Petra i made this and it was a hit with my husband. It was the first time both of us tried vegan cheesecake and my husband said it was the best cheesecake he ever had (he’s a fan of cheesecake). He said I should make it like this all the time and said I should make it for my family who are coming over for dinner in a few days to show them that healthy eating can also be delicious. Yesterday I made Blueberry$Lemon Cheesecake! It's just incredible!!!!! The crust is from buckwheat, almond, medjool dates, coconut flakes and a little bit of coconut oil! I made all the cream as you said in your recipe and when I divided it for 1/3 and 2-3 parts. In 1/3 part of cream I added more lemon juice and in the other 2/3 part I added blueberry! First I waited for the lemon part to be frozen well and then I filled up with blueberry cream! The result is great!!! So tasty!!!! As you said it's possible to make this recipe with different flavours!! Thank you, thank you, thank you so much, Petra!!!!

SharlzG the only problem with paleo is all the modifications agricultural has caused to our food. Almost every fruit has been modified to have a longer shelf life and specific flavour profiles. Your best bet is to purchase grass-fed beef from a local farm
I added in more if the rind of both lemons and limes, added some probiotic coconut yogurt and some probiotic fermented cashew cheese into the filling, AND USED dehydrated coconut flakes with water and a blender to make a more creamer whole food coconut milk...try it takes it to the next level, thank you for this great recipe !

I made this cheesecake twice, except that now I made it with dates instead of maple syrup. It was good with maple syrup, but I’m trying to make it without any sugar except from the fruits.
NutritionRefined the icing is still white-ish because I didn’t use too many dates. I just used six dates. I had the idea of using dates instead of maple syrup based on another raw cheesecake recipe. That other recipe asks for four dates and two cups of cashews and based on that I used six dates for the three cups of cashews. It actually worked out well (in my opinion) but that’s because I conditioned my tastebuds to not need desserts to be so sweet. Hope it helps.
tried it today ... this was my first ever attempt at making a cheese cake! it was fabulous!!!! couldn't find coconut cream in a can like in the video. The shop around me sell it in hard blocks to which you add water..... conveniently i managed to add 2 full lemon and 2 lime juices... yum yum oh, and i decorated it with lemon and lime rinds served with blueberries thanks for sharing the recipe I will certainly do it again
I made this today!!! It was incredible in taste and texture! I used agave honey instead of maple (only cause Maple is so expensive here in Mexico) and used two limes and two lemons. Wonderful. Next time I will try monk fruit thou, I rathe have less sugar

Made this recipe over the weekend and it was AWESOME!! I don’t have a high speed blender so I used my food processor and can see how a blender would make a smoother filling but nonetheless it was still delicious!!!

I made this recipe... it’s excellent! It’s everything her husband said and more. Very good. I made a blueberry jelly sauce for top for extra fruit but very very delicious!
I made this desert and it's amazing how well it turned out. I ate the first few pieces right out of the freezer. Then later on ate some closer to room temperature. I'm not a heavy guy, just couldn't stop eating it. The crust blends perfectly with the filling creating a rich lime flavor. I used parchment paper, but plan on getting a springboard pan for the other recipes on this site. Hopefully next time I make this creation I will share more of it with friends. : P

When you make this recipe, you need much more volume of ingredients for the filling. For the size of a CAKE, I used: 750gr. of cashews (weight unsoaked), 3 limes, one lemon and lime zest (which I actually think is still a subtle flavor) , the coconut cream and other stuff was right. I used a Vitamix blender (the best) and needed to add a bit of water and coconut water from the can because it became too thick to blend.

Recipe is great. I used lemons instead of limes and used alittle over 1/3 of cup sugar due to lack of ingredients in household. For the crust, i also added cinnamon and lowered dates amount. Be sure to use a blender for the filling, else it won't be as smooth. Also don't leave it out for more than an hour. Else it turns into a mousse cake type thing and will have an initial weird taste. Overall this cake recipe is really good!! Its just knowing at what temperature it tastes best without it icing up too much or melting up too much :) . This cake costed me about $10 to make, so it is affordable and worth making on special occasions if you dont buy a $20-$30 premade vegan cake.

Hi Petra, thanks for the recipe. I made the cheesecake, but I'm confused as to how long you supposed to let it thaw after taking out of the freezer. I let it sit out at room temp for 30 minutes but when I sliced it, it was still icy in texture.
Hello from Greece! I made the cheesecake yesterday and instead of maple syrup i used honey flower honey which is our own production. The taste was delicious but the color of cream was very different than yours. If you could tell me if honey is responsible for the color change, which is close to beige or if something else may have played a role even though I just followed the steps. However, the honey I used was very short in color with maple syrup. I wait for your answer , thank you for the recipe!!
Thanks for the great idea. i would use dates again for the filling and maybe do a double layered cheesecake. My significant other does not like a thick filling. It would be base (just like you did here), then date filling (same thickness as base= not so thick) and repeat the process again.
Looks good, I can't wait to try it out. I will probably end up getting a ready made pie crust... or try looking for a substitute for the dates. In my mind, dates are not vegan, as one date can have at least one wasp inside, and I'm not into bugs.

It is a good option if you are looking for a raw, gluten-free and no added sugar dessert. I made tis cake as a birthday gift and it was scored very high. Recipe is great. I used lemons instead of limes and used alittle over 1/3 of cup sugar due to lack of ingredients in household. For the crust, i also added cinnamon and lowered dates amount. Be sure to use a blender for the filling, else it won't be as smooth. Also don't leave it out for more than an hour. Else it turns into a mousse cake type thing and will have an initial weird taste. Overall this cake recipe is really good!! Its just knowing at what temperature it tastes best without it icing up too much or melting up too much :) . This cake costed me about $10 to make, so it is affordable and worth making on special occasions if you dont buy a $20-$30 premade vegan cake.

AdrienneAce the metric bit coverts cup measures by volume, to weight. So it’s not accurate especially given a cup isn’t filled up edge to edge by a cashew.

Hi Petra, thanks for the recipe. I made the cheesecake, but I'm confused as to how long you supposed to let it thaw after taking out of the freezer. I let it sit out at room temp for 30 minutes but when I sliced it, it was still icy in texture.

I made the cheesecake yesterday and instead of maple syrup i used honey flower honey which is our own production. The taste was delicious but the color of cream was very different than yours. If you could tell me if honey is responsible for the color change, which is close to beige or if something else may have played a role even though I just followed the steps. However, the honey I used was very short in color with maple syrup.

Thanks for the great idea. i would use dates again for the filling and maybe do a double layered cheesecake. My significant other does not like a thick filling. It would be base (just like you did here), then date filling (same thickness as base= not so thick) and repeat the process again.
Looks good, I can't wait to try it out. I will probably end up getting a ready made pie crust... or try looking for a substitute for the dates. In my mind, dates are not vegan, as one date can have at least one wasp inside, and I'm not into bugs.

Ingredients:
} for the cake base:
• Almonds
• Walnuts
• Dates
> blend it all up, press it together in a cake tin and take it in the fridge while you're making the cheesecake mixture
} for the ceamy top:
•Coconutmilk or -cream
• Coconutoil
• Marple Sirup/Yacon Sirup/ or 4-6 Dates
• Vanilla
• Limejuice
• For extra flavour: organic lime extract
by the way knowledge:
for extra wholsome nutrition add the whole lime/or lemon.
There are plenty of healthy, antioxidant flavonoids and fiber in the lime or lemon peel. The white part also contains a lot of healthy bitter substances that, depending on the amount in the cake, cannot be tasted at all.
Also, you could replace the coconutmilk with probiotic coconutyogurt or cashewyogurt, oatyogurt etc. It's easier for your gut, and by the way: probiotic is always the way for a healthy gut and body ;)

It is a good option if you are looking for a raw, gluten-free and no added sugar dessert. I made tis cake as a birthday gift and it was scored very high.
But for me who is omnivore this is not a cheesecake and it makes no sense to compare; it is a different dessert: tasty - easy to prepare - not a cheesecake )
