I've never been much of a cook always had my parents cook authentic Asian food for me. I live on beach iN Oregon they have no Asian ingredients. I haven't had this dish for a year now. I'm going to give it a try tomorrow hopefully it comes out well😁

Khao Poon can be made with chicken, fish, or pork. I've never had it with fish, but its common for it to be mostly broth and noodle no matter the meat you use. Also, the meat sinks to the bottom, so you have to scoop down to get a lot of meat.
A super easy way to cook the noodles. Bring water to a boil, throw in your noodles, bring it back to a boil and stir so they do not stick to each other. I turn off the heat and cover it with a lid. It will slowly cook itself sitting in the hot water while I am doing other things. It takes about 15-20 mins depending on how you like your noodles.
Thank you for the question. The lime leaf makes a big difference in the flavor. But, the easiest substitute is lime zest. It wont be exact but close enough.
