What is the temp of the water?? Sometimes you say hot or warm but never the actual temp?
Mostly the required temp for any yeast dough should be between 115 to 120 Fahrenheit.
Can you make any breads without Vital Wheat Gluten?

You say the Turks dip these in molasses? Could you use maple syrup (keto) to coat these before applying the sesame seeds?
It's a grape molasses called pekmez, it's got an almost malty flavour, not very sweet. Maple might be a bit too sweet, but it would still work.
