Coffee Cake in a Soft, Cinnamon Rippled Cookie

Ingredients
½ cup unsalted butter, softened (113g)
½ cup light brown sugar, firmly packed (100g)
¼ cup granulated sugar (50g)
1 large egg
¼ teaspoon vanilla extract
2 cups cake flour (225g)
1 Tablespoon cornstarch
1 teaspoons baking powder
¼ teaspoon baking soda
½ teaspoon salt
Streusel
6 Tablespoons unsalted butter (85g)
1 ¼ cups all-purpose flour (156g)
½ cup light brown sugar, firmly packed (100g)
⅓ cup granulated sugar (66g)
¾ teaspoon ground cinnamon
¼ teaspoon salt
Glaze (optional)
⅔ cup powdered sugar (85g)
1-2 Tablespoons whole milk, plus more as needed

Instructions
00:00 Introduction
00:21 Preheat oven to 350F (175C) and line a baking sheet with parchment paper. Set aside.
00:25 Combine butter and sugar in a large mixing bowl and use an electric mixer to beat together until light and fluffy.
01:06 Add egg and vanilla and stir until well-combined.
01:39 In a separate mixing bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
02:40 Gradually add dry ingredients to wet and stir until completely combined and dough is uniform.
03:42 Cover dough and place in the refrigerator while you prepare the streusel topping.
Streusel
03:51 Melt butter then set aside until cooled until no longer hot.
04:01 In a medium-sized mixing bowl, combine flour, sugars, cinnamon and salt and stir to combine.
04:44 Drizzle in butter and use a fork to toss/claw the mixture until you have a clumpy streusel.
Assembly
05:45 Scoop cookies into 2 Tablespoon-sized balls and roll until smooth. Place on cookie sheet, spacing cookies 2” apart, and make a small indent or nest in the center of the dough with your thumb or the back of a round tablespoon.
06:48 Take a handful (about 2 Tablespoons) of streusel and gently press into the nest you created. You’ll have a heaping mound of streusel, use a lot! You may have some streusel left over.
07:25 Bake in center rack of 350F (175C) oven for 12 minutes or until edges are just beginning to turn light golden brown. Allow to cool for at least ten minutes before decorating with glaze (if using).
07:45 To make the glaze: Whisk together powdered sugar with 1 Tablespoon of milk. Add additional milk as needed until you have a smooth glaze that ribbons off of your whisk. Drizzle over cookies.
Notes
Flour
Cake flour is recommended for softer, more tender cookies. You may substitute all-purpose flour, use 1 ¾ cup + 1 Tablespoon or 225 grams.
Storing
Store in an airtight container at room temperature for up to 5 days.

These didn't bake in 12 minutes for me. I had to turn my oven up to 370 to get them to brown lightly around the edges and i added about 10 minutes to cook time. My oven temperature is accurate. The recipe made 14 cookies 🙂

I had some challenges with the struesel. My struesel didn't brown like yours. I left it in the oven for 13 min since the cookie was still white. Then, the bottoms were too brown with parchment, middle rack, and 350. When I tilt the cookie slightly or take a bite, the struesel falls apart onto the plate. I made deep indentions and followed your video perfectly pausing along the way. I also leveled off all of the dry ingredients in the measuring cups. The problem started when I added the melted, room temp butter to the dry struesel mixture. It was more like a breadcrumbs mixture with just some chunks. I used the fork movements like you did. It seemed like there wasn't enough butter to cover all of the mixture to make clumps. I do love how you describe everything and show the steps. I will try it again in the next few weeks, maybe adding more than 6 tablespoons melted butter next time.
Those are wonderful, and I will try them some day. Your little baby is adorable, and I was so pleased to hear that you don't give him sugar. It's bade enough for adults, but the little ones don't need it while they are developing and growing. Thanks for sharing this great recipe!

I use to make 30 plus different kinds of cookies for Xmas to give away ..not so much anymore as daughter & 3 granddaughters are now all Celiac!!! Just a Gramie hint regarding "sugar" treats for your son.
Don't forbid!! Moderation ....other friends parents who were so very strict, as their kids got older, they would hide candy and treats from their mom in bedrooms!!! They would go crazy with sugar!!!!!!

I use an unbleached sugar such as Zulka brand. It has been not whitened with bone charcoal and looks like sand. I don't see why being organic makes white sugar vegan--can you explain?
Beet sugar and certified organic sugar are both white sugars, and neither are exposed to animal products during processing.

What do you do with the leftover streusel? I feel like every time I make it. I have so much left over even after loading the cookies/cake up with it.
You could reduce the streusel recipe. Someone else commented they had too much but I swear i never have any leftover 😅
I had a lot of struesel topping leftover too, and I piled them up high!
(To make cake flour) 1 cup all purpose flour, remove 2 tablespoon and add 2 tablespoon cornstarch. I normally sift 3 times, and it makes 1 cup of cake flour.

Hmmm that sounds like a UA-cam error. Did you make sure to check the little notification bell to make sure they are turned on. I know they update things sometimes and it can mess with your settings. Another way to guarantee you get notifications is to interact with the videos. Even if it’s just a thumbs up, UA-cam will recognize that you like it and push them to you more often. 😊
