Been using an Instant Pot for a couple years now in Vanlife, but only recently discovered the joys of the Steam button! With a “pot-in-pot” it’s a great way to re-heat anything (except bread-type stuff), you can eat right out of the pot, and don’t need a microwave! (Yeah, it takes a few minutes longer - but I have an extra few minutes)
Kait uses that all the time to cook sweet potatoes.
Chili sounds like a great camping staple. Pasta and rice dishes also on point.

As a Texan, I approve of the beans, that’s how we make it. I also sub your pork for a pound of impossible ground, which works out nicely!!

When you licked your finger and tasted the habanero, I thought, "We're going to see sweat on his scalp! You did not disappoint! I love this video, totally different from what you normally see in a cooking video.
The wife has a sensitivity to salt and doesn't tolerate that much heat (she is getting better) so she makes mild chili and then lets me spice to taste. I've got a selection of hot sauces and, of course, crushed red pepper is always at hand.
For those who are salt-sensitive, Trader Joes makes a fairly good hot sauce without much sodium in it.
There's a book that I had for decades, called "Impromptu Cooking." Not really recipes, but suggestions of what to put in when you're making something; this video reminded me of that. I wish I could have joined you for a bowl of chili! (by the way, we always keep sour cream on hand to cool the really hot spice when needed, and the squeeze tubes make it easier to take along).

Here for this as I love everything spicy, including chili! I have an instant pot but usually still make mine in the crock pot.. my go to is mixing half chorizo and half ground bison, then well drained black beans, Rotel, and other chili stuff, hot sauce, seasoning, etc. It has never failed me!

Instant Pot is the best for traveling
Put the fritos in the bottom of the bowl then chili and cheese. That’s a frito pie! You can spoon chili into a snack size frito bag and save on dishes.

Just got around to watching this video ! Awesome looking chili there. We also travel with an IP but I’ve added a Zojirushi bread maker, the smallest model makes 1lb loaves- perfect for two people. (makes doughs, cakes and jams too) With the inverter on, I can bake a bread while we travel. Bread machine gets secured in the sink for safety while traveling and the aroma in the van is simply divine. You should try to get your hands on one. I’d love to see what great recipes Kait could come up with. Love your videos !

Thanks for the recipe and the reminder about the Instant Pot. I only took an electric grill and toaster oven with us on our most recent trip. Definitely taking our Instant Pot along next time.

We make cinnamon rolls, hot artichoke dip, and stuffed peppers. All made in the little instant pot and Omnia oven! We eat just as good as when we’re at home! Love you videos! Thank you for all your hard work!

Thanks for the content. You talk about compact nature of cans and tiny can opener. While you are at home, you can put leftover chili and leftover ingredients in your home fridge.
Can you share examples of what you’d use for storing the post meal leftovers you have from this video?

Typically we wouldn’t make that much for two of us - maybe half the amount or less so that we could eat it in one meal or throughout the day. Otherwise we have the standard containers for left overs and just pop them in the fridge.
@@Weretherussos You like glass or plastic for the van? At home, like glass, because don’t have to worry about BPA. And I can microwave it.
Haven’t decided what I’m going to do on my STO. Have been eating a lot of pre-cut fruit in plastic containers.

I have a 22 foot travel trailer, the kitchen has the usual 3 burner gas stove with oven. I pretty much cook anything that we do at home. I don't have 110 power unless we are at an RV park and in the 17 years that we have had the trailer, we have only done an RV park a handful of times.
I have a Breville version of the instant pot at home, use it all the time.
We are talking about down sizing into a B and a small instant pot will be on the list if we do it.
As far as your chili recipe, the comment about "can't have too much garlic", beg to differ, I am allergic to garlic soooooo.... Yeah, it is fun. Not OMG call 911 allergic, it just makes me sick for a day. And the comment about you both eat it or both skip is so true. I can tell a person that had garlic in their food from 10 paces. Other then the garlic, just a little too much spice for me but looks good.
The small IP is perfect for a B. Sorry to hear about the garlic allergy. There are a few dishes I make that use an entire clove! Definitely don’t want to be around us after that

Ok that chili looks great but add some sour cream and a hunk of corn bread.
Our best meals was a fish boil, pizza just to name a few.
I’ll say I like the corn chips better than the corn bread 😉

Joes has been getting spicy a lot recently! 😂 Been meaning to get a 3 qt so I did along with the can opener. Still haven’t used my Omni but hubby loves chili and corn bread and it will be fall soon. Love a good campfire and chili.

Was sorry to hear earlier this year that Instant Pot went bankrupt, hopefully someone will pick up where they left off. That's just how I make my chili except I use beef, have to try the pork. Great video.
It sounds like a restructuring and not that they’re going out of business. So the Instant Pots shouldn’t disappear from shelves.

We love and swear by our Instant Pot Pro Crisp (8qt).
I see you use a can koozie for your oil, I have one on our soy sauce in the fridge (we have 50L chest fridge so everything tends to run together). I believe that style can opener is called P38, for the record.
Yep that’s what it’s called! We have the 8qt as well and use the sous vide function quite a bit

joe - at the beginning, drain the liquid from the meat/beans/tomatoes, etc, and then add a can of your fav beer to the pot. and when you're done spooning it into a bowl, add a squeeze of lime. trust me

I have found the an induction stove and the Instant Pot suck up a lot of power from the batteries. How do you deal with that?
Big battery bank and/or good solar. We have the equivalent of 1,000 amp hours of battery and can run our system using the instant pot and the electric kettle (multiple times a day) for about 4-5 days before we need to recharge.
In our previous camper we had less than a third of the battery bank, but we had a lot more solar and could stay out almost indefinitely if we had plenty of sun

Question: my understanding is that Trader Joe's has discontinued the chili seasoning blend. Have you come up with a suitable substitute?
They have another one that’s spicy but you can use any chili seasoning.
so now that Joe is doing some cooking... does that mean that Kate is going to be doing some sort of motorized bike content in the future? lol I would be ironic if she gives us some electric bike content while Joe makes dinner lol

I am from Texas... beans in chili is a more you thing, if you like it, do it. doesnt make it any less chili... beans is more a consideration when you think of how you are serving it... frito pie, hot dogs, etc, no beans.... by itself with maybe cornbread or something similar, add the beans...... but whatever you do... IF YOU USE CANNED BEANS, STRAIN AND RINSE THEM!!!
