I have a tip for whenever you’re looking for a course grind for your pork rinds:
Using a rolling pin with spacers, adjust for the size you want, it will reduce the nugget without crushing them to a crumb. If your pin does not come with spacers, try using a wooden spoon on either side of the pin to achieve the spacing you desire.

I use pork rinds to make something close to chocolate chip cookies. I modified a pork rind pancake recipe I found from another youtube channel (keto connect, I think).
You grind the pork rinds in a food processor until about the consistency of brown sugar.
    Put this in a bowl.
Add 2 tbs non-flavored gelatin powder
    Add 1/4 cup erythritol
    Pinch of salt
    1/4 tsp baking powder
    Mix
    Then, add:
    One egg
    One melted tablespoon of butter
    Teaspoon of vanilla
    1/4 cup heavy whipping cream
    Mix until well combined
Add choco chips to desired amount
    Butter a preheated cookie sheet
Make little cookie balls and press onto the pan
Cook on 350 degrees f until edges turn brown.
They are more springy in texture than a normal cookie, but they give me a choco cookie fix.

One of my favorite pork rind recipe is something my mother used to make.
She would either make a green jalapeno sauce or a red chili sauce. Make it so it's bit watery, put it in a pot let it heat up. Dump handfuls of pork rinds and cook on a low simmer. The rinds will get soft.
You can eat alone or you can have a couple of eggs with it for breakfast.
    Delicious!

@@Seastorm-nh8cv For me, I try to avg 26 Grams of carbs/day. I Include peanut butter daily, up to about 1-2 tablespoons. I do limit pork rinds as an every now and then treat due to the type of oil, as I try to consume primarily olive, coconut, and then the peanut butter oil. But I understand your point. I can say that I do maintain ketosis regularly and do not feel any ‘effects’ of the PB. Then again, that’s just me. Maybe other nut butters can work as well or better.

I had kind of a strange experience - I'm a 77 year old male diabetic and I take insulin however when I used your pork rind recipes I found that I have to reduce my insulin - the first time I tried it I went way low and I actually had to take some glucose to bring my blood sugar up, even if you're not diabetic it can't be a bad thing to lower your blood sugar and insulin level. You have to get over the idea of sweet and pork rinds not being good because they are - after all we put sugar in all kinds of different things like sausage, candy hams and things like that.. it really has helped me with my treatment of diabetes. Even proteins affects blood sugar but pork rats are not a significant source of protein. Yes I know we need some protein but most of us probably eat too much. Keep up the good work just subscribed.

There are some great ideas here. I was surprised that you didn't mention using them as a cereal. Break them up into smaller chunks, pour into a bowl with almond milk and top with some Swerve. It's a quick and easy cereal replacement for those mornings when you're tired of eggs, pancakes or chaffles.

I found the best recipe for using pork rinds this morning. I had my almond milk out with chia seeds and a bag of pork rinds that had gotten kind of hard. I broke the rinds up hitting them in a plastic bag with my hammer, delicious, no carbs no sugar. I’m diabetic and I hate cooking first thing in the morning. This will be my best meal for ever. It kept me full until about 2:30 this afternoon. I’ve been cooking and baking with almond flour before keto became popular. I’ve never been on the keto diet. I mostly eat vegetables, plants seeds and nut, lately some meat. Combined with 16/8 IF have got my A1C from 11.1to 6.5. After being out of my apartment waiting for this one to be built the stress and not eating right and Covid had me in a very unhealthy state. I did use the breadcrumbs to coat my fish. Hope you all will be eating pork rind cereal, especially those who have to go to work in the morning.

WOW! THANKS! 💐So many new ideas for pork rinds from you (and some comments below too) has my head spinning, and I can hardly wait to try some of them! You’ve solved several “problems” I’ve had going totally keto for my hubby and me. I’m especially interested in trying the Rice Krispie treats, with one big alteration: I used to fix them often for a protein snack, by using crunchy peanut butter instead of the marshmallows, and then adding 1-2 cups of unsalted, roasted peanuts. Yum! I’m going to try some keto substitutes for the corn syrup that “glues” them together, and then they’ll almost be another keto fat bomb for us! Soooo glad I found your channel and have happily subscribed. Again, thanks very much.

Quickly sear each side, put in oven pan and put thin slices of cream cheese on it, roll it up and cook at 350 for 25 or so minutes. I use blue cheese to dip. Yummy!

My whole family thought I was crazy!😁 Now between moving South and Keto approved they are everywhere. 🙆‍♀️ Have you tried caramel or candied pork rinds? @@Paula-po9kx This is the recipe I use for fat head dough…2 cups shredded mozzarella, 2 tbls. Cream cheese, 1/2 cup lupin flour, 1 tbls. Psyllium husks, 1/2 tsp. Baking powder. Make like fat head dough…melt cream cheese and mozzarella in microwave…I don’t use microwaves so I melt it on the stove top in a ceramic non stick pan. Then stir in the dry ingredients. Put back in microwave or stove top to help blend as needed. For pizza I pre cook the crust for 5 to 10 minutes then top and bake. I also bake the crusts and freeze them. This dough can be used in any way that fat head can be used. I like to roll it thin, and make crackers…great with seasonings on top like everything bagel seasoning. I have also used to top pot pie and also to make empanadas.
In any fat head dough recipe just sub pork rinds for the almond flour if you don’t have or use lupin flour. The recipe above does not include an egg like fat head dough does…but I have made it with egg and a bit more lupin flour…not sure which recipe I like best. Definitely would use the egg with the pork rinds though…for more moisture. I don’t really cook with recipes…they are just a guide for me. Food is my art so I love to play and experiment. At least I used to! Keto/carnivore diet is much easier than my old vegetarian diet where I could easily spend the entire day in the kitchen making dinner!
      Hope this helps. 😀
