How to Make Cinnamon Roll Cookies

Ingredients
COOKIES
1 cup unsalted butter softened (226g)
1/3 cup granulated sugar 70g
1/3 cup light brown sugar tightly packed (70g)
1 large egg yolk
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour 280g
2 teaspoons cornstarch
1/2 teaspoon salt
FILLING
1/3 cup light brown sugar firmly packed (70g)
2 1/2 teaspoons ground cinnamon
1/8 teaspoon salt
2 Tablespoons unsalted butter very soft or melted
GLAZE
1 cup powdered sugar 125g
4-6 teaspoons milk
1/4 teaspoon vanilla extract
Instructions
00:00 Introduction
COOKIES
00:25 Combine butter and sugar in a large bowl and use an electric mixer (or stand mixer) to beat until creamy and well-combined.
01:06 Stir in egg yolk and vanilla extract.
01:30 In a separate, medium-sized bowl whisk together your flour, cornstarch, and salt.
01:57 Gradually, with mixer on low-speed, stir dry ingredients into wet until everything is completely combined.
02:52 Form dough into a disk and wrap in plastic wrap. Chill in refrigerator for 15 minutes.
FILLING/ASSEMBLY
03:30 While dough is chilling, combine brown sugar, cinnamon, and salt in a small bowl and whisk until completely combined. Set aside.
04:12 Once dough has chilled, transfer to a clean, lightly floured surface and roll into 12x10 rectangle (dough should be just over ⅛” thick).
04:43 Spread melted butter evenly over the dough, leaving about ½” of space un-buttered around the perimeter.
05:08 Sprinkle brown sugar/cinnamon mixture over butter.
05:21 Starting with the longer edge, carefully and tightly roll dough into a log. Once you get to the end, pinch the dough to make a seam. Wrap in wax paper and transfer to freezer and freeze for 15 minutes.
06:29 While dough is chilling, preheat oven to 375F (190C) and line several cookie sheets with parchment paper.
07:04 Once dough has chilled and oven has preheated, remove from freezer and use a sharp knife to cut log into slices that are just shy of ¼” thick.
07:20 Carefully transfer slices to prepared cookie sheet, spacing 2” apart.
07:31 Bake on 375F (190C) for 10-12 minutes or until edges of cookies are just beginning to turn a light golden brown.
07:38 Allow cookies to cool completely on baking sheet.
07:46 If desired, drizzle cookies with glaze once cooled.
TO MAKE GLAZE
07:57 To make the glaze, whisk together powdered sugar, milk, and vanilla extract. Start with just 4 teaspoons of milk and add just a small splash more as needed until proper consistency is reached -- if you lift your whisk out of the glaze it should leave a thin ribbon that when it falls back into the bowl should hold its shape for a few seconds before dissolving back into the rest of the icing.
09:00 Use a spoon or a small ziploc bag with the corner snipped off to drizzle glaze over cookies.
09:07 Allow glaze to harden (15-30 minutes) and then serve and enjoy!

I made these cookies yesterday and I have made other recipes of yours. As a baker myself I love trying new recipes and as you go through the recipe I can tell if it will taste good or not. Hands down, 🙇🏻♀️these are the most delicious cookies I have ever baked or eaten/inhaled 🤣. They are clearly cookie cinnamon buns, the icing takes them to the next level. Love this so much! I sometimes do something similar with pie crust dough instead of sugar cookie dough, but it rarely bakes all the way through.

@SugarSpunRun I tried this recipe the other day and it cracked/ crumbled during the rolling put and rolling up. I'm a professional baker so I'm not sure what I did wrong? Any suggestions, the cookies look amazing. I'm hoping next rime I'll have success

I love this recipe, mine are currently in the freezer and I am so excited to smell them cooking soon. Thank you thank you for the grams in the recipe - I use so many less utensils to measure out ingredients and in Australia we don’t have “sticks” of butter to buy. We buy 250/500g (typically) of butter 🙋🏽♀️

Question; Evertime I make glaze with powdered sugar it has this kinda grainy texture. Does that mean I'm not mixing it well enough? Or maybe it's too thin?
Hi Cynthia! Powdered sugar shouldn’t be grainy. Do you mean lumps? If you are getting lumps, you can always sift the powdered sugar before adding. 😊

Hi, if i choose not to make the whole batch, can i cut off what i want to make and leave the rest in the cling film wrap in the freezer and make them another time? If so are the baking instructions the same still?
That should work just fine. They may need an extra minute or two to bake if you bake them from frozen. ☺️
Do you recommend packing these to send across the country? Or are they crumbly?
They aren't crumbly. They are a pretty sturdy cookie so I think they should hold up for you. It may help to cut them just a littttlllee bit thicker to make them even more sturdy. :)

Instead of doing butter first then cinnamon mixture.. u can just combine the butter sugar and cinnamon.. then spread it. Easy peezy
I think i did something wrong cause i tried this and it made a paste that is nearly impossible to spread

I made these, they are yummy. Mine do not roll up well at all, is the dough too thick or cold. Not sure what I’m doing wrong

Can I use one whole egg instead of just the yolk?
The dough will be too wet and the cookies will end up rising so I really don't recommend it.

Whew... Tough to roll... I might try next time to roll on to plastic wrap. It might make it easier, but that is in theory. Years ago My mother and I and my best friend made over 60 pies for an event. Rolling the dough onto plastic wrap allowed for transfer to pan, easier, and quicker. Course after making 60 pies, you get to be kind of an expert... Of which I can make, Apple, or huckleberry pie from memory. Everything from scratch. So. It may help to roll a nicer roll... Mine will be interesting to say the least... But I like the crumbly...
I also, got the rolls onto wax paper... Think I will try taking a sharp knife and cut with paper on, and remove after it get it to cookie sheet.

Oh no! I'm so sorry to hear this! I wonder if it just needed to be mixed a little bit longer to combine? Or if maybe there was a touch too much flour in the dough? It's always disappointing when something doesn't turn out. :(
Weighing the flour rather than using measuring cups seems to have solved the similar issues I had with cake and cookie doughs not having the right consistency.
This is better done on a silicon mat so that rolling the dough would be a lot easier

The dough is a stiffer dough. It shouldn't be crumbly. I wonder if there was too much flour in the cookies. I hope they turned out for you. :)
Why do recipes say unsalted butter? Then add salt...?
That’s a good question. The purpose of using unsalted butter and then adding salt is to give you better control of the amount of salt in the recipe. 😊
