I’ve just tasted my first slice of my first loaf ( ever!), and it was brilliant ! I stuck precisely to the recipe until it came to the mixing and kneading. After combining the ingredients into a warmed mixer bowl, I went straight to the dough hooks. I’m using an old Australian Sunbeam Mixmaster, with twin spiral counter-rotating hooks, on low speed, and after the dough was combined(no more than a couple of minutes) I let the dough proof as instructed. Then chucked it back into the mixer for no more than 2-3 minutes on a slow speed. It looked and felt right according to instructions elsewhere, but they all talked about 7 - odd minutes of kneading. I didn’t want to over- knead it, so I took a chance. My next hurdle was that my oven is Fan-Forced, so I was unsure of the temperature. I ended up somewhere between150-160 , it rose beautifully , but ended up a little dark. No burnt smell or taste though, and the bread is fantastic!! Beautiful structure( I omitted the seeds), with an unusual chewy, but enjoyable crust. I sprinkles sesame seeds over mine. I look forward to experimenting with variations like sun dried tomatoes, for example.
Many thanks for your fantastic instructions.

oh thankgoodness i wantd to use my kitchenaid mixer to do this so its just less work but i'm new to baking and keto so i haven't figured out how to get the kneading timer from hand to machine. thanks for the information! so looks like you slowly kneaded with douhg hook for up to 3m after proofing, just wondering did you stop iommediately the first time around as soon as the dough was formed or did u let it fold into each other a bit before proofing and rekneading again in the end. i have trouble grasping the time on telling when i should take it out when it looks like dough!
sorry if its a stupid question, excited to try this out since going keto made me miss bread a ton

@@AlpineSprinkleshello there, I read my breadmaker instructions. It would say put dry ingredients first. I failed once because I didnt put enough yeast. Thank you so much ❤. I made some modifications to keep it low carb and low calorie as I am calorie conscious, it’s a psychological thing but it turned out amazing. I omitted the eggs, butter and the coconut flour and my total calories were 1040 and 20gm carbs for a 12 slice loaf. So my recipe was 150gm wheat gluten, 60gm almond flour, the rest of the ingredients were the same and I added 1tsp of xanthan gum. I also added a tsp of olive oil to spread the loaf and shape it. It turned out amazing is to say the least ❤❤. I was very depressed because I couldn’t eat bread and now I do. One slice is under 100 calories and 2gm of carbs. This recipe is a game changer for me 😊

Isee that you’ve replaced coconut flour with almond flour in your bread recipe to reduce calories. However, it’s important to note that almond flour is actually higher in calories than coconut flour. Here’s a quick comparison:
Almond flour contains approximately 600 calories per 100 g, primarily due to its high fat content (about 50 g of fat per 100 g).
In contrast, coconut flour contains about 400 calories per 100 g and is much higher in fiber (around 35-40 g per 100 g), which can help reduce the impact of carbs in your recipe.
So if your goal is to cut down on calories, sticking with coconut flour

I bought some flax seeds so I can try making it again tomorrow. I put some sugar free chocolate chips in one of the “buns” and I just had a slice with some butter. It was so good. I'm loving your bread recipe ideas! I have a loaf (Keto Soul Bread) in the oven right now. I would really like to try the recipes with the vital wheat gluten, but I think it's just too much gluten at one time. Other recipes have much more than yours. :) Everyone seems to love it though! Personally, I would love to see a bread recipe that doesn't have too much of any one thing, like not too much almond flour, vital wheat gluten, psyllium husk, or coconut flour, yet still combine all of them in smaller amounts. ;) Your channel is simply amazing. I binge watched a ton of your videos last night and today. Lol. Thank you so much for your awesome and simple recipes!

I tried this recipe a few months ago. I can say it was a success except that I didn’t let it cool down after taking out of the oven. This caused the inside not dry enough.
I tried it again yesterday. Of course I used my Kitchenaid mixer. This time I let it cool down about 45 minutes. It turned out amazing! No problem with too wet inside. I covered with foil for the last 10 minutes to prevent getting too brown.
It tasted just like regular wheat bread! My husband and my son loved it.

    • @ketoserts
      @ketoserts  2 роки тому +1

      ¡Hola María!😊

Couple of questions: I have been using whole psyllium husks instead of powder, what amount should I use instead. Also, my dough is pretty sticky after all of the proofs and it does not flatten as fully as yours for the final roll, could this be due to the whole psyllium husks. Really fabulous recipe!

I did my third one without flax seed and substituted water with coconut milk and it tasted better and looked better too. It's healthier for us men as flax seed is known to drop testosterone levels.

Does this freeze okay? And does the sweetener need to be granulated? I’ve ordered some allulose online ( I’m in Australia) , but it’s not here yet and I’m dying to make this bread!!

Hi. Made it for the first time today.
Came out looking good, tasting good as well, but quite chewy. I've realized I've made the mistake of using "active" dry yeast instead of "instant" . Might it be the reason?
    Thanks for your help.

This is the best bread ever! I should have let it rise longer than and hour just before putting it in the oven and because it was a bit denser it tasted just like a brioche? I put some keto chocolate on it and it legit tasted like a pain au chocolat?! This will be my go to recipe from now on!! Thanks :D

Hi, I have been searching youtube for a good bread recipe that uses coconut flour that is more like real bread and not like the crumbly, cake like texture. This one looks great. I have not tried it, yet, due to the fact that I tend to fail at so many new recipes. I need a bread that doesn't use ingredients that will be hard to find, like erythritol. Also, I don't know if it is true, but this is now correlated to health problems. I am making this bread for an elderly person who loves bread, but has unmanaged diabetes. Also, I love sesame seeds, but she cannot eat them due to her dentures (does not like not being able to chew the seeds and does not like it when they get under her dentures). What do you think if I ground up the sesame seeds a little to break them down. Will that still add a nice flavor. Or, maybe, I can make a loaf with the seeds for myself and one without for her. Is psyllium husk readily available in regular stores? What is inulin and where can I find it? Do you have any recipe that use a mix of different alternative flours? I am interested in finding recipes that use a mix of different ones -- like oat flour, spinach flour, almond flour, lentil flour, coconut flour and maybe a little of regular white flour -- or any other flour, so that the bread is not all one type. Doesn't coconut flour bread have a tendency to be sweeter?
