  • Dr. Westman Reviews: Pork Rinds vs Veggie Chips
When done properly, keto diets typically control appetite and reduce hunger so well that people tend to eat less without even trying. They’re also able to go much longer between meals without feeling a need to snack. But since we’re only human and many of us enjoy a crunchy snack now and then - or sometimes something crunchy as part of a meal - which is better if you’re following a low-carb or keto diet - pork rinds or veggie chips?
Check out Dr. Westman’s latest video to hear his opinion on pork rinds (a.k.a. chicharrones) versus veggie chips or veggie straws, which are typically marketed as “healthy.”

Goodness, I needed this info. I eat a lot of the 10 1 oz.pak box of skins. One has to watch the flavored one as they have Maltodextrin and some carbs. Freeze cheese sticks, soak in egg batter, dip in crushed meat skins and air fry for a minute or two. So good.

Your math is off. If 38 straws = 15 grams then each straw is .39 grams. So one could eat about 12 of them for about 5 carbs.

I just recently bought and ate pork rinds for the first time in my life. I used to love veggie chips and Pringles. I don't eat those anymore not only because of the carbs but the seed and hydroginated like are a big issue for me. I do keto with a 25 g net limit currently. With me I don't subtract sugar alcohol from the total carbs as long as it has 2 g or more carbs because those I've found affect my blood sugar so I have to count any of those above less than 1 g carb. I after starting keto went for whispers, home made roasted pumpkin seeds, and nuts as my go to savory carb junk food substitute. I'd always had a "eww, animal skin as food, gross" aversion to pork rinds. One of the few foods I'd be picky over. Earlier this year I scrounged up money for a air fryer I got cheap and with a $10 off coupon at heb. Turned a $40 air fryer into a $30 air fryer. I've used it to make my own veggie and apple chips. The veggie chips I tend to use thin sliced turnip or rutabega. Today I opted with some gold potato's trying to make chips for my son that are a healthier option. He didnt like them so I may have some in small amounts as a treat. I tolerate potato and sweet potato well if I limit. I tend not to do more than 1-3 oz of those though. So, I'm thinking I may do chips I made myself without added fat as part of a meal.
Its best to make your own veggie chips in a oven, dehydrator, or air fryer/toaster oven rather than buy the store crap full of garbage. The store stuff I still think tastes good, but its not worth the health issues including ibs symptoms I deal with after for days or blood sugar being spiked for 3-4 days. Not worth harming my health again over

if one serving size of veggie straws is one ounce, or 38 straws, then 1/3 serving would be 13 straws, not 2. another way to calculate it would be to divide 15 by 38 to figure the grams of carbohydrates per individual straw, in this case, less than 1/2 g per straw

Cashews are very high carb. Peanuts are also pretty high. If you’re on a low carb diet (especially 20g or less as Dr Westman recommends) you probably have to cut those from your diet. Just because it’s a nut doesn’t mean it can’t be high in carbs. It’s important to read all the labels and count your carbs.

I have actually eaten broken up pork rinds as cereal. Just plain salted pork rinds, broken up in a bowl, pour some unsweetened almond milk on them, and sprinkle a no-cal sweetener such as stevia, erythritol, etc on top. Does not taste salty at all. Tastes better to me than any of the commercial "keto" cereals I have tried.

It's long overdue for US nutrition panels to have a third column with a standard quantity (most use 100g) like the rest of the world. Manufacturers don't want you to be able to compare products.. it also gets around them using artificially tiny serving sizes to round numbers down to zero.

I question the choice of eating pork rinds, tho I've incorporated them into my diet primarly to replace breadcrumbs since going keto two years ago. Most traditional health sites say they're full of saturated fat and will lead to problems with cholesterol. Most keto&carnivore folks have issues with cholesterol. Anyway, I'm here to tell you that I'm keto nearly two years and have not lost significant weight. Blood sugar has improved & that's valuable in & of itself. Want to tell you that my appetite hasn't diminished either. Okay..so I hope I've validated your experience if it has been similar. I wish others would come forward & speak & say how they've negotiated these problems. However, such comments get blocked if they don't tow the keto line (or lie). I cant be the only one here flapping in the wind... Anyone else with a similar experience?

If you eat rinds does it stop your body from eating its own fat? Just unclear on that aspect

I notice that when my diet is high fat, low carb a few things happen. One, I eat less because fat is satiating. Just keep in mind that the fat has more than double calories compared to carbs, but I eat less and less often. Two is that my body is in constant fat burning mode (I don't eat more than five grams of fat in an hour without doing physical exercise right before or after eating). This will burn your body fat then the fat in your diet will be reprocessed in your body into body fat then stored in your fat cells. This takes energy to do, a whole lot more than the low energy process to turn sugar into body fat. The fat in your diet is the "wrong" fat for your body and has to be changed and processed before it's stored as fat and burned with metabolism. That's why you want more omega six fat and less omega three.

A common problem with most every LCHF/Keto video I watch is the use of ounces and grams. We talk about macros in grams and then quote serving size and servings in ounces. Please, please please stick with grams. Thank you.

Have you tried a digital scale where you can change from grams, ozs, kgs, or lbs? I find it helps me.

I make my own bacon chips by putting bacon pieces in a non-stick saucepan and cooking them with the lid on
This is better than cooking them in a frying pan
Stir them every now and again and then when they are cooked drain on paper towels

Not at all. The main keto docs (besides Dr Westman, of course!) on YT who I think explain it best are Sten Eckberg, Jason Fung, Dr Cywes, Ken Berry and especially to help with some of the hurdles, Amy Berger. There are dozens more. William Davis, Annette Bosworth "Dr Boz", Georgia Ede, Tim Noakes.
