I love anything super simple like this, that can be easily embellished and personalized! For more blood sugar stability, I would use a darker chocolate, add a teaspoon of cinnamon, a dash of pure stevia, and use green bananas. And maybe experiment with adding some coconut flour for a more cakey texture. And decorate with organic berries sprinkled with "fruit fresh" (ascorbic acid), which is very high in vitamin C so it can boost the absorption of the iron in the chocolate. 🍫💪

I stopped eating Hershey chocolate ever since I found out about a nuclear plant disaster highly possibly affecting milk in the area. According to my research, many of our food sources have been contaminated on purpose, including jabbing live stock. Going plant-based has many merits these days. I once had some whole-wheat carob cake that tasted amazing. So carob is an option to consider.

Aly, if net carbs and glycemic load are concerns, you could swap coconut and/or almond flour for the bananas, as long as you add a binder like an organic egg or egg substitute. You can also use 85% or 90% dark chocolate, which I prefer because it has almost no sugar. And/or use green bananas, which have resistant starch that does not spike blood sugar. (Though I don't know how that resistant starch might change when cooked.)

Yes, it does. It definitely holds its shape, but the consistency is something between fudge and very stiff mousse. So, I recommend removing the cake from the pan and cutting it while it's still semi-frozen (to get nice slices). That said, you can slice the cake even straight out of the refrigerator if you'd like.

A great question - you want to use tempered chocolate. So, if you're making the chocolate yourself, make sure you use cacao butter (as opposed to coconut oil) and that you temper it. Here's the recipe: nutritionrefined.com/how-to-make-chocolate/

No, in fact, it's better straight out of the refrigerator. I just recommend removing the cake from the springform pan when it's still frozen and cutting it when it's at least semi-frozen for clean slices.

How much would the 2 cups of chopped chocolate be in weight/grams, please?
HI Chris - you can find the metric measurements on my blog - just click in the green text that says "metric" under the ingredients in the recipe box and the ingredient amounts will automatically switch. 2 cups of chopped chocolate would be 340 g.
