you have no idea how long i went back and forth on titling the video using "there are" "there's" or "there're". the first is too long and gets truncated, the second is grammatically incorrect but looks right, and the third is grammatically correct but looks SO WEIRD

I think it'd be becuase the fact that a waterfall is a nice set piece that we just feel the instinctive curiousity for. "it's at foot level, I can walk up to it, and it blocks my view, I lose nothing for trying to peer behind it, I may as well try".
Uneducated guess:
Leaving the videogame trope that "if there's a waterfall, there's something" apart, I think there are 3 key elements to it:
A. "There's a noisemaker that moves, better check that out" mentality
B. Most waterfalls have a space between rock and water where something could easily hide, even allowing the possibility of a cave to form. This also goes hand in hand with the trope that "secret caves ALWAYS have something."
C. Most of us are told that waterfalls are inherently dangerous in real life. Sharp rocks, fast water falling, even rocks can slip from the top and hit you in the head. This makes them mysterious and interesting to explore or look at them up close.
We love mysteries and gathering things, and if a game allows the player to get up close to a waterfall, you know damn well the player will try to find treasures behind it.
Love this style of video Connor. Swapping between gameplay and green screen footage is attention grabbing and interesting. This is a style of video I would love to see more often from you! It feels much more personal and that we're getting more of...YOU. Keep up the great work!

A significant part that I think your video missed is this: Waterfalls are nature's curtains. They're veils, and veils are known for concealment. Yeah they're predictable but that doesn't make them worse at their jobs than any other naturally-occuring bit of concealment.
This was great. Short, sweet, and informative.
If you wanted to add a waterfall to your game, you could always just block it off (naturally or otherwise) to prevent the player's urge to check it for secrets.
