You know you got me off of my ass yesterday, when I saw you outside burning bush, I decided to do the same, it really helped me to pull myself together, there is nothing, absolutely nothing like getting out and touching grass.
That looked so good! I need to render up some bacon ends! Haven't done it in a while. I buy the packages of bacon ends and pieces, chop the whole thing up, throw it my crock-pot and render it out. Save the rendered fat for cooking and seasoning and the bacon cracklin's for adding to beans, cornbread, drop biscuits, etc. I always look for the fattiest packages of ends and pieces. 3 lbs of chopped bacon ends and pieces, 6.5 hours in the crockpot on high, renders down to 2 cups of bacon fat and about 3 cups by volume (15 oz by weight), of bacon cracklins. Doing it in the crockpot makes it so easy and worry free...no concerns about it burning, no need to constantly monitor it...just a good stir about once every hour to hour and a half. Once it has rendered a good deal of fat and juices, and the bits are beginning to brown up, I put a double thickness of paper towels across the top of the crock and put the lid over them to hold them in place. This absorbs the steam and keeps it from condensing and dripping back into the rendering fat...water in the rendered fat will cause it to go bad real quick. When properly rendered, the rendered fat and the cracklin's keep a long time in the refrigerator.
love me some cracklin cornbread and this video is a PERFECT example of using what you got!! I was glad to see this video this morning. YUM. I made homemade biscuit dough and added shredded colby-jack cheese and ground up some bacon I had fried and baked them off. Wasn't no cracklin cornbread but they were yummy! I love cracklins, but they are hard to find. So many stores call them cracklins with the skins attached. I like to lay them in the bottom of my skillet and pour my cornbread mixture over it and bake. Yum I never use eggs in my cornbread, can’t tell the difference. Your cornbread would have let loose if you’d baked just a little longer for more of a crust. I’ve used bacon grease in my cornbread but what you made had to be delicious. Had to be better than cracklins cornbread. I’ve had sausage cornbread that’s good but never bacon. But I will now. Can’t believe I never thought of that. Thanks. 😊 I enjoy your videos.
My mother always made cracklings corn bread. She didn’t put the corn and jalapeños . She made Mexican cornbread, it was so good. Didn’t put cracklings in it , just corn, cheese, and jalapeños. This looks good I’m going to try it!

This is all new to me as I am not a southern girl but my parents were. Mom never made cracklin as never heard of it until I watched this. I know I would not like it as don’t like fat sounds gross to me. Sorry just not my thing. Don’t apologize for the AC and the fan it is summer and people need to quiet complaining.

Cornmeal in Europe is called Palenta it is a little more coarse than our cornmeal and in England cornmeal is called Maize Flour
