I don't think my grandma ever added cheese to her potato cakes. (I think I'd love tome pepperjack in there!) Everything else was pretty much the same as your recipe. She scooped and dropped the potato mixture into the pan, then flattened it with her turner. We usually had them for breakfast with sausage gravy on top, and scrambled eggs on the side. So good!

There is a guaranteed way to stop onions from making you cry and it is incredibly simple, just breathe through your mouth from start to finish.. It works for any unpleasant smell too.
I will try that and see what happens, then the next best way is to throw onions in a food processor and chop them that way, LOL

My Granny made potato pancakes all the time. Fried em in bacon grease Mmmmmm Mmmmmmm ! She fried em crisp and thin ! Mmmmmm MMMmmmmmmmmmmmm !

My mom and my grandmother always made theirs with whole kernel corn in them. I make mine the same way. Then we would put butter on the top and pour syrup over them and oh my they are delicious that way.
They would also put green onions and salt and pepper, red pepper flakes, flour, an egg and milk if needed.

onions, that the sulfur of the match diffuses and prevents making you cry.

Yes, I do fry okra, but I do not use a lot of cooking oil to fry it
