index and is non-GMO. A healthy and nutritious option!

I learned so much about the importance of fiber and whole grains! I always thought white rice was fine, but now I see it’s not the best choice. Time to switch to brown rice and oats!

I was wondering about einkorn. To me, it should be on the list of good grains

You're absolutely right! Einkorn is an ancient grain packed with nutrients and easier to digest compared to modern wheat. It definitely deserves a spot on the list of good grains!

Yes it does but it is usually not a problem especially is you vary your meals and eat other grains and starches.

I don't know by how much I reduce it but I presoak it and throw the first water after 5 min of boiling.
Arsenic is soluble in water so it should come out easy

You forgot Glyfasad in processing oats as a dry agent, formally called round-up. You better do some research.
